Really easy and fairly quick dinner! Skillet roasted chicken and green beans with cauliflower rice pilaf. My 9 month-old loved the cauliflower rice. She had seconds. (The chicken preparation is derived from @lindsey_van_cleave.) Lightly coat chicken in salt, pepper, garlic powder, paprika and arrowroat then sear both sides for a few minutes in clarified butter. Take the chicken out, add fresh garlic, a splash of olive oil and green beans and toss to coat. Put the chicken on top and stick it in the oven at 375 degrees for about 20 minutes.
For the cauliflower rice I sauteed carrots, onion, and chopped Brussels sprouts until soft then added the riced cauliflower and a little chicken stock. Today I only added salt, pepper, thyme, and Hungarian paprika, turned the burner down to low, then covered and steamed it for 20 minutes while the chicken cooked. #cauliflowerriceobsessed #easypeasy #paleobaby #whole30day3 #whole30approved
