☝🏻This is not a usual barbera! .
🤤 San Silvestro apassimento Barbera 2017 (from Monforte area) , Dhl from winery to taste. It’s an appassimento barbera! It use the appassimento process, the same basic grape-drying process used for millennia throughout Italy, while today, it’s most commonly used in the making of the famous #Amarone and #Recioto wines.
manual harvest of 50% of the grapes then dried for 40 days in baskets to concentrate aromas and colour. The other 50% is left on the vine for a natual Appassimento and harvested later.
Separate vinification of the two dried grapes. Maceration for 10 days with daily pumping over. Blending of the two wines after the malolactic fermentation. 6-month refining in small wooden barrels. 🤤 in glass, it has this ruby red color with a purple edge. Aromas of red fruit, dried herbs and some floral notes, sweeter on nose than on palate, dry cherries and berries on palate , soft silky texture with great acid and low medium tannic structure, longer finish than most barbera I had. Am guessing the use of dried grapes has resulted in a more-rounded, graceful and less acidic wine than the usual bit tricky Barbera wines. It has a smooth and delicious delicacy of flavor that will keep you coming back for more. Great with the beef that chef @Ed wardvoon74 created here. .
