10min shiitake pea and spinach frittata. GF, Paleo, DF, vegetarian. Full of flavor and so so quick. Nights like this I have 3 soccer and basketball drop offs, voracious appetites and not a lot of time. Serve with a simple home made chimichurri sauce to add moisture and some kick. I make it often so I have a jar in the fridge to add to mashed roasted pumpkin quesadillas or meat and fish if any kind. This is my Thursday night special, the night we fall in bed at 10pm feeling grateful I have 7 more days till Thursday :-) enjoy xx Ing: 2 Tbs ghee Org eggs (I use 4 ) beaten Salt and pepper Turmeric dry 1 tsp Punnet of shiitake mushrooms sliced English peas 1 cup Baby spinach chopped loosely 1 cup Cloves garlic crushed 1/2 leek chopped fine (can use shallots or spring onions) Sauté all ingredients in ghee turmeric salt and pepper. When softened add seasoned egg (salt and pepper). Add lid to pan. Cook on low for 5 min Using classic plate technique, flip pan over onto plate, transfer frittata back to pan and cook on med heat for another 2 min MAX. Transfer to plate, serve drizzles in home made simple chimichurri sauce, a side salad or just as is. stuffed sweet potatoes never disappoint Pesto Chicken Stuffed Sweet Potatoes Plan it: Produce- 3 sweet potatoes 1/2 cup cherry tomatoes, halved 1 lemon, juiced Protein- 1lb shredded chicken breasts Packaged- 1 cup pesto Spices & Seasonings- Drier basil Salt & pepper to taste Olive oil Prep it: 1. Pre heat oven to 400° 2. Coat sweet potatoes with a bit of olive oil and sprinkle salt all over. Place on a parchment lined baking sheet and bake 60-70 mins, until soft. 3. Cook salt & pepper seasoned chicken, then shred. 4. Combine shredded chicken and pesto in a large bowl. 6. Cut potatoes lengthwise and stuff with chicken pesto mix. 7. Top with tomatoes, dried basil and lemon juice. ~LOW CARB DINNER~ (Gluten free & meatless) Today's dinner: KETO FATHEAD PIZZA! I have to say that I had a few doubts about this pizza but it's been a while since I ate pizza so I thought that I should give this a try :) It's better than I thought it will be! The dough is made of 5% cheese (usually people use cream cheese but I used 5% and it's very good), mozzarella cheese, egg, ALMOND FLOUR and salt. You can't taste the almond in it, it tastes like a regular pizza with lots of flavor because of the mozzarella cheese! 💯 I made a homemade tomato sauce with Italian spices and I used 9% yellow cheese, 5% Feta cheese and a little Parmigiano Reggiano :) On top: portobello mushrooms & onions. I never thought it will taste this good. Why should one even consider intermittent fasting? - When in fasted state, your body goes through numerous processes, both on molecular and cellular levels. These processes span numerous initiatives such as hormone regulation, cell repair, gene expression, and numerous others. - All of these are critical to a healthy life, but for now, we will focus on the number one reason for why IF is all the rage, weight loss. - Most people who read into intermittent fasting are mostly concerned with the weight loss aspect of IF and for a good reason. By condensing your eating window, one will naturally lean towards consuming fewer calories throughout the day, in addition to lowering insulin and increasing human growth hormone levels (both of which have been linked with weight loss). - Additionally, certain studies have shown that IF approach to eating has been shown to help the individual retain more muscle mass during a period of caloric deficit, when compared to “normal” calorically restricted diet. So not only does IF help guide the individual to eating fewer calories due to time restriction, but it also helps preserve lean muscle mass (in the process expediting body change composition). - Furthermore, as your body acclimates to IF, it will begin to produce hunger hormones called Ghrelin and Leptin during your eating window (your body is intelligent and will typically produce these hormones when it’s “anticipating” food – so if you normally have breakfast at 10:00 am, your body will naturally produce these hormones in anticipation of eating which will cause you to feel hungry even though you may actually NOT NEED the calories). It takes your body several weeks to fully adapt to IF, but once it does, it becomes substantially easier. - However, despite all that, keep in mind that weight loss is NOT possible if you’re not in a caloric deficit (if you’re eating more than your body is burning). You cannot binge eat during your eating window and expect to lose weight, that’s simply not going to happen. - Despite not being magical, IF is an extremely useful tool that can be implemented with great success, but it’s entirely dependent on the individual. - Cheers

