Last week I wrote a new diet plan for Nate. He wants to shed a few pounds in the next few months and I leaped on the opportunity to let my creative meal planning juices flowing!! I decided to emphasize protein (a complete source in every meal) and healthy fats. Fat is a really important component of any diet... for your skin, brain.. the list goes on and on. But please know that not all grams of fat are equal! In my diet plans I emphasize healthy plant fats like avocado and olive! The third component is a variety of veggies! You really can’t go wrong and with raw veggies and I never limit intake. They are important when it comes to filling your belly and giving you natural signals of satisfaction after eating. This salad is reminding me of summer. Today we left to come back to Muswellbrook 😞 after spending a lovely 3 nights in Forster, NSW 😊It was so much fun but it’s also nice being back “home” 😂😎Before we left, Patty prepared @medicalmedium “Broccoli 🥦Mac & Cheese 🧀 ” as she knew after a 3 hour + drive, no one would be in the mood for a big cook-up! She is amazing 🥰🙌& always thinking ahead! Not only did she prepare this Mac & Cheese ahead of time, she was the one who had prepared all of our homemade soups 🍲that we brought with us! This meal was absolutely delicious! She followed the Recipe (found via medicalmedium.com) but also added in a few extra veggies…so on top of the Broccoli 🥦 , we had carrots 🥕 , red peppers 🌶 and green peas…it was delicious and thanks to the chilli powder, had a nice little kick 🦵 to it! DESSERT | DESERT • Being vegan and working out does not mean a dessert desert (see what I did there 😜)! . . . . . . you just have to be creative about it. • This one was inspired by @fitveganchef and is a take on her her coffee break chia pudding. • I generally use @theproteinworks vegan protein powder which comes in 9 plus flavours! I haven’t tried them all but for this recipe used the Tiramisu Italiano from the Protein Extreme range. You can make it as sweet or less sweet as you like by adding more or less stevia, but I like about 1.5 tablespoons per serving 😀🏋🏼‍♀️ at Lewes, East Sussex

Preparing lunch, vegan spaghetti bolognese and salad. As a meat substitute i used Tvp ( textured vegetable protein - but lentils are also a good choice😊) I didn t measure but let’s say i put around 1 cup in a bowl and covered it with water, let sit for 10 minutes and afterwards draine well. In the meantime i started to prepare the bolognese sauce: i chopped 1 medium red onion, minced 2 garlic cloves and cooked it in 1 cup veggie broth until all liquid was absorbed. Than i added the tvp, tomato sauce( again i didn’t measure 🤓 but to cover everything, depends also if you like your sauce runnier or not) i seasoned it with black pepper, italian seasonig, lots of nutritional yeast and some coriander powder ( i can’t stand fresh coriander/ cilantro - but as a powder i used it very often). VEGAN BODIES🌱💕🏃‍♀️... Why can it be tough to be vegan in Japan? 🇯🇵🐮🐷🐣🌱 Its not what you think... Believe it or not, as far as access to restaurants goes, I don't find it difficult to be vegan in Tokyo 💕 As long as you stick to areas with an abundance of vegan cafes, shops and international supermarkets, it's quite easy to maintain a vegan lifestyle here in Tokyo 🗼⛩️ But, what I have found is that promoting veganism here is a very different process compared to back home in Wales. In Wales, most people will look at me and realise I'm slim, healthy and look younger than I actually am and that helps to change their image of veganism or at least makes them question their eating habits👏🍓🍏🥑 But here in Japan, I'm classed as a bit on the chubby side (especially my gym ass and thighs 😂) and considered to look older than I actually am which makes it difficult for me to promote veganism as a healthy way of living.. . I've realised that there are some types of activism that just don't work here due to this and I need to change the way I approach the subject. Instead of "look, you can eat vegan burgers and still be helathy!" I have had to focus more on animal welfare and almost step away from the idea of veganism being healthier (which it is...) and just talk more about our inate human instinct to protect those who need us, the innocent animals we share this miracle of an earth with 🌍 🐮🐹🐔🐰💕🐼🐾 its a learning curve but it made me realise that sometimes I can't be a vegan cover girl 😂 👧 😢 it's also been a bit of a knock to my self esteem but I'm made of strong stuff and I know I should never compare myself to others. So I found the beyond burger and gave it a try last night. If you gave up meat because you doslike the taste of it then I wouldn't recommend them as it really does synthesis meat. On the other hand if you miss meat then id give them a go.
