I am not an organised being. I am punctual (most of the time) however not organised. Im one of those mums that just carries wipes,fruit (prob a rotten banana) and a water bottle. The other day I was having breakfast with friends, my son said 'look mummy, a puddle'! I look and there is seriously a lake of urine in the playarea (toy car) that my son has flooded at emjays kawana. I had asked him about 'wee wee and he didnt want to go'. I even put him on the grass but he didnt go. Did i have spare clothes? No. Did I have spare naps/undies.. No. So im carrying my son out dripping with people gagging( im sure) while the waiter carries the toy car out of the cafe! (I did clean the car and wiped it but it just brings me back to my organisation skills. Point of the story!? This is why I love smoothies and juices. You dont need to be organised, get anxious about how much goodness your child/children are getting. Jammed with wholefoods, Dutch chocolate shakes, environmentally friendly, plantbased and vegan. Quick breakfast with homemade granola before we head to the farm. Yes ill pack everything but the kitchen sink as kids are unpredictable unlike these nourishing shakes.: just a natural, easy meal/drink to save you days of wondering if your kids are getting the nutrients they require. These whole food capsules she gets daily. People are so surprised at how many veggies this baby eats and how she has loved her veggies from day 1 of solids. Although I totally expect her to go in and out of pickiness and have normal toddler/kid food tendencies 👶🏼👧🏼I am 100% positive that her exposure to over 30 fruits and veggies every single day since she was a tiny bundle of cells in my belly 🤰🏼has shaped her taste buds and food preferences. 🙌🏼 Her body knows and craves what she needs and has been nourished by the highest quality and heavily researched nutrition. Happy first day of spring 🌷In college, the first day of spring meant one thing....free Italian ice at Rita’s! I haven’t been back in several years, but today I decided to make a healthy version of the Italian ice that I loved for so many years. I wasn’t sure if the kids would be fans, but it was a success! Now I can make Italian ice for them without any added sugar or artificial dyes. Plus it’s easy to make and only 3 ingredients - #momwin 😉 . I blended together 2 cups chopped strawberries, 1 cup filtered water, and 2 tsp lemon juice. Once completely blended, I poured the liquid into a 9x9 glass dish and put it in the freezer. After 2 hours, I took it out of the freezer and scraped it with a fork until slushy. Then I put it back in the freezer. I took it out after another 1 1/2 hours and the Italian ice was ready to scoop into bowls and enjoy 🍧 We’re so excited to spring! Warm weather, spending more time outside, and year 2 of our garden - can’t wait! at New Jersey

After making Chickpea Brownies over and over (they’re hubby’s favorite), Charlotte asked if I could make Chickpea Blondies (her favorite). Hubby gave me the idea of turning them into Apple Cinnamon Bars and the whole family loved them! I love that the kids are getting added protein from the peanut butter and chickpeas and that the bars are sweetened only with fruit! In a food processor, I processed together 1 can of @wholefoods chickpeas (drained and rinsed), 1/2 cup @bonbutters straight-up peanut butter, 2 tbsp @thrivemarket unsweetened applesauce, 1 tbsp @traderjoes coconut oil, 2 tsp cinnamon, 1/2 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp sea salt, and 15 @madeinnature pitted dates (that I soaked in hot water while I added the other ingredients) until smooth, stopping occasionally to scrape down the sides. . I spread the batter out in a 9x9in baking dish lined with parchment paper. Then I pressed 1/3 cup peeled and chopped apple onto the top and baked at 350 degrees for 25 minutes. . Once cool, I cut them into 16 squares and enjoyed! I’m pretty sure they were gone in less than 24 hours. at New Jersey

