Lazy breakfast casserole from @melissasfoodfreedom is going to be made later this afternoon to freeze for next week. Instead of. Kielbasa, I'm using Aidells sausages since I've got an overabundance of them in the house as it is. I might add some of the Frozen root vegetable mix that I got at Sam's Club, but not a lot. I'm also contemplating putting some sliced black olives in this for my fat source so I don't have to worry about that when I go to eat it LOL Ohhhhh and some Frank's Red Hot Sauce to this to give it a little zip and fury! #whole30 day 24: Breakfast: a banana and raisins. It was a terrible breakfast and I felt terrible after but I spent all morning putting clothes on and taking them off and hating all of them. Lunch: a salad with eggs, avocado, cucumber, tomato, onion and olives. Used olive oil, vinegar and salt and pepper for dressing. Dinner: went out to Mongolian BBQ and just loaded up on chicken, shrimp, onions, potatoes, broccoli, garlic and spices. Went over to @starbucks after and had an unsweetened passion tea. Fridge foraging at its finest. Tonight’s dinner was a mix of what was left in my fridge: chicken and broccoli. I seasoned the chicken with @traderjoes mushroom and company and sautéed it in olive oil before adding the broccoli. The sauce is a mix of compliant beef broth (to deglaze the pan), rice vinegar, fish sauce, mango apple purée, and tapioca flour to thicken. Sometimes you just don’t feel well and when you’re on a whole30 your usual comfort foods may not be compliant. On days when I’m just not feeling well enough to eat a regular meal but know that I need to, a smoothie bowl can do the trick. I know that smoothies can be controversial on Whole30 but this one is compliant AND fits the meal template with protein, veggies, and healthy fat. It’s frozen cauliflower rice; 1/2 cup frozen fruit (I used strawberries, pineapple, and mango), 2 scoops collagen powder (protein), a handful of fresh kale, and 1 cup of full fat coconut milk blended together. I poured it into a bowl and served it with fresh fruit, chia seeds, and sliced almonds. Like I said, I know smoothies aren’t ideal, and I wouldn’t recommend making them a regular item for your Whole30, but they can be compliant and are a better option than not eating at all.

After a day of running errands and then gardening it was really nice to know that dinner was going to be as easy as 1-2-3 🙌🏻 This delicious dish is literally 3 ingredients. That’s it😮. A package of @gardenhighwayfresh organic butternut squash zoodles, a package of @aidellssausage chicken apple sausage and a package of @traderjoes Mediterranean semi dried veggies in olive oil and herbs. Heat the sausage slices along with the squash. Once the squash is tender add the veggies and heat through. Serve. First meal of the day at 3pm because I ended up back at immediate care this morning due to extremely swollen tonsils where I couldn't speak or get out any words correctly. My current go-to stock up items @traderjoes . I live 45+ minutes away from @traderjoes , my favorite affordable natural food store. So, when I go, I buy in bulk (think Costco meets Trader Joe’s 😉). Here are my current “must have, can’t buy anywhere else or at this price anywhere else” TJ items (keep in mind I’m not on a Whole30): . • Cauliflower rice - I buy 10 bags every time. #notjoking It’s $2 less than @wincofoods and the “rice” is uniform & small in size. I cook up a ton of various cauliflower rices and freeze them. • Steam in tray brussel sprouts and asparagus. Such a great fast veggie option! I usually steam in tray, then get crispy in my #airfryer@hebrewnational_ All Natural hot dogs. These are the only #whole30compliant hot dogs my kids like and $2 cheaper than @applegate . I bought 9 😉. • Broccoli & Kale pizza crusts - my new fave for the hubs and I. Fairly neutral flavor, and getting in some greens! 🙌🏻🥦 • Açaí packets for allllll the açaí bowls Iin our future. Just frozen açaí, no sweetener or other ingredients 👏🏻 • Cauliflower gnocchi - my kids love it, so we buy lots. 9 bags of that...which will last us 3 meals 😜. Do yourself a favor and cook it in the oven 👌🏻 • Sparkling coconut water with yuzu - y’all, tastes like a Paleo sprite 🙌🏻. Technically #whole30compliant, but wouldn’t recommend it on the regular or if soda is your weakness. • Coconut aminos - only $3/bottle. Need I say more? • Ghee - TJ’s ghee is not delicious, it’s inexpensive and functional. I will use it for cooking/baking when I’m too lazy to make my own. • Seasonings - their 21 Seasoning Salute, Everything But the Bagel, and Garlic Salt grinder are all used on the daily around here and hands down my favorite seasonings ever. They take veggies from ok to fabulous. They often travel with me 😉. • Olive oil cooking spray - did you know most cooking spray has soy? 😩🙅🏻‍♀️. This one is #whole30 compliant. Though, many of you have convinced me to give a refillable oil sprayer another try. • A smattering of snacks and date bars • Whole30 compliant pickles . What are your current @traderjoes must haves?? My whole30 tip- when you find something you like, stick with it. Breakfast today will be another breakfast burrito with an egg “tortilla”. Inside is compliant bacon, purple potato, cauliflower rice, a scrambled egg, compliant salsa, radish, and cucumber. It’s all rolled up and ready to go, with the last of my arugula, for my post gym meal. #delicious

