Hey guys I’m back! For how long? Who knows! It’s been an interesting few months but I’m back in the game! •
All in all I think I’ve done pretty well maintaining although I gained 8 lbs 🧐 •
So I’m here to keep myself accountable and hopefully inspire some of you to never give up on a lifestyle change.
Breakfast was a Kodiak flour strawberry muffin (2) points it basically has flour, strawberries and water. So delicious, I made 9 and I had a second muffin as a snack later in the day, tomorrow I’ll have some for breakfast.
I paired it with a boiled egg, banana and (0) points coffee.
Lunch was one of those dole salad kits. It had cornbread croutons (2) these were so good! , sunflower seeds (1) point, ranch dressing (4) points and cheese (4points). Plus I added some Trader Joe’s chicken breast (0) points, and corn with 1/2 tsp of butter ( 1 point). I also had some burned sweet potato fries (2) points.
Not bad for lunch.
Snack was another muffin (2) points, a piece of corn (0) points and a macaroon (2) points.
Dinner: I made some delicious turkey broccoli with cheese and basmati rice casserole (6) points with a side of cabbage - so good! The recipe is from wellplated.com. I tweaked it by watering down the milk, and using 2 oz of cheddar with 1 cup of lite mozzarella from Trader Joe’s and using Trader Joe’s basmati rice. I also added a some lemon. This was very good, really healthy.
Finished the day with26/23. Amazing, I thought that was a mistake since I’m used to reaching 50 points a day 🤣
I’ve updated my weight goal so I plan to now lose 20 lbs. no deadline, you know I take it easy. •