Here’s a green snack for St. Patrick’s Day weekend! Yesterday I posted all the amazing health benefits of spirulina, so today I wanted to share the recipes for these Spirulina Energy Balls. Our family loves them, even the kids (it’s not that easy to sneak spirulina into their diet)! . . To make the energy balls, I add 25 pitted @madeinnature dates (1 1/4 cups), 3/4 cup raw almonds, 1/4 cup raw cashews, 1/4 cup @traderjoes unsweetened coconut flakes, 1/4 cup @healthworkschef goji berries, 1 tbsp @nutiva chia seeds, 1 tbsp @navitasorganics maca powder, and 1 tbsp spirulina powder or 10 @herbal_code capsules (they have the added health benefits of chlorella too!). I process on high for several minutes, until the nuts and dates and broken down and the mixture sticks together. Roll them into bite-sized balls and enjoy! . . Last night we had gyros for dinner. All 4 of us enjoyed the meal, even Charlotte who was pretty sure she wasn’t going to like them. I love it when that happens! We had leftovers too, so that means no new meal to cook tonight - win! . . 1️⃣ First I mixed together 2 tbsp olive oil, 1 tbsp red wine vinegar, 2 tsp minced garlic, 1/2 tsp paprika, 1/2 tsp sea salt, & 1/4 tsp pepper. I added about 1.75 lb chicken thighs cut into bite-size pieces and let them marinate for a couple hours. 2️⃣ To make the tzatziki sauce, I peeled and shredded 1 cucumber. I squeezed out the excess water and added it to 1 cup plain Greek yogurt*, 1 tsp minced garlic, 1 tbsp lemon juice, 1 tbsp red wine vinegar, 1 tbsp olive oil, 1/2 tsp sea salt, 1/4 tsp pepper, and 1/4 tsp dried dill. 3️⃣ After marinating a couple hours, I poured the chicken and marinade into a large pan and cooked the chicken for about 3 minutes on each side, or until cooked through. 4️⃣ To assemble the gyros, I chopped lettuce, tomatoes, cucumbers and kalamada olives (you could also chop red onion, but we aren’t fans of raw onion). I topped a tortilla** with the lettuce, tomatoes, olives, chicken, and tzaziki sauce and we were ready to eat! . . *To make this #dairyfree, you could sub the Greek yogurt with nut milk yogurt. My favorite is the plain unsweetened @kitehill yogurt because it doesn’t have any added sugar. . **You can use pitas, tortillas, or make a salad. I’ve been loving my new #paleo #grainfree tortillas, so I made a double batch for these gyros. at New Jersey

The first time I did #whole30 with @natalieawheeler two years ago, I started really paying attention to ingredients in deli meats. So many brands contain nitrates/nitrites, sugar, MSG, carrageenan, and other artificial ingredients. It took some detective work, but I found several brands that only had turkey, water, and salt listed on their ingredient list, thus whole30 compliant 👍🏻. After finishing whole30, I added gluten-free grains and legumes back into my diet, but I still stuck with the healthier deli meat brands, especially for my kids. I also try to buy deli meat that is organic to avoid added hormones and antibiotics. . The kids spotted plantains at the farmers market the other day and have been asking for plantain chips ever since. So yesterday we made them together. It’s such a easy thing to make with the kids and I just realized that I’ve never posted the steps. . . 1️⃣ I slice off the ends of the plantains and then cut 3 slits down the length of the plantain. Then the kids can peel off the skin 🍌. . 2️⃣ I slice the plantain into thin slices. Then I spray a baking sheet with coconut oil (or line it with parchment paper) and the kids lay them flat on the pan 🔪 . . 3️⃣ I spray the tops of the plantains with coconut oil and then the kids sprinkle on sea salt 🧂. . 4️⃣ We bake them at 400 degrees for 20 minutes. Depending on the thickness, I sometimes flip them and bake an additional 10 minutes 👍🏻 . . We love eating them instead of chips or crackers with nut butter, chicken salad, egg salad, tacos, and on their own. For dinner at Jack’s family birthday party on Saturday, we had an Indian buffet. I made 3 of my recipes and rice in the #pressurecooker for the first time. It was so easy to make (equal amounts rice and water, cook on manual for 3 minutes, then do a natural release) and it made a ton. We had a lot of rice leftover so I wanted to use it in another recipe. My dad and nana came to watch the kids yesterday while I worked, so I decided to make Nana’s favorite, rice pudding, to surprise her 🍚. . . I’m honestly not a huge rice pudding fan, but I liked it! Hubby and the kids asked me to make it again, so I take that as a win. Next time I’m going to try making it with cauliflower rice and see if anyone notices 🤫. . . To make the #dairyfree #refinedsugarfree rice pudding, I whisked together 1 can @thaikitchen coconut milk, 1 tsp vanilla, 1 tsp cinnamon, and 2 tbsp pure maple syrup. Then I stirred in 2 cups jasmine rice and let it simmer for 10 minutes. If you want to eat it warm and it’s too thin, you can add 1 tsp @thrivemarket tapioca flour. Otherwise, it will thicken when refrigerated. I topped mine with blueberries, @traderjoes unsweetened coconut flakes, sliced almonds, and @healthworkschef goji berries. Wij hebben heerlijk geskied, maar het is voor het eerst in tientallen jaren zo warm in dit gebied dat bijna alle sneeuw al weggesmolten is en er sneeuw kanonnen ingezet moeten worden. Bizar toch? In Noorwegen heb je eigenlijk normaal gesproken tot en met iig begin april wel sneeuw garantie. Nu ligt er bijna niets meer en zijn alle daken van de vakantie huisjes al schoon. De komende dagen zou het gelukkig nog wel gaan sneeuwden, dus fingers crossed en hopen op een prachtig winters landschap.⠀⠀⠀⠀⠀⠀⠀⠀⠀ •⠀⠀⠀⠀⠀⠀⠀⠀⠀ Worden jullie ook altijd een beetje zenuwachtig van dit soort ‘natuur’ fenomenen? Hubby has a delayed opening and Charlotte’s preschool is cancelled, so I decided to make a special breakfast. I took my favorite blender waffle recipe and added in some blueberries. Hubby and the kids loved them - they didn’t even ask for syrup! I love them bc they’re easy to make. I’m terrible at making pancakes (they always stick to the pan and take so long to make the entire batch), but these waffles are quick and easy! . . To make 5 #glutenfree #dairyfree Blueberry Waffles, I blended 2 cups @traderjoes gluten free oats until it turned into flour. Then I added 1 cup @califiafarms unsweetened vanilla almond milk, 2 eggs, 1 ripe banana, 2 tsp vanilla, 1 tsp baking powder, 1 tsp cinnamon, and 1 scoop @naturesproperty collagen protein and blended everything together. I poured them into the waffle maker, added about 10 blueberries, and cooked them on medium heat. When they were done, I sprinkled on some more blueberries and drizzled on @bonbutters coconut cashew butter.