I don’t share my stories as much as I used to...I was thinking about this and why I don’t? There was a time it was easier to be open and forthcoming! I find it easiest to share when I’ve crossed a hard road and am on the way up or at the top of the hill! Much harder when I am in the storm or stuck at the bottom. I have found the past two years so challenging. Health issues, friendships gained and lost, family sickness. Losing friends you thought were there for a lifetime, without a lot of understanding as to why. I’ve experienced hurt I didn’t think was possible anymore. But what I’ve learned is when you are vulnerable and take risks, you grow! You become stronger, wiser and more resilient! People who belong in your life find a way to stay and be there! My tolerance meter of what I accept has gotten so much smaller. My worth of what I deserve so much taller. When you find yourself on the bottom of the hill more often than on the top, changes have to be made. My circle got smaller. So for anyone who can relate...if you are in a storm currently...You ARE WORTHY! You deserve to be loved, appreciated, taken care of! You deserve whatever your love language needs! Mine is appreciation, I don’t need gifts or accolades, a simple I was thinking of you and I don’t need anything from you! I love you! ❤️ Why? Wasn’t going to post today, but just wanted to preach the power of nutrition. By no means am I saying it will prevent/cure everything. But it is such a powerful tool in prevention. Loosing people so young is so eye opening. It’s scary. It’s messed up. And it’s not fair. So many people take life for granted & treat their bodies in unimaginable ways. Life is just far too precious. If I can do anything with this account, it’s to spread awareness of the impact diet & lifestyle have on our quality of life. Especially through the experiences I’ve been through, I know first hand. Take care of yourselves 💕 . . This is the protein avo mousse I posted on stories the other day. Not the prettiest, but this is what I managed to get down this morning.the texture is 🔥 i had a lot of messages wanting this so here ya go :) . . 1 massive avocado (or two regular) + 3 tbsp @navitasorganics cacao + 2 scoops @ancientnutrition cocoa elixir (or any collagen/protein of choice) + 2 tsp vanilla + pinch of sea salt + @almondbreeze almond milk + 4 ounces @lilys_sweets_chocolate salted caramelized chocolate + (sweetener like honey, maple, coconut sugar if desired). . . Melt chocolate & add to blender with remaining ingredients. Blend everything until smooth, adding nut milk slowly until you reach desired consistency. I’m all for a quick, nutrient-dense, whole-food recipe that tastes awesome. Enter.. this Chipotle lime sweet potato salad. I was super surprised how dang good this was. & The boyfriend devoured it so we all know that’s a great sign. 😂 Its quick, simple, incredible easy, & minimal ingredients. Hope you enjoy it if you try it & happy Tuesday everyone 💕 . . Chop a bunch of kale into small pieces & place in a bowl. Sauté 1 medium sweet potato in 1 tbsp EVOO until cooked through. Add 1/2 chopped onion, 1/2 cup red cabbage, 1/2 large chopped bell pepper & cook until tender. Season with s&p & nutritional yeast. Remove from heat & add minced garlic or garlic powder. Add to kale. . . Sauce: mix 1/3 cup @sirkensingtons avocado mayo, juice from 1/2 lime, & 1 1/2 tsp chipotle powder. Toss the salad in it & serve warm! Serious game of would you rather: have to eat dessert every day for two meals a day or have to eat tacos every day for two meals a day?! Does anyone else suffer with a hindered relationship with food? I feel like this is something SO many people, girls in particular, suffer with, yet it isn’t talked about as much as it should be. Talking about it helps me personally, as someone who has been there. My biggest struggle was sweets. The guilt around them, not being able to stop at just one , etc. Since working on my relationship with food and through my love of healthifying my fave sweet treats, I’m able to treat myself & not feel a sense of guilt afterwards which comes with a great sense of relief! Just remember, life is too short to let food control you. 💕 . . . Lets ignore my lack of cutting skills, but These peanut butter crunch brownies are next on the list! They are soooo good - fudgy brownie, peanut butter cheesecake, & a chocolate crunch top that’s to die for. (I’ve been obsessed with crispy cereal lately, obvi 😂). Do you guys have any health/wellness essentials you pack with you while traveling!? I leave for Puerto Rico in a couple weeks & usually like to make sure I’m prepared with some healthier plane/road snacks! I plan on doing a whole post about it, because I find it to be so helpful to stay on track while away, but I typically bring activated nuts, individual protein powder packs, individual nut butters, & some sort of jerky to keep my protein up (salmon or tofu jerky). By the way, I’ve been looking at some restaraurnt around our air bnb over there and YOU GUYS. The food looks insane! Anyone ever been!? . . . On another note, to no surprise, on Sunday I whipped up a little meal prepped treat for the work week, cause you know, ya girls gotta have her treats. 💁‍♀️ these little Elvis ice cream bombs were SO good. Peanut butter & banana will forever be a favorite combination of mine.
