Sweet Thai Chili Crispy Tofu! I might be a little obsessed with you! . Crispy tofu ~ Mix together in a bowl 1 cup flour, 1tsp garlic powder, 1tsp onion powder, salt and pepper. (This will be your batter). In another bowl add your panko bread crumbs. . Cut one block of tofu into small squares, dip each piece of tofu into the batter then the crumbs, and place on a parchment lined sheet. . Bake @ 375° for 20mins, flip them, then place back in the over for 20-25mins. Toss in as much sweet Thai chili as desired. . Enjoy! 💃🏻

Is it just me or do you guys also get this weird sense of satisfaction about eating healthy when your food is this naturally colourful. You can never go wrong with a veggie stir fry if you are short on time and plus you have all the veggies you want to eat in your fridge ;). Power packed bowl of vegetables with Iron, Fibre, Vitamins etc etc. Super simple preparation: Pick vegetables of your choice. Heat oil in a wok, put in about 1 tbsp of ginger garlic paste, sauté till the raw smell is gone. Add chopped onions, sauté till transparent. Add the vegetables to it and then stir fry for about 7-10 minutes depending on how crunchy you want your veggies to be. I like the crunch so I do 7 mins only. While stir frying add some soy sauce, and chilli oil mixture if you want it hot , add salt with caution because the soy sauce is already sodium loaded, be easy on your heart 💓 . I use the low sodium version and add like a sprinkle of salt to mine.
