Roasted some butternut squash for my daughter. Zucchini and Yellow squash is more keto friendly, but butternut is her favorite. I coat the cubes in avocado oil, and season with salt, pepper, and cinnamon. I roast at 375 degrees for a half hour or until the edges start to brown. It's so delicious, and a small portion could fit in your carbs for the day. A full cup is roughly 16 total carbs.
