Heat breaks down the nutrients and effectively begins the digestion process before the food enters our mouth.
Humans can eat a wide variety because of our cooking ability. If we didn't cook our food, we would have to stick to a specialized diet.
Our stomachs are adaptable, but we still prefer to eat mostly the same foods all the time. It's not about taste, it's about the enzymes and other digestive helpers that we produce to digest different foods.
The more of a particular type of food we eat, the more our body gets good at processing that food.
But no matter how much we train our stomachs, there are going to be certain foods we can't digest and other foods that make us feel great.
The problem is in figure out what those foods are. It's not obvious, it's really hard to differentiate the effect of what you eat. Especially when there is a delay between eating and the affect on our body.
If you get gassy, what wad the cause? Was it the dairy? Or did you put to much spice on? Maybe it was the combination.