The first crumble I made was seriously terrible. I tried to save it with yoghurt and nice cream but it was a total disaster. Second time round a very sweet,nutty orange infused crumble with caramel pecans. Underneath ozzing caramel pears and apples! Its vegan, not overly healthy as has alot of agave and maple syrup however its delicious and wholesome. Real food is so nourishing, sitting in your trackies, snuggles with your minis and a warm bowl of this is how monday nights should be😁🤗 at Sunshine Coast, Queensland

Today we had a wonderful day celebrating Jack’s 3rd birthday! We spent the morning at one of his favorite places, @princetonplayspace and then had the family over for a small party. He had so much fun playing with his new puzzles, toys, and family members. For dinner, I made an Indian buffet with 3 of our favorite recipes and then for dessert we had the chickpea brownies I posted the other days and vanilla cake, per Jack’s request. . To make the #glutenfree #dairyfree #refinedsugarfree vanilla cake recipe, I mixed together 1/3 cup full fat @thaikitchen coconut milk, 2/3 cup melted @traderjoes coconut oil, 8 eggs, 3/4 cup honey, 3 tsp vanilla, 1 tsp @braggsacvhealth apple cider vinegar. Then I mixed in 1 tsp baking powder, 1/2 tsp sea salt, and 1 cup @hodgsonmill coconut flour. I divided the batter evenly between two 8in round pans lightly greased and the bottoms lined with parchment paper. I baked them at 350 degrees for 25 minutes (until a toothpick comes out clean). . To make the #dairyfree #refinedsugarfree icing, I warmed 1/4 cup @artisanaorganics coconut butter until slightly melted and blended it together with 1/4 cup pure maple syrup, 2 tsp @simplyorganicfoods pure vanilla extract, 1 tbsp @bonbutters raw peanut butter, and 1/4 cup @thaikitchen coconut cream (the thick part at the top of the can). Then I mixed in a package of @colorkitchenfoods blue dye-free food coloring. I love that it’s coloring comes from spirulina extract! I’m so happy Jack had such a wonderful birthday ❤️ at New Jersey

