{BAKED SWEET POTATO} Can you believe that I never made baked potatoes before? 🙈It's not a German or Turkish (or even Indian) dish, and I'm still discovering British dishes.... ☺️ We were away over the Easter school holidays (house and pet sitting in the beautiful Forest of Dean), so that I needed easy and quick meals to make. This was a great hit with the kids although they preferred potatoes over sweet potatoes 🙈but everyone was happy. . 😍🔥Honey Garlic Chicken Breast 😋👌 - eat or Pass😍? INGREDIENTS 500 g / 1 lb chicken breast , boneless and skinless (2 pieces) Salt and pepper 1/4 cup / 60g flour 50 g / 3.5 tbsp unsalted butter 2 garlic cloves , minced 1 1/2 tbsp cider vinegar (or white or other clear vinegar) 1 tbsp light soy sauce (or all purpose) 1/3 cup / 90g honey (or maple syrup) - DIRECTIONS 1. Cut the breasts in half horizontally to create 4 steaks in total. Sprinkle each side with salt and pepper. Coat in flour, shaking off excess. 2. Melt most of the butter in a large skillet over high heat - hold back about 1 tsp for later. Cook chicken for 2 - 3 min until golden, turn and cook the other side for 1 min. 3. Turn heat down slightly to medium high. 4. Make a bit of room in the pan and add garlic and top with remaining dab of butter. Stir garlic briefly once butter melts. 5. Add vinegar, soy sauce and honey. Stir / shake pan to combine. Bring sauce to simmer, then simmer for 1 minute or until slightly thickened. 6. Turn chicken to coat in sauce. If the sauce gets too thick, add a touch of water and stir. 7. Remove from stove immediately. And this was our #crueltyfree Easter banquet. - pizza di "scarola" (quick version, recipe below) - pizza swirls - Mixed vegan sausages pie with tomato beshamelle, sage and moo-free cheese 😁 - crudités and Chipotle hummus. Pizza pie: 1 pizza sheet 1 puff pastry sheet 2 long roman lettuce 1 cup baby spinach 1 1/2 tbs capers 1/4 cup pitted olives 1 clove garlic 1/2 tsp chili flakes 1 tbsp olive oil Salt Pepper Method: In a pan add olive oil, capers, olives (chopped to taste), garlic (grated) and chili flakes. Medium heat for a couple of minutes until everything starts sizzling. In the meantime wash and roughly chop the lettuce. Add lettuce and spinach in the pan. Season with salt and pepper and cover with a lid. Cook on medium heat until tender. Allow to cool completely. Preheat the oven at 180C/350F. Arrange the pizza dough sheet on the bottom of a tray and pierce it with a fork. Drain the excess of liquids from the vegetables mix. Pour the veggie mix onto the pizza sheet. Spread evenly, then cover with the puff pastry sheet. Bake for 20-30 minutes. Best served sligly warm or at room temperature. #happyeaster 🤗🤗 at United Kingdom

Cauliflower dinner. I absolutely adore this veggie, mostly because once you split cauliflowers into pieces those pieces end up looking like tiny little trees. This time I steamed my tiny cauli trees and then tossed some olive oil, curry and black pepper on it so I can bake it in the oven for 15 minutes. Once done, throw some fresh garlic and spinach, and drizzle some lemon juice over it. So simple and so perfect. unless you're Jewish....😅 If you are Jewish, or even if not; you probably know that in Judaism there is no shortage of "food rules". You can't mix meat and milk, you can't eat shrimp, you can't eat bacon, and the highlight: no bread or leavened products during Passover. For 7 days we will not eat any bread or leavened or fermented food. Matzo and gluten free foods take the place of bread during this time. I never really had a problem with the limitations placed on our diet during Passover. So no bread and cakes for 1 week, big deal. There's still Matza and Nutella. 😋😋 Then I had a 1.5 year old during Passover and all I can think of is what is he supposed to eat for a whole week. Bread, muffins, and oatmeal are staples around here - especially for car rides. There are plenty of recipes for kosher for Passover "bread" and cakes using almond and coconut flours but for some reason I am not too excited about trying any of them out. And besides almond flour is expensive around here! I'm much more excited about making this week a little more of an experiment in trying new foods. Maybe Eitan will finally eat rice which he has been refusing ever since around 11 months even though I keep offering it. Wish me luck and I promise to let you know how it goes at the end of the week! So to make a long story short - there are no good or bad foods - unless you are Jewish. Then there are foods you can eat and foods that you can't. 🤷🏻‍♀️ #pesach2019 #passover2019 #פסח at Israel
