how does yeast work in pizza?
The Science Behind it:
Yeast is the one ingredient a pizza dough needs the most. Yeast is the primary leavening agent in dough, which means it’s what causes the pizza dough to rise. Yeast is essentially part of the fungus family, and the way it works is actually quite fascinating. Yeast creates carbon dioxide by feeding on fermentable sugars within the dough’s ingredients. Carbon dioxide creates air pockets in the dough, and during the baking process the heat kills the yeast. This leaves the air pockets trapped in the dough, creating an airy, fluffy crust. When you see a pizza dough recipe that calls for sugar, it’s because added sugar can help the yeast’s feeding process.
1. 3 1/2 to 4 cups bread flour, plus more for rolling
2. 1 teaspoon sugar
3. 1 envelope instant dry yeast
4. 2 teaspoons kosher salt
5. 1 1/2 cups warm water
6. 2 tablespoons olive oil, plus 2 teaspoons
* Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine until the dough forms into a ball. Gently knead into a smooth, firm ball.
* Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. *Graysen did this experiment with my sister, Jennifer, and had so much fun, especially rolling out the dough and pulling it apart. Cutest thing ever! My sister did grab an already pre-made dough for Graysen to play with in the meantime while the dough set, which was such a smart idea 💡 Best part-eating the pizza 🍕 made with love 💕 and little hands 🖐🏻 Thank you Aunt @jennifertrinkoff for making pizza with Graysen and watching him this past weekend!