I opened the huge (110 oz) $3 can of chickpeas from @costco when I made chana masala the other night (seriously, you can’t beat that deal!), so I had a ton of chickpeas leftover. I was going to make my chickpea blondies, but I decided to change the recipe up a bit to make Chickpea Brownies. We finished the brownies in about a day, and hubby asked if I could make some more last night. I should have make a double batch this time around, because they’re almost gone already 🤷🏻‍♀️ (don’t worry @natalieawheeler , I saved you one). . They’re super easy to make. In a food processor, I blended together 1 can chickpeas, 1/2 cup @bonbutters straight-up peanut butter, 1/3 cup unsweetened cocoa powder, 1/3 cup @thrivemkt unsweetened organic applesauce, 20 @madeinnature pitted dates that have been soaked in hot water for a couple minutes, 1 tbsp @traderjoes coconut oil, 1 tsp pure vanilla, 1/2 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp sea salt, stopping once to scrape down the sides. Then I spread the batter out in a 9x9 baking dish lined with parchment paper and baked them for 25 minutes at 350 degrees. I let them cool and then cut into squares. . Happy #tacotuesday! Here’s our family’s new favorite taco – Chili Lime Shrimp Tacos. All 4 of us loved them, even Jack! He’s been on a dinner strike lately, but ate these tacos two nights in a row (I made them twice, to get the recipe just right). I love these tacos because they’re full of fresh ingredients and colorful veggies! Here’s how I made the tacos: 1. I defrosted and peeled 1 lb (about 38) large shrimp. I mixed the shrimp together with 1 tbsp olive oil, 1 ½ tsp minced garlic, ½ tsp paprika, ½ tsp chili powder, ½ tsp salt, and ½ tsp lime juice. Then I let the shrimp marinate. . 2. Meanwhile, I chopped ½ small head of cabbage (approx. 4 cups) and 1 roma tomato. Lastly, I made the green sauce. I blended together the flesh from 1 avocado, 2 tbsp lime juice, ¼ cup packed fresh cilantro, 2 tbsp liquid coconut milk (not the solid cream from the top), ½ tsp salt. 3. I sautéed the shrimp for 1-2 minutes on both sides and then mixed the shrimp, cabbage, tomato, and sauce together. 4. I spooned the cabbage/shrimp mixture onto tortillas*, sprinkled on some cilantro, and served. . . *You can use any tortillas, but I’ve recently been making my own. It took a little tweaking, but I finally have an easy #grainfree tortilla recipe. I use a fork to whisk together 1 cup @bobsredmill almond flour, 1 cup @thrivemkt tapioca flour, 1 cup filtered water, ½ tsp sea salt, ½ tsp garlic powder, and ¼ tsp onion powder. Happy #meatlessmonday 😊 One if our family’s favorite Indian dishes is Chana Masala. I usually make it on the stovetop, but I’ve been trying to utilize my #instantpot as much as possible lately for cooking legumes. I love using my #pressurecooker to cook chickpeas and beans, because it reduces the amount of phytic acid in the legumes, which increases their nutrient availability and makes them easier to digest 👍🏻 . . To make this #vegan dinner, I added to the instant pot 1 diced onion, 1 tbsp minced garlic, and 3 tbsp coconut oil. I pressed the sauté button and sautéed until the onions were translucent. Then I pressed cancel and stirred in 1 tbsp ground cumin, 1/2 tsp sea salt, 1 tbsp peeled & minced ginger, 1 tbsp ground coriander, 1 tsp chili powder, 1 tsp turmeric, 2 14.5-oz cans diced tomatoes, and 2 15-oz cans chickpeas. I put on the lid, making sure the knob was closed, and cooked on the manual setting for 20 minutes. I used a slow release and then stirred in 2 tbsp lemon juice, 1 tsp garlic masala, and 1 tbsp chopped cilantro. Serve over rice or roasted veggies and enjoy! at New Jersey

Once my husband and I watched the movie “That Sugar Film”, we realized that even though we thought we were eating healthy, we really weren’t. We were eating a lot of low-fat and fat-free foods, which essentially had replaced healthy fats with sugar. The movie was eye-opening for us as we watched how negatively sugar affects the body. Since then, we’ve been much more conscious of all the hidden sugars in packaged foods, especially foods for our kids. . 🍏 Food pouches have surprising amounts of sugar added to them. Today’s #sundayswap is switching to applesauce where the only ingredient is apples (preferably organic). It’s such an easy swap and makes a big difference! The reason we try to limit applesauce sweetened with juice, is because fruit juice is not as healthy as it sounds. It is very high in sugar and contains no fiber, which means that it raises blood sugar levels more quickly than a whole fruit. . 🍎 We’re huge @costco fans and we love that they sell applesauce made of simple organic apples! We also like adding @traderjoes cocoa nibs and/or @healthworkschef chia seeds to our applesauce for a little added protein and nutrients.

