Coconut Sago Sweet Soup with Mango 香芒椰汁西米露 This is made with the Large Sago (Large Tapioca Pearls). You can soak the Sago in cold water for 20-30 minutes beforehad, if you like. Then simmer some water, add the Sago, cook for about 8-12 minutes. Drain & Rinse under cold water. Return to pot and cover with cold water and set over medium heat and slowly bring to a simmer, then simmer an additional 8-12 minutes. Repeat this process of cooling and simmering, starting in cold water, to leech out as much starch as possible as quickly as possible, until there are no more white centers in the Sago. Rinse again under cold water then set in an ice bath until very cold throughout. Keep slightly submerged in ice water until needed. Simmer Full-Cream Coconut Milk with some Palm or other Raw Sugar and a pinch of Kosher Salt until sugar is dissolved. Remove from heat and let cool to room temp. Use a Strainer scoop or slotted spoon to scoop out the Sago with a bit of ice, if desired, and set in a bowl. Ladle Coconut Cream over the top. golden rice at golden hour 🌞 ___________________________________________ this one pot coconut turmeric rice is the perfect dish for a cool Monday evening: in a Dutch oven sauté the whites of a bunch of scallions, ~1 tsp turmeric, and 1/2 tsp black pepper in coconut oil. After the onion is soft and fragrant, add 2 cups of rice, a can of coconut milk, and a cup of veggie broth. Let that mixture come up to a boil and simmer for ten minutes, then add lay some sliced greens (I used chard and collards but kale would be great in here too!) on top and let cook in the covered pot for 5 more minutes. Turn off the heat and let the whole thing sit for 5 minutes. Add 1/2 coconut flakes, 1 tbsp sesame seeds, and the zest and juice of one lime. Season with additional pepper and salt and that’s it! at Seattle, Washington

Not only is 2019 the year of the Pig 🐷, my year, according to Numerology, this year is the beginning of a new nine year cycle for me. There has already been A LOT of heartache and change so far in 2019, it’s really affected my studies and my outlook on life. However, there is some promise of this year being a good one for what there is left of it. I hope it will be full of exciting new adventures and experiences. I’ve decided to cease my nutrition science studies at Monash for many reasons and I’m really struggling with my self worth about the possibility of never having that ‘prestigious university degree’ (yeah I know, I’m working on it). Right now I am thinking of going back to complete something I started several years ago before I went through what felt like hell in the last few years. It’s time to clarify my goals and take a step back and see where I am right now. It’s time to clear my head and make some important decisions in my life. These next few weeks I will be focusing purely on my mental health and practising some much needed self love and self care to allow me to be a better partner, daughter and friend to those I love. If you’re going through some difficult times right now, I feel you. I’m thinking of you and sending you a reminder that is okay to be this way 💕

Falafel is a deep-fried ball or patty that is made from chickpeas or fava beans and spices. Falafel is very popular in the Middle East country. Depending on how you make it can be healthy and non- healthy. Falafel recipe by Chezpriz: Ingredients * 1 1/2 cup of of dried chickpeas (Garbanzo beans) * 1 bunch of Italian parsley * 1 bunch of green cilantro * 8 cloves of freshly peeled garlic, crushed * 1 large yellow onion * 1 Tbsp kosher salt/up to your taste * A dash of black pepper * 2 Tbsp all purpose-flour * 1 tsp of baking soda * 1/2 tsp baking powder * 1 tsp of ground cumin (toasted) * 1 Tbsp of ground Coriander (toasted) Instructions Preparing the Falafel Mix: 1. Soak chickpeas overnight in a large bowl filled with water. 2. The following day rinse them with fresh water. 3. Drain the chickpeas and pulse in a food processor until crumbly and there are no whole chickpeas left. Put aside in a large bowl. 4. Place the garlic, yellow onions, parsley, cilantro, coriander, salt, peppers and flour in the food processor and run for a couple of minutes until they turn into a paste. 5. Add them to the bowl and knead with hands until they reach a doughy texture. Taste the Falafel mix to make sure it has a balanced flavor. Frying the Falafel: 1. 