Day 3. Definitely felt some fatigue today but also was a very long day. Overall, whole 30 is going great and I am feeling good. . . • Breakfast: I used the leftover meat from the sloppy joe bowls and fried some potatoes and put an egg on top for my version of a huevos rancheros. • I ate breakfast later in the day and it was very filling so I listened to my body and didn’t eat lunch when I wasn’t hungry. Late this afternoon, I had a handful of almonds & a ton of water. • Dinner: I repeated the Korean beef bowl with cauliflower rice. . . . I ended this evening with a 2 1/2 mile walk. I am encouraged by my progress and am excited about the possibility of making this a lifestyle. . . Last nights #whole30 dinner~ Pineapple Walnut Chicken Thighs served with a baked sweet potato & steamed broccoli. 👩🏼‍🍳 . . . @wholefoods boneless skinless chicken thighs chopped into bite sized pieces and sautéed in @chosenfoods 🥑oil-add Himalayan salt and black pepper. Meanwhile, sauté chopped green peppers, pineapple (I bought pre cut from Whole Foods and just chopped into smaller pieces), & scallions. Cook until peppers begin to brown. I then transferred the pineapple mixture to the cooked chicken pan. I then added garlic, ginger, coconut aminos, sesame seed oil, and red pepper flakes. I then also added in some chopped pecans & coconut flakes (*pure coconut no added sugar) to the mixture. Garnish with some extra pecans, red pepper flakes, and a sprinkle of coconut ! All the flavors were there 👌🏻simple. Y’all- Today was one of those days where I was moving so fast I literally forgot to eat. I started going at 7:00 a.m and next thing I knew it was 3:30 p.m and I still hadn’t eaten. Thankfully, I had an emergency @rxbar in my car that held me over until I made it home for dinner, which was delicious! Made a @butcher_box pork butt in the crockpot (just a sliced onion and @traderjoes mushroom seasoning on low for 10 hours), sautéed some green beans (per usual), and made some mashed potatoes in my @instantpotofficial with some compliant chicken stock, a bit of ghee, and salt + pepper. Needless to say, I devoured it.

Day 3 Whole30: Kept it really simple today-not intentionally, but quite frankly just because time got away from me. 🤷🏼‍♀️Not pictured are the blueberries I scarfed down on the way to school pick up. Leftover asparagus last night with my eggs and some organic salsa. 👌🏻 . . After breakfast, I wanted something sweet so I topped a banana with compliant almond butter-and if you're thinking "Well, that's boring", give it a go. I promise it is anything but. 🙌🏻It's sweet enough to satisfy the craving and it's filling! . . Ended the day with a classic pot roast. It's my birthday month! I updated my dream board, set some goals, and started a Whole30. I've been off of soda/caffeine for almost two weeks now and it's made such a difference in EVERYTHING I do. It actually got replaced with walking the dog nearly every day. My life is insane with being a mom, wife, entrepreneur, business owner, boss, and YW president and I tend to stress starve and drink way too much caffeine. We're back in our house (though nowhere near unpacked or organized) and I thought the best gift I could give myself would be a #Whole30 reset. It's #whole30day3 and I'm not even dying. I just want a nap.

#whole30day3 Baked salmon with mashed sweet potatoes 🍴 - Top salmon with a bit of olive oil, 1 piece of lemon and a few springs of dill. Bake on 400°F for 15 minutes. While salmon is cooking, microwave 1 small sweet potato (or 1/2 of a large sweet potato) for 6 minutes. My goal today was 💯 on point compliant W30... and I *almost* made it. ⁣ ⁣ Damn chocolate pop tart got me at a very weak moment. 🤭⁣ ⁣ And I felt it within minutes. The usual regret, shame, feelings of failure ensued.⁣ ⁣ But I remembered that this is a journey. I have made progress. I’m not going to allow myself to be brought down by a half of a freaking pop tart. ⁣ ⁣ It helped me realize when I’m feeling weak, stressed, overwhelmed by my day... pop tarts don’t make it ANY better! ⁣ ⁣ I wanted to post a progress report since I’m already feeling so many new and better things on my journey. Envelope stuffing and #whole30 snacking from last night. Waist Training - Day 2, Modified Whole 30 - Day 3. The slight compression from the waist trainer has already helped my tummy feel better since suffering from unexplained abdominal swelling. I feel like things can move through my digestive system again. With the combo of the waist trainer and a modified Whole 30 I hope to isolate enough foods and relieve the swelling to discover if I'm having new food allergies/intolerances, or if it's something else undiagnosed. Forgot to post my dinner yesterday! I made this amazing chopped buffalo chicken salad from @thedefineddish and it’s definitely getting in the rotation at our house! I topped with @tessemaes ranch instead of putting oil on the arugula. Breakfast has been the same all week - 1 egg with mushrooms, zucchini, and @applegate turkey bacon. Lunch was the same as day 2 - salad with chicken. For a snack I had a banana and @eatnuttzo nut butter. Killed it yesterday by avoiding the stupid candy dish at work which I really wanted to stress eat from! #whole30 #whole30day3 #whole30daybyday