Need an idea for quick easy #mealprep this week?? Well then I think you should try this recipe!⠀ ⠀ Whole30 Instant Pot Salsa Chicken ⠀ -4 chicken breasts⠀ -1/2 cup yellow onion⠀ -1 jar of #whole30compliant salsa (I used @aldi chipotle lime)⠀ -salt (I used @redmondrealsalt)⠀ -pepper⠀ -garlic powder⠀ -cumin⠀ -chili powder⠀ -paprika⠀ -onion powder⠀ -olive oil.⠀ -1/2 cup water or chicken broth⠀ ⠀ 1. Start by turn on your instant pont to SAUTEE and coating it with the olive oil. ⠀ 2. Next chop your onion and add to the olive oil. Grab your lid to gently cover so the oil doesn't splatter everywhere. ⠀ 3. After a good 5 minutes, change the setting from SAUTEE to PRESSURE COOK.⠀ 4. Next place your chicken breasts, spices (I honesly eyeball it),water and salsa into the pot. ⠀ 5. Close the lid and set to 20 minutes. ⠀ 6. Once the instant pot is done, I would recommend doing a manual release so your salsa doesn't dry up! ⠀ 7. Lastly shred the chicken with a fork. ⠀ ⠀ I served my salsa chicken on what I like to call a Whole Southwest Salad! I had mixed greens from @aldiusa, cucumbers, baby sweet peppers, the salsa chicken, chunky guacamole (also from @aldiusa---their fresh guac is awesome but beware their Southwestern One has sugar) and @franksredhot for an extra kick! ⠀ ⠀ You can also serve the salsa chicken on cauliflower rice! ⠀ ⠀ Ps. This can also be made in the crockpot!

Day 2/37: Today went great. I’m feeling more and more positive about my direction and am just anxious to start seeing my results. It surprisingly has been really easy and I haven’t missed any cheese since stopping keto. I wonder if having no dairy will affect how I’m feeling, I’m sure it will! Breakfast - ham/turkey scramble with avocado and half a banana. Y’all go back one post and see what my dinner looked like last night, now compare it to this gorgeous meal my hubby made for all of us last night that I didn’t get to eat! Yumm! He woke me up for dinner last night trying to surprise me as I was sleeping with a delicious and beautiful meal and I immediately said “I need to go to immediate care”. That’s when I was diagnosed with strep throat and wasn’t able to eat anything and quite frankly thought I was dying- that’s not me being dramatic either, it was awful. I feel much better today but still no appetite but I wanted to share all of hubbys hard work from last night that I didn’t get to enjoy 😰. He used my moms pulled pork and topped it with a fried egg, pico and cilantro with a side of my Chile lime pepper rings and spicy mayo to dip! Y’all!! Of all the meals I had to miss and it had to be this one 😭!! Instaeas I had cabbage soup which was delicious but I could only get the liquid down! Day 11 #whole30 lunch! Steamed asparagus & leftover rotisserie chicken, topped with olive oil & onion salt. Definitely going for convenience this round... this took all of four minutes (to steam the asparagus in a Tupperware in the microwave at work). Still delicious! Feeling great today, today was the first day I didn’t have that discomfort of wanting the elusive *something* after dinner. Sleep has improved too.

