If you know me at least little, you know I would probably give a toe, a foot and maybe my left arm just to be able to have some peanut butter again 🙈🤷‍♀️🤣. I miss it so much, guys! But I have to organise my priorities, and that means putting Elena's needs before mine (that was a no brainer anyway 😁). That doesn't mean I can't dream about the day I will eat again all the CHOCOLATE PEANUT BUTTER NICECREAMS like this one over here 😋😎. I made this a while ago using Rachel's @bakeritablog recipe and I just changed a few things to make it more "my own" 😊. This bowl is topped with chopped dark chocolate, banana, chopped almonds (other goodies I haven't had in what seems too long 🙈) and some peanut butter 😱🤤. . We safely arrived to Greece after a journey longer than expected, a lot of sweat 🤣 and beautiful memories 😊. We are all pretty tired so, we didn't get to explore the surroundings today 😑. Like I said in my story, I’ve really splurged this week since I finished my 30 days, and I quickly realized how much certain foods really were affecting my health negatively. I was so used to consuming certain foods like dairy...that I didn’t realize it wasn’t helping my body at all. Sheet Pan Garlic Herb Butter Chicken & Potatoes😍 . Via @cafedelites . 1/3 cup low-sodium chicken broth or stock 1/4 cup unsalted butter, melted (reduced fat or light butter if counting calories/fat) 1 tablespoon finely chopped garlic (or 4 cloves) 2 teaspoons chopped fresh parsley 1 teaspoon chopped fresh thyme 1 teaspoon chopped fresh rosemary 1/2 teaspoon salt (adjust to your tastes) Fresh ground black pepper, to season 4 x 5 ounce 150 grams boneless, skinless chicken breasts 1 pound (500 grams) baby potatoes, peeled and quartered into 1-inch pieces (Yukon gold or White Carisma Potatoes work the best) 1 pound (500 grams) green beans (or asparagus) Instructions Preheat oven to 200°C 400°F. Lightly grease a baking tray / sheet with cooking oil spray, or a light coating of oil. Set aside. Combine together the butter, broth (or stock), garlic, parsley, thyme and rosemary together in a bowl. Place chicken on the baking sheet and arrange the potatoes all around the chicken. Toss 1/2 cup of sauce through the chicken and potatoes, and season well with salt and pepper. Lightly spray all over with olive oil spray or cooking oil spray. Bake in preheated oven for 15 minutes or when potatoes just start to become golden. Carefully remove baking tray from the oven and flip each chicken breast. Move the potatoes to one side and place the green beans around the chicken on the other side of the baking sheet. Pour the remaining garlic herb butter sauce over the beans, toss well and return to the oven to broil (or grill) on medium-high heat for a further 10 minutes, or until chicken is cooked through (no longer pink in the middle) and potatoes are for tender. Broil (or grill) for 2-3 minutes until chicken is golden and potatoes crisp. Sprinkle with fresh chopped herbs (optional), and serve immediately with pan juices.😋❤️

I’ve been on a Satvic diet for the last 2 weeks as it was a requirement from the yoga teacher training program I’m taking. 🍃 Although I ate quite similar before these two weeks. I feel that this experience changed the way I look at food. I struggled with an eating disorder for a long time and I had several attempts to change my perspective on food to overcome it. I couldn’t find a healthy view to project on food. I ate because of health, because of how the body looks and feels and so forth. 🍃 In these two weeks I ate to achieve something, to support my practice and empower my body to make it through. The training was intense -14h/day for 12 days. My intake was sometimes under 1200 calories but my energy was high. I don’t recommend this to anyone. I’m trying to make a point on the fact that our intentions guide our actions, mental and physical capacity. If your goal is to lose weight for vanity and unhealthy reasons then your energy and confidence will decrease.