I’m a visual person!! We have this right in our dining room where we pass by it a million times a day!! We are on day three and going strong! Headache yesterday for a bit but was able to sleep it off and feeling better today. Food choices haven’t been an issue since we plan ahead of time. My cheese / cracker loving little boy is struggling. However I feel like I notice a difference already in my daughter! Today’s post is a shout-out to MY MOM! • My 3rd round of the Whole30 is extra special to me because my mom is joining me for the journey! Whenever I was at her house on my past two rounds we would cook Whole30 meals together and she loved them. • Look at her plate! She could be a food blogger herself! She made salmon, spiralized potato and sweet potato and asparagus. Yum! • It’s been really fun to talk to each other about different meals and recipes to try. Today is our 3rd day and I’m so proud of her! • In addition to my mom, my best friend from home is also starting a round of the Whole30 today! #Whole30 DAY THREE: Slow Cooker White Chicken Chili . This was spicy and delicious, kinda on the lighter side if you’re not that hungry. I really should have added cauliflower rice or lots of veggies, but I try to stay true to a recipe the first time I make it. A funny note: when I posted this on Facebook, a Mexican friend of mine replied:"this is what us Mexicans have when we’re sick! It’s chicken soup a la Mexicana." 😂😂😂 We will be making this again, adding veggies to bulk it up. . Really easy and fairly quick dinner! Skillet roasted chicken and green beans with cauliflower rice pilaf. My 9 month-old loved the cauliflower rice. She had seconds. (The chicken preparation is derived from @lindsey_van_cleave.) Lightly coat chicken in salt, pepper, garlic powder, paprika and arrowroat then sear both sides for a few minutes in clarified butter. Take the chicken out, add fresh garlic, a splash of olive oil and green beans and toss to coat. Put the chicken on top and stick it in the oven at 375 degrees for about 20 minutes. For the cauliflower rice I sauteed carrots, onion, and chopped Brussels sprouts until soft then added the riced cauliflower and a little chicken stock. Today I only added salt, pepper, thyme, and Hungarian paprika, turned the burner down to low, then covered and steamed it for 20 minutes while the chicken cooked. #cauliflowerriceobsessed #easypeasy #paleobaby #whole30day3 #whole30approved

My mom recently moved 12+ hours away, to another country. We're doing #whole30april2019 together from afar. I sent her this picture of today's breakfast, to which she replied "You have more discipline and creativity than I do." It's all about the challenge for me. Happy Monday Morning! 💪🏻 Gettin’ shit done! I took last week off. I needed a mental break. I was fighting a cold, my hubby had to stay at his grandma’s place overnight a couple nights, we had to take out a wall so a fence could go up, we are helping family out and they moved in ... it was all around a long week! It definitely felt good to be back at it this morning. It kicked my ass and I can tell I took a week off. Ready to get back into the swing of things though. #yogateachertraining was fantastic this weekend. I share space with some pretty amazing women! We only have one month left and it makes my heart sad. The last few months have been the most Beautiful journey 💖✨💖✨ When I signed up, I never knew it would be that soul defining! Pretty stoked on this #cauliflower #hummus! I’m a lazy bum sometimes so I didn’t roast the cauliflower first (although roasted cauliflower is the best thing!) so this is just raw cauliflower • tahini • lemon juice • cumin • cayenne • topped with evoo, more cayenne and cilantro! #whole30day3.... the kind of day where you are so damn hungry you start to eat your dinner and then realize you have no food pics to share, so now enjoy my partially eaten chicken meatballs with coconut curry sauce over cauliflower rice (recipe from @bewitchinkitchen). @snapkitchen lunch was pretty fantastic, and I didn’t even have to do dishes. I don’t remember what I ate for breakfast. Maybe bacon and coconut chips with a side of blueberries. If you came here for perfection, you might want to lower your expectations. The #carbflu is real, my sinuses hate me, my head might explode, I’m already in bed. I failed at 5am Pilates (sorry @robin_v1018), and I already want to #killallthethings one day before I’m actually supposed to. We’ve got 27 more days, errbody. I discovered I can do this now! (Something I tried and tried before my “injury” and hadn’t gotten at the time.) I guess all those core-PT exercises to help heal my back are doing their work. I only allow myself 1 try of this per week then it’s back to PT-core focus and my light weights workouts. @whole30 day 3 meals! I had a nitro cold brew this morning, a grilled chicken salad dressed to the nines, and then dinner. My god, dinner. I found a sweet potato waffle recipe that is basically just sweet potatoes and egg in a waffle iron and used it as a bun for a brunch burger.