Shredded BBQ Chicken inspired by @thymeandjoy I like quick, easy and delicious so this recipe was in the sweet spot. I Don't Want None Unless You Got Buns Hun...well Nicki Minaj & Sir Mix-A- Lot ...WE GOT THEM BUNS.⠀ ⠀ Before we get started quick shoutout to Jeff Bezos and @Amazon for super fast delivery! ⠀ ⠀ Ok now on to the review portion of the new flavor of Cinnamon Swirl @Nutpods! I will share my thoughts on three criteria....smell, taste and froth ability. ⠀ ⠀ So first smell...they smell like when you walk into the mall food court and you smell CinnaBon. They got the smell baked right in there....see what I did haha. Its a nice mix of cinnamon and bun. It does smell sweet and strong, hands down. ⠀ ⠀ In terms of taste, I tried both in hot coffee and in iced coffee and truthfully I was underwhelmed in both. Don't get me wrong, you can taste the cinnamon bun....but I'm not sure if I really like that in my coffee. With the first sip you taste the cinnamon but then at the end you tast the bun and the vanilla frosting. Its not bad, but I'm not over the moon about it. It made my coffee extra sweet, which for some that may be great since there is no sugar or sweeteneer. I just think my taste buds have evolved and I just can't do the sweet sweet creamers anymore. I will also admit when it came to real deal coffee creamers I prefered the simpler flavors or flavors with chocolate. ⠀ ⠀ Lastly, the cinnamon bun nutpods ability to froth is only a 5 on a scale of 1 to 10. It froths, but its weak, similar to the Chocolate Orange where the foam is not a thick layer but rather just a like a bubble bath. ⠀ ⠀ Overall the flavor is definitely innovative and interesting. Its smell is divine but the taste and the froth are just so so. I would say if in the olden days you like dessert-like coffee, then its worth a try. But if the idea of cinnamon bun in your coffee, from real creamer didn't appeal to you then this flavor might not be worth trying. ⠀ at Chicago, Illinois

If you can scramble eggs, you can make quichè or its crust-free kin, frittatas. . . . MURASAKI SWEET POTATO CRUSTED CHICKEN, MARZANO TOMATOES, & BASIL QUICHÈ. . . . Murasaki or Japanese sweet potatoes are purple on the outside, white on the inside, and less sweet than their more popular orange cousins. At 120 calories with zero fat, they're high in fiber, potassium, and Vitamins C and, especially, A. They also contain iron, calcium, protein, and amino acids... all excellent to get you fueled and ready to power you through your day. . . Quichès are so wonderful because of their versatility -- you can fill them with whatever you have in the fridge (or would load in an omelette). Feel free to add feta, goat, or another cheese of your choice to whatever veggies, fruit (if tomatoes) or protein you choose. You can also add as a topping! Swipe ---> . . 1️⃣ Shred or grate potato (1 for small cast iron, 2 for regular size). 2️⃣ Heat cast-iron skillet 3️⃣ Scramble 4 eggs or 2 eggs + 2 egg whites; assemble veggie, fruit and protein filling. 4️⃣ Use 1 - 2 tablespoons of olive oil to coat pan and sides. 5️⃣ Pack shredded potato into pan. 6️⃣ Use spatula to circle sides of pan when potatoes begin lifting from side and add eggs and filling. 7️⃣ Cook three (to five) minutes on stovetop until egg consistency develops and transfer to oven at 375 (or 400, depending on cooking preference). 8️⃣ Cook for an additional 10 minutes or until done. 9️⃣ Remove from oven, run spatula along the sides, place a plate on top and turn over. The quiche should easily slide out.
