🌱🌝🍃 Happy Spring! 🌿🌝🌱 I can’t tell you how excited I am about the shifting of seasons. This past week leading up to the equinox has been a glorious string of sunny days ☀️ , nettles and spring greens popping🌱, buds bursting🌸 and feasting 🍴! I am so happy to be spending my days outside. The tides 🌊 and the Dungeness crabs 🦀 have been especially cooperative as you can see here as I test out my new @primus.us stove from @fjallraven_na on the beach after a glorious day crab fishing. I’m really excited to be cooking with a group of amazing chefs at this evening devoted to raising awareness and money for habitat conservation and elevating wild game into a culinary realm. ⛰ 🔪 🥩 🍴 Wild Feast -- Join us for an evening of wild to table fare to support and raise awareness for wildlife conservation in British Columbia. I’ve been lucky enough to cook in many Planet Earth worthy locations. The remote wilderness throughout BC, Yukon and the NWT is where I’ve spent many seasons learning how to feed crews of people, relying on my creative problem solving abilities and developing a strong ‘bush sense’. I’m really good at no electricity, no running water and no internet. Throughout my years of cooking in hunting, skiing, film and tree planting camps my biggest takeaway lesson is that the land is the best teacher. 🏔 This photo was taken in the Columbia mountains just outside my cook shack a few winters ago. I am inspired to cook creatively informed by the land and what nature has to offer when this is my expansive view. I try to bring a little bit of this into every meal I cook regardless of where I am in the world. 🌅 If you’re in Vancouver, I’m cooking brunch on Sunday. Thanks to everyone who has been coming out to @wildnorthernway brunches @theheatley696 these past few Sundays. The Heatley is my local music hang so it only makes sense that I would go from the living room to the kitchen. If you know me at all, you know that always happens. I started playing a music residency on Wednesday nights to showcase some of the tunes that are going to be released on my upcoming record and ended up cooking brunch on Sundays! 🎸🔪 The food I cook is always from scratch and made with ingredients that I love to eat, are nourishing and delicious. You may be used to me sourcing wild meat and plants, but I’m just not a good enough hunter or forager to feed you all every week, so I’m using ethically sourced, farmed and harvested ingredients as much as I possibly can. I do this because it’s important to me. The melt-in-your-mouth short ribs currently on the menu are from @windsorqualitymeats who specialize in free range, organic and hormone free meats of the finest quality. 🥩 Come on out to the Heatley where I’ll be cooking on Sunday and get nourished by the food, live bluegrass and good company. Food is on between 11am-3pm🥓🔪🍳 If you wanna hear me play some tunes at the Heatley, I’ll be trading in my 🔪 for my 🎸 on WED, FEB 27th at 8pm. My very special guest is @little.jill who just released her first single into the world and will be playing that killer song and many others. (Check my stories to hear the tune!)
