My red lentil pasta with crumbled walnut & lentil burger dish 🍽🌾 This one is LOADED with plant-based nutrients upon nutrients.
RECIPE (ingredients eyeballed):
>Organic red lentil pasta. I specifically used a two-ingredient protein pasta from Felicetti with organic durum whole wheat semolina to retain the shape and texture. When I purchase one-ingredient chickpea/lentil/bean pastas the noodles tend to fuse together and the consistency renders it harder to eat. I found this brand to be optimal and economical as well. An excellent choice flavour-wise as well.

>Heaps of nutritional yeast (da good stuff)
>Heaps organic vegan parmesan (Parma-Veg) from @rawvitalityinc (da even gooder stuff) (yes I said gooder) made with none but the best superfood ingredients: raw organic walnuts, nutritional yeast, drykale, organic sprouted sunflower seeds, golden flax seed, dry kale, organic garlic and rosemary, hemp, and Himalayan crystal salt. Packed with Omega 3’s, B12+trace minerals.
>Crumbled artisan vegan lentil & walnut burgers from @vegetariangourmet (top brand of plant-based vegan burgers imo) made of green lentils, fresh onions, fresh carrots, non-GMO tofu, fresh parsley, non-GMO canola oil, soy flour, potato starch, flax seeds, apple cider vinegar, walnuts, non-GMO gluten-free tamari sauce (water, soybeans, salt, alcohol), fresh garlic, wild mushrooms (oyster mushrooms and/or shiitake mushrooms), salt, organic cane sugar, and black peppercorns.
Options of other ingredients I would’ve considered adding: hemp seeds, pumpkin seeds, lemon juice, chilli flakes, sautéed mushroom, crushed peanuts, cold milled flax.
Fun fact👉: Cold milled is when the flax is not crushed or ground, instead milled, “which leaves as much natural oil as possible within natural cell walls to retain maximum nutritional value.” #themoreyouknow
If you’re anything like me and like spice spice spice, you might want to add some hot sauce to the mix for an added kick. These ingredients all complemented each other perfectly and it was super tasty and nourishing. Notwithstanding be selective as to not overwhelm your tastebuds.