20 minutes prior to frying, sprinkle baking soda & baking powder on the Falfel mix. When ready heat 1 inch deep of cooking oil in the frying pan on medium heat. 2. Scoop the falafel into by using 2 spoons whereby you scoop the falafel paste in one, and press the other spoon against it to compact into the frying pan. 3. Fry for a few minutes until the falafel turns brown. As long as your pasta is made with clean ingredients and you add tons of veggies, you are good. I’ve never felt leaner. Mama Clayman purchased a pasta machine! Homemade gf pasta coming REAL soon. I’m so excited 🍝 Never buying pasta from the market again. I’m obsessed with arugula. It has a nice bitter + peppery flavor to it. Meatless Monday: Week 2 💃💃⁣ ⁣ I'm loving it especially after making this really easy dish YUM 😋⁣ ⁣ WEEK 2: Zucchini pasta with tomato sauce⁣ This week I tried my best to keep it simple and light. My aim was to stick to meatless Monday and also avoid bloating. Hence why I made a low carb meal.⁣ ⁣ I used a grater to make the zucchini noodles. For the tomatoes sauce, I used ⁣ ⁣ 1/2 small onion⁣ 1 clove of Garlic⁣ 3/4 cup tomatoes⁣ A full of cherry tomatoes⁣ Salt and pepper⁣ Cayenne pepper⁣ Vegetables stock⁣ ⁣ Sautee onions and garlic, add the tomatoes ,spices. Let it cook and add cherry tomatoes. Mix the zucchini and the tomatoes off the heat and the meal is ready 👌👌⁣ ⁣ ⁣ Tip💡:⁣ The key to this is seasoning and little water. My Superfood Smoothie: Strawberry Raspberry protein smoothie 🍓🍒🍹⁣⁣⁣ ⁣⁣ I got the inspiration for this smoothie from the classic combination of peanut butter and jelly. It’s creamy, rich in nutrients and tastes amazing. Sneak in some fresh spinach or kale for an extra dose of dark leafy greens.⁣🌱🥦⁣⁣ ⁣⁣⁣ This high-protein and fibre-rich smoothie is nice and simple but it does not skimp on flavour one bit. This smoothie would be a good choice before or after a workout thanks to the good balance of protein, fat and carbohydrates. ⁣🥗⁣⁣ ⁣⁣⁣ INGREDIENTS⁣:⁣⁣ 🔸1 cup each raspberries and strawberries (280 g)⁣⁣⁣ 🔸2 tbsp almond butter (30 g, sub peanut butter)⁣⁣⁣ 🔸1 3/4 cups almond milk⁣⁣⁣ 🔸1 scoop vegan vanilla protein powder (30 g)⁣⁣⁣ 🔸5-6 small, pitted medjool dates ⁣⁣ 🔸small handful of spinach or kale⁣⁣ ⁣ ⁣⁣⁣ INSTRUCTIONS:⁣⁣⁣ 1. IT WAS TIME TO START HEALING. 🌱 July 1st, 2017 was the day I decided to try a plant based diet. At this point I had already cut out GMO and processed foods along with sugar for about 2 years. I had also introduced organic food into my life. It made a huge difference within my body. My autoimmune "symptoms" were not as bad, however I was still dealing with a lot of major health issues. (from antibiotics) I literally tried EVERYTHING (more on this later) but nothing was really working for me. 🌱 After returning from a cancer clinic In Mexico, I contacted a few people over Instagram to ask them about their experience with a plant based diet. I was blown away by all of their stories so I literally decided to go vegan overnight. Something about the timing just felt right. Like I was returning from Mexico with a "new" body that needed a big change. 🌱 I emptied out my fridge and freezer and placed everything on my kitchen floor.  Organic chicken, which i ate EVERYDAY (because i thought the "protein" would help me gain weight), organic eggs, organic kefir, organic beef, organic chicken stock, organic cheese etc. I called my mom to ask her if she wanted anything, otherwise I was going to donate all of it. YOU ARE NEVER ALONE. 🌱 You know when you overhear a conversation that has nothing to do with you but you continue to listen anyway? I was sitting in a hot tub about 2 weekends ago, when I overheard a lady crying to her husband about her acne. Saying how it's "so unfair that every other girl in the hot tub had perfect skin." She was so tired of "fighting" because it seemed like everything she tried didnt work. My first thought was "Wait... WHAT ??? My skin is far from perfect lady!" 🌱 It brought me right back to all of the times I compared myself to woman who had perfect skin. I spent many hours, everyday, balling my eyes out because of my acne and hair loss along with all of the serious health issues I was living with. Life seemed totally unfair !!! Listening to this woman just broke my heart because I could literally feel her sadness within me. I wish I would have told her that the pain and sadness she was feeling was something I understood. 🌱 This made me realize that I needed to come back on Instagram to share my progress because my voice DOES matter. That woman in the hot tub felt very alone and as if no one understood what she was going through. Honestly, if I didnt find people through hashtags such as #adultacne, I would have thought I was the only person dealing with it. 🌱 Many people on Instagram have inspired me in many ways. I have learnt so much from complete strangers! I have decided to make yet another IG account not only to hopefully inspire others but to track my own progress along with my husbands progress (weightloss). It's so cool being able to look back at how far you have come and the best way of doing so is through pictures.
