BBQ tempeh salad 😋 my own creation not ripped off Pinterest!
Kale/spinach, red onion, roasted corn, avocado, bbq tempeh (chop in squares, toss in olive oil and bake 30 minutes until it looks toasty, then toss in bbq sauce), topped with vegan ranch (just equal parts mayo, sour cream, soy milk, 1 tbsp apple cider vinegar, herbs and seasoning; not a ridiculous super food vegan version that will reduce all inflammation in your body and save your soul)
Tempeh is fermented soybeans which sounds disgusting but has a great pine nut, toasty taste when cooked, full of protein, fiber, and probiotics for gut microbiota. Happy #meatlessmondays 🥬🌽🥑
