Low Carb Cheesy Chicken and Rice Meal Prep @healthy.foods.today ~ Low carb cheesy chicken and rice is a delicious low carb lunch option! Pan-fried chicken breast and broccoli are smothered with cheese and served over cauliflower rice. Filling but light with only 5 g carbs and 43 g of protein. ~ 1/2 head cauliflower 2 tablespoons olive oil salt and pepper 1 crown broccoli (roughly 4 cups of bite-sized pieces) 1 cup shredded cheese (I used mozzarella) Chicken 1 lb boneless skinless chicken breasts (cut into bite-sized pieces) 1 tablespoon olive oil 1 teaspoon garlic powder 1 teaspoon onion powder 1/4 teaspoon salt 1/4 teaspoon pepper Instructions Make cauliflower rice: cut cauliflower into even-sized pieces. Pulse in a food processor 10-15 times or until it is broken down into uniform cauliflower rice. You can use a box grater if you'd prefer for this step! Add 1 tablespoon olive oil to a non-stick pan and heat over medium heat. Add the cauliflower rice and cook for 5 or so minutes, until slightly softened. Season with salt and pepper. Divide between four 2 cup capacity storage containers. Add another 1 tablespoon of olive oil to the pan. Add the broccoli and cook for 5-7 minutes, until slightly softened. Add the cooked broccoli to the storage containers with the cauliflower rice. Chicken: Toss the chicken with olive oil, onion powder, garlic powder, salt and pepper. Cook in the non-stick pan over medium heat until cooked through; 5-7 minutes. Add the cooked chicken to the storage containers with the cauliflower rice and broccoli. Divide shredded cheese between the four storage containers. Storage Store in the fridge for up to 4 days. To serve Heat in a microwave until steaming hot. 1sp white chicken chili for dinner! ❤️❤️❤️ So yummy and so comforting. And I of course love mine with a hearty dousing of hot sauce!😜 ••• White Chicken Chili: 1 onion, diced 1 4oz can diced green chilis 2 tsp cumin 3 tbsp flour 1 can chicken broth 2 cans great northern beans(undrained) 1 1/2C. cooked shredded chicken S&P to taste Add onion to skillet sprayed with cooking spray and cook until soft, around 5 mins. Add green chilis, cumin, & flour and cook 2 more mins. Add chicken broth and beans to skillet and whisk to incorporate flour into broth. Bring to a boil, then reduce to a simmer and cook for 10-15 mins, stirring occasionally until thick. Add chicken and cook another minute until warmed through. This might be one of the hardest pics I’ve posted...and I almost didn’t. The pic on the left was from the day we adopted Daisy, our goofy bloodhound. I was sooooo excited and wanted to take a “first family picture” in the car on our way home to share with everyone but ultimately ditched the idea because I was so upset over how I looked. In fact, the reason I have so few “before” photos is because I couldn’t even stand to take pictures of myself because I would have to face how much weight I had gained. But you know what I see now when I look at it? The face of the girl who was strong enough to say “I deserve to treat myself better” and had the determination to lose 50 lbs in 3 months to get to the picture on the right. First off, no I didn’t eat it all. 😂 just half. And some salad. We went to Longhorn Steakhouse tonight for a late Valentine’s dinner and I asked for a side salad and an order of grilled shrimp. The waitress explained that for $6 I would get 12 shrimp OR of I ordered the Wild West Shrimp appetizer grilled with no sauce it would be $10 and I would get more shrimp. That’s a lot of shrimp. Total meal was about 4 points because they didn’t have lite ranch. I avoided the bread (where my medal??) And because I’ve ALWAYS been transparent here, I did end up eating some chocolate earlier (which totaled 20 points, ouch) but I still have some weeklies in my bank so I’m calling today a win anyway. Plus I got in over 10k steps. I’m going to bed full of shrimp and happier than I was 9 hours ago. I really need to take some measurements instead of focusing on the scale. I know some of my clothes are fitting better. And I feel like my face is already slimming down. We went out to dinner tonight at a local restaurant! I got a grilled chicken Caesar salad with dressing on the side. I only used about half of one of those dressing cups. I wasn’t sure how to count this so I just went with a chicken Caesar salad from Applebee’s which was 19SP. I had 24/23SP today, so I still got my blue dot! Im so proud of myself for sticking with the plan because dang did the fries look delicious 🤤 Happy Friday!!! Hope everyone enjoys there weekend!! ❤️

Friday night date night ✨ We are going to Korean BBQ tonight and I am so excited for it. Thank gosh for weeklys + zero point foods I had eggs and an orange for breakfast to save all my points for tonight. Honestly Korean BBQ is awesome a lot of it is veggies, radish, and kimichi my fav.
