So... my husband has agreed to go vegan with me. 😁 (insert victory dance! 💃🏻👊🏼 yasssss!) Since he’s hitting the gym frequently and wanting to add size, when he’s home I’ll be focusing on high protein vegan food. I mean, I’ve got a point to prove am I right? Vegan can be strong on the outside and healthy on the inside! He lifted this morning AND he came to Hot yoga with me tonight! 💪🏼 So mama whipped up some Buddha bowls for dinner! 😜 I had 1/2c black beans, 1/4c peas, 1/3c corn, 1c Brussel sprouts, 2tbsp hummus, 1c cooked spinach, and 1/2c edamame! My bowl had 30g of protein. My husbands was 1 can chickpeas (that he roasted with Cajun seasoning it was SO good! I stole a couple!) , 1/2c edamame, 1/2c Black beans, 1/2c white rice, 1/2c Brussel sprouts, 1/2c broccolini, 2tbsp hummus. Made vegan ćevapi! 🇧🇦 For my non-Bosnian followers, ćevapi is a grilled Bosnian dish, made with minced meat. It’s basically Bosnia’s national dish! It’s typically served with onion and kajmak (cream). This was a test run, so they came out somewhat ugly and they’re not fully authentic because I used Middle Eastern samoon bread. 😂 They were delicious though. Next time I’ve got to get authentic Bosnian somun (bread) and make my own vegan kajmak. I used @beyondmeat and added salt and pepper. I don’t like raw onion so I didn’t eat it with onion. 🤷🏻‍♀️ I’ll definitely be making this again.

NEW FAVORITE RECIPE!!! I honestly have no clue what to call this dish, but it was spectacular 🤤 includes angel hair rice pasta (Thai noodles), baby Bok Choy, white whole mushrooms, and sesame crusted maple sriracha tofu! For the tofu: 1. 1 block extra firm, pressed for 20 minutes or longer 2. 1.5 tbs maple syrup and tamari 3. 1/2 tsp rice vinegar 4. 1/2 tbs chili powder 5. 1/4 tsp ginger powder & onion powder 6. 1/2 tsp garlic powder & paprika 7. A few drops of sriracha Press tofu, then slice or cube it (whichever you prefer) and sprinkle with cornstarch. Bake at 375° F (flip half way). Combine all sauce ingredients and add to a small saucepan on medium heat, reduce once it begins bubbling and turning sticky. Add your tofu and coat in the sauce, cooking about 1-2 min each side. Once the strips have cooled down some, roll in a black and white sesame seed mix! For the stir fry: 1. Angel hair rice noodles (enough for 3 servings) 2. 1 bunch of baby Bok Choy 3. 1 container of whole white mushrooms 4. 3 green onions, chopped 5. 2 cloves of garlic (minced) 6. 1.5 tbs maple syrup 7. 2 tbs tamari 8. 1/4 tsp ginger 9. 1/2 tsp chili powder 10. 1/4 tsp sriracha In a large pan, heat peanut oil and add your garlic and green onion, stir around for 30-40 seconds and add in your mushrooms, lightly drizzle about 1/4 tbs tamari over the mushrooms for added flavor. Combine your maple syrup, tamari, chili powder, ginger, and sriracha and whisk well. After about 5 minutes, add your rice noodles and Bok Choy, stir around well to coat in the hot oil, then add your sauce and stir fry for about 1-2 minutes. Sweet potatoes loaded with baked beans and easy guacamole by 📸 @cookingforpeanuts 🧡 via @vegangotgame #vegangotgame Recipe: (Bake 2 sweet potatoes in oven.) Cook 1 diced onion and 3 minced garlic cloves in a little vegetable broth (or in bean cooking liquid or olive oil) until onion softened, about 7 minutes. Add 1 tsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1/4 tsp cayenne. Cook one more minute while stirring. Mix in 1 tbsp apple cider vinegar, 1 tbsp tamari or soy sauce, 1-15oz can diced tomatoes, 2 tbsp tomato paste and 1 to 2 tbsp maple syrup (to taste). Add 2 cups cooked (or 1-15oz canned) beans, rinsed and drained. (Kidney beans, small red beans or cranberry beans work best.) Bring to a boil before reducing heat to simmer about 20 minutes until sauce has thickened. Salt to taste. Easy guacamole: mix together 3 very ripe avocados (mashed), juice 1 lime, 2 finely grated garlic cloves, salt to taste. Load baked sweet potatoes with beans and top with guacamole. Enjoy!

