Ok so we have a tradition here for a Roving Dinner, where go to a different house for each course of a meal all in one night. We live in a very international community, so it allows all of us to share our culinary cultures with folks in the neighborhood.
This year instead of going fancy like normal, @reluctant_expat and I went the complete opposite direction and did a clone of Infamous Popeyes Chicken Sandwich with curly fries.
One thing about fast food, ain't nothing fast about it as we actually started "cooking" it a week ago with pickling the cucumbers. And as none if us have had the durn sandwich as it came out after we all came back to Baku, we can't truly know, but researched it off of numerous YouTube reviews.
Brioche buns baked up and grilled, chicken breast cut from whole chickens brined for hours, battered all the way to hell and then deep fried. Cajun sauce was fast, just mayo, Tabasco, and I put paprika as I lost the cayenne jar. Cucumbers brined in a forest of dill sprigs, mustard seeds, and garlic.
Honestly, the pickles and mayo really balance it out. I can see how this is a phenomenon. The acid and fat really pulls together than just chicken and bread. Great call in the brioche bun rather than a roll.
I put 0 elegance and let the battering be a big sloppy mess to maximize crunch and fast food wow factor. Darn near chicken wrapped in a crunchy dutch baby. I put a lot of salt and it STILL didn't match the salt Popeye's must put on their chicken. Really need to talk about that one day.
If I were doing this again, I would flatten the breast a bit and line up the bun size with the chicken. Ran out of time so rushed the buns. For recipe changes I don't think I change a thing to make it better. Just only eat this once a year though.