Here’s a super easy recipe for when you’re craving banana bread but are short in time - Banana Bread Hummus 🍌 I made it today and the kids loved it! . All I did was add 1 drained and rinsed can of chickpeas, 2 overly ripe bananas, 2 tsp cinnamon, 1 tsp pure vanilla, and 1/2 cup raw walnuts to a food processor. I processed on high for about a minute to get it to the consistency I wanted. I scooped it into a dish, topped the dessert hummus with some more cinnamon and chopped walnuts, and the kids ate it with sliced apples. So easy and yummy! at New Jersey

Fruit een uitje en een teentje knoflook. Voeg de champignons toe aan de pan. Maak een sausje door ketjap te mengen met een el ketchup, ui poeder en knoflook poeder en een tl liquid smoke. Mocht je dat niet hebben dan kan je ook bbq saus gebruiken. Evt kan je er nog zelf knoflook saus bij maken, maar jumbo heeft ook een vegan variant :)⠀⠀⠀⠀⠀⠀⠀⠀⠀ •⠀⠀⠀⠀⠀⠀⠀⠀⠀ Echt hoor! I’ve been working on this chocolate peanut butter mini muffin recipe for awhile now and this latest version is the Niemis family favorite! I switched out cacao powder for #healthwarrior chocolate protein powder and we have a winner 😃 Not only did it taste better, but I love that the muffins got an extra kick of plant based protein. . The muffins were super easy to make. I just mixed together 2 overripe bananas, 1/2 cup @bonbutters straight-up peanut butter, 1/4 cup @bobsredmill almond flour, 1 packet (about 1/4 cup) @healthwarrior chocolate protein powder, 2 eggs, 1 tsp pure vanilla, 1/2 tsp baking soda, 1/2 tsp baking powder, 1 tbsp @traderjoes cocoa nibs (you could swap mini choc chips or leave them out altogether), a pinch of salt and used a tablespoon cookie scoop to scoop the batter into a silicone mini muffin pan. I baked them at 350 degrees for 18 minutes. at New Jersey

Since last week’s #sundayswap was all about peanut butter, I figured today should be about JELLY. I had no idea how much sugar was in the jelly I was putting on our sandwiches until we started really looking at the sugar in labels a couple years ago. Once I made some small changes, our typical pb&j became a lot healthier! . • Consider jam instead of jelly. Jams are made with the whole fruit crushed, while jelly is made from only the juice of the fruit. With jam, you are getting more fruit, fiber, and less sugar. • Avoid jars with added sugar, especially high fructose corn syrup. Flu protocol number 2 . Day 3 of whatever nasty stomach bug, everyone is pretty much better except Lincoln, our 4 year old. He's running a fever now and just doesn't want to eat. Shaun ran to Costco yesterday to get bone broth and collagen so I could make a batch for everyone to drink, especially Lincoln. I dumped the boxed bone broth into a pot, added salt, garlic, and thyme, got it to a boil, turned it off and then added a scoop of collagen(bone broth already has a lot of collagen but I wanted extra), a drop of Ginger essential oil, and a drop Tumeric essential oil. Served it in glass pint jars to everyone around. I made a fruit pizza for Valentine’s Day and forgot how much I love the crust. I decided to use the crust recipe, add in some peanut butter and cacao powder, and make energy bites. They’re the perfect little snack! In a food processor, I processed 1 cup almonds and 1/3 cup @traderjoes unsweetened coconut flakes on high for 30 seconds until broken down into small pieces. Then I added 3/4 cup (15) @madeinnature pitted dates that had soaked in hot water for 5 minutes, 1/4 cup @bonbutters raw peanut butter, and 2 tbsp @navitasorganics cacao powder. I processed them for about a minute and then checked to make sure it would stick together (you can add more dates or a little water if it’s too crumbly). Lastly, I rolled them into bite-sized balls for healthy on-the-go snack! at New Jersey

Happy Valentine’s Day!! Tonight we celebrated the same way we’ve been celebrating since Jack was born - Cauliflower Crust Pizza shaped into a heart with heart-shaped red peppers ❤️. I love celebrating as a family and I love our little tradition. These guys are my world and I love them with all my heart. Since I show my love through cooking and baking and I have a major sweet tooth, I also made a fruit pizza for dessert 🍓. I made 2 pizzas, since we devour this rather quickly. To make one cauliflower crust pizza: 1️⃣ Cut the florets off of a large head of cauliflower and process in the food processor until you get about 7 cups of cauliflower rice. You may need to do this is several batches. 2️⃣ Microwave for 4 minutes and then place the cauliflower in a towel and squeeze out the excess liquid. This is my least favorite part but necessary or else the crust doesn’t stick together. 3️⃣ Mix in 2 eggs, 2 tbsp nutritional yeast, 1 tbsp olive oil, and 1/2 tsp each garlic powder, salt, oregano, and basil. 4️⃣ Spread the “dough” out on a pan lined with parchment paper to create your pizza and bake at 400 degrees for 20-30 minutes, or until the edges start turning golden brown. 5️⃣ Add on your toppings (I added marinara sauce, goat cheese, and peppers) and bake another 10 minutes.