Tempeh & Pesto Butternut Squash Lasagna by 📸 @fullofplants via @vegancanteen #vegancanteen 💛 Recipe:⠀ Makes 6⠀ INGREDIENTS⠀ 1/2 butternut squash, peeled and cut into 1/4-inch-thick slices*⠀ ⠀ CASHEW PESTO SAUCE⠀ 2 cups (300g) cashews, soaked overnight⠀ 1/2 cup (115g) vegan pesto (homemade or store-bought)⠀ 1/3 cup (78ml) water⠀ 2 tbsp (16g) nutritional yeast⠀ 1 tbsp (15ml) lemon juice⠀ 1/2 tsp salt⠀ ⠀ TOMATO SAUCE⠀ 1 tbsp (15ml) oil⠀ 1 small onion, diced⠀ 2 cloves of garlic, minced⠀ 1 28-oz can peeled tomatoes⠀ 1 tbsp (15ml) maple syrup⠀ 1 tbsp (15ml) nutritional yeast⠀ 1/4 tsp ground chili⠀ ⠀ TEMPEH⠀ 14 ounces (400g) tempeh⠀ 2 tbsp (30ml) soy sauce⠀ 2 tbsp (30ml) maple syrup⠀ 1 tsp rosemary⠀ 1/2 tsp each: cumin and paprika⠀ 1/8 tsp liquid smoke (optional)⠀ ⠀ INSTRUCTIONS⠀ 1.Prepare the cashew pesto sauce:Drain the soaked cashews and transfer to a blender. Add the vegan pesto, water, nutritional yeast, lemon juice, and salt. Blend on high speed, or until smooth, about 2 minutes. Transfer to a bowl and cover with plastic film, set aside.⠀ 2.Prepare the tomato sauce: In a medium-size saucepan, heat the oil over medium heat. Once hot, add the onions and garlic and sautée for 3-5 minutes or until the onions are soft.⠀ 3.Add the peeled tomatoes with their juice to a blender and pulse 3-4 times until roughly chopped, the mixture should still be a bit chunky with tomato pieces. Transfer the tomato puree to the saucepan, bring to a boil and let simmer 35-40 minutes, or until it has slightly thickened.⠀ 4.Add the maple syrup, nutritional yeast, and ground chili, and stir to combine.⠀ 5.Prepare the tempeh: Using your hands, scramble the tempeh into small pieces and transfer to a bowl. Add the soy sauce, maple syrup, rosemary, cumin, paprika, and liquid smoke. Stir to coat the tempeh with the marinade.⠀ 6.Heat a tablespoon of oil in a large skillet over medium heat. Healthy Lunches make me happy. 🍚🍃 We found a huge bag of spinach at the oriental market the other day and it really was the inspiration for this super simple and healthy lunch. We tossed some white rice in our @aromahousewares rice cooker and then added the spinach in the steamer basket about halfway through. While that was happening we baked our salt and pepper tofu in our convection oven on 425* for about 35 mins, flipping halfway, until golden brown. Plated it all up and then gave it a few squirts of liquid aminos (and @veginspiredchef added sriracha to his because 🔥🔥🔥) Do you have favorite quick and healthy lunches? Dinner tonight was avocado toast with tomatoes, @soyboytofu bacon, sauerkraut and @everything_but_the_bagel seasoning! THIS BACON THO. So yummy. And it’s gluten free!! today for dinner I made a mooli pratha / quesadilla with coriander yoghurt . beaming right now, missing mum and dads cheffing 🤓 also! my housemate, Harry, just left for coop and returned with a surprise for me!!! (3rd pic) 🙀😻 Thank u maestro ! Gassed and grateful XXX Btw you need some rolling and dough making skills for this one. I learnt from the best (my parents). For the filling you can use mashed potatoes or grated cauliflower as well, with these you’d add some chopped onions too . Dough: chapatti flour + water (I add water by eye as this is how my parents taught me, probs best to google quantities for this) . Filling: First grate mooli, and when in a bowl add turmeric, and lots of salt. Leave for an hour and squeeze all the water out till dry (salt helps bring out the water). Add chopped chillis, chilli powder, and I normally use ajwain too but didn’t have any today, gutted . Yoghurt: Soy alpro original and chopped coriander . I just rolled out two chappatis so I could put the max amount of filling possible 😛and then stuck the edges together. I’m stuffed. However there’s a diff method my parents use and I did try that but couldn’t rlly get as much filling in as I wanted, I went overboard tbh but HAD to be done 🤝🥴😏 . . Have a lovely evening everyone. Today’s raw lunch! I made a huuuuge salad with romaine, tomatoes, cucumber, red onion, chickpeas, and avocado. Seasoned it up a bit with pink salt, parsley, paprika and squeezed half a lime! I can’t wait to dive in🤩

Spaghetti Squash🌱😻 This vegetable is kind of like a low carb pasta alternative - and honestly so much tastier! Especially when you know it’s doing the body good as opposed to real pasta that doesn’t have much benefit inside your body. This veggie has lots of vitamins A & C, is great for your skin and eyes, and even helps maintain strong bones! For this dish, I roasted the squash and then scraped out all the insides with a fork. I sautéed garlic, onions, bell peppers, tomatoes, and spinach in a pan & then mixed it with the squash placing it back into the shell - I topped it with walnuts and homemade cashew cheese and placed it back into the oven to double roast it🌱💛

Banana peel seitan burgers... was definitely a win! They were so delicious and are kind of like a pulled pork sandwich in a way. An interesting recipe that limits the waste of food! If you didn’t know banana peels were edible well now ya know!
