My sister has been feeding us like kings and queens this week, and it’s been so great getting new meal ideas for feeding a crowd. I always fall into ruts with what I feed my crew, and new, easy ideas are always welcome! * This one skillet shrimp meal was delicious. I hardly ever make shrimp - maybe once or twice a year - but I’ll definitely be making this one at home. She cooks like me, meaning, without ever using exact measurements, so I’ll give you the basic recipe she passed along to me. * Sauté chopped onions and garlic in a large, oven-proof skillet. Add a little white wine, a can of diced tomatoes, and a tablespoon or so of tomato paste and simmer down to reduce. Then add a layer of feta cheese, a layer of shrimp, and a layer of bread crumbs and parsley. Found this recipe in a magazine so we tried it last night. Prep time went faster because @poliberrocales and I did it together but it is easy enough to do solo, on a week night. I'll let you in on a little secret... friendship & preserved lemons are the secret ingredients 💝🍋 ⬇️ ⬇️ Roasted salmon, new potatoes & green beans = organic new potatoes cut into 1.5-2" chunks, tossed in EVOO & S/P, baked (on sheet pan) for 15 min at 425. Flip potatoes, add coarsely chopped garlic & push to one side of pan. Toss prepared green beans & sliced red onion in EVOO & S/P. Add to other half of pan. Season wild caught salmon filet w/sliced preserved lemon, S/P & EVOO. Place in center of pan w/veg & cook for 10 min. Finish on broil for a few minutes. Weeknight Vegan Jambalaya: This is a great, one pan, easy weeknight meal. It's pretty close in flavor to traditional jambalaya in a lot less time. You can use okra for flavor and thickening. I just don't care for it. Serves 4. Ingredients: Beyond Meat Hot Italian Sausage - 4 links ¼ cup water 1 cup steam in bag brown rice 1 tbsp olive oil 1 medium onion, chopped 3 celery stalks, chopped 1 large green bell pepper, chopped 1 cup grape tomatoes, diced 1 tbsp no salt added tomato paste 1 tbsp minced garlic 1 tbsp cajun or blackened seasoning 1 tsp hot cajun seasoning OR 1 tsp cayenne pepper 1 tsp black pepper 1 cup vegan chicken flavored stock 3 to 4 dried bay leaves Salt to taste Pinch of Gumbo File and parsley flakes, optional Directions: Cook rice in microwave according to package directions. Portion out 1 cup and set aside. Save rest for future use. In a large nonstick pan, warm 1/4 cup water over medium-high heat. Add sausage and cook until mostly firm. Remove from pan, slice and set aside. Drain any remaining water from pan, add oil and return to heat. Add celery and cook 3 minutes, stirring frequently. Add onion and bell pepper; saute until all veggies are tender. Add sausage, rice, tomatoes, tomato paste, seasonings, bay leaves, and garlic. Stir to combine and saute 3 mins. Add 1/2 cup stock, cover and simmer 7 minutes, stirring occasionally. Most of the liquid should be absorbed or cook off. Add additional stock as necessary to avoid dryness or burning. Consistency should be moist but not soupy. OMAD or “one meal a day” to the keto newbies out there, is so much easier to accomplish if you keep yourself busy throughout the day....and boy was I busy. My feet hit the floor running at around 7am and I just sat down to stuff my face at 7pm. “Kitchen is closed” as @cici.loves.cheese would say 😉 I picked up some chicken drumsticks and asparagus on sale at Food Basic’s for $1.99/lb. Roasted them on one pan in the oven on 425, then 450 until brown bits of flavour appeared. Simply seasoned everything with some pink salt, pepper, cumin, smoked paprika and drizzled with avocado oil. Sliced up two tiny tomatoes and topped them with diced red onion and some sprouts. This super simple sheet pan meal is ready in 30 minutes and perfect for the long weekend. Roasted @silvasausage italian sausages, peppers, artichoke bottoms and spinach. You can pair it with my quick microwave polenta or put it on a toasty bun. • • 1 pkg Silva italian sausages...I like spicy! • 1 can artichoke bottoms drained • 3 bell peppers sliced in thick slices • 2 onions cut into chunks • 1 bunch fresh spinach • 2 Tb olive oil + more for drizzling after it’s cooked. • 1 tsp dried oregano • 3 garlic cloves minced • Salt, pepper and red chili flakes to taste • 1 lemon • Pre heat oven to 375 Toss all ingredients EXCEPT spinach and lemon in a large bowl with the olive oil and seasonings. Place on a cookie sheet and roast for 30 minutes. •• As soon as you take it out of the oven,put your spinach on the tray and mix well. The carryover heat will wilt the spinach to perfection. One Pan Chicken Thighs with Roasted Potatoes and Onions. Another one pan meal for easy clean ups. First, cook chicken thighs on cast iron pan until skin is crispy, then remove from pan. Next, cook diced onion and potatoes until potatoes are golden brown, then remove from pan. For the sauce, mix butter, honey, soy sauce, and white vinegar into the pan until sauce thickens. Lastly, place the potatoes, onions, and chicken thighs back into the skillet and drizzle the sauce on top. Place the cast iron pan into oven and bake for approximately 20 mins at 400'F.

I made an absolutely delicious 😋 Asian inspired dish - Mongolian Beef 🍚 Stand back PF 👩🏻‍🍳 @carlsbadcravings is taking it up a notch ✅ Check out her other great recipes. I’ve never had Mongolian Beef with peppers 🌶 or Broccoli 🥦 but I gave it a whirl since the “Hubs” is a fan of Beef with Broccoli 🥦 Glad I did it! It was tasty 😋 I used rib-eye for the meat. It was sliced 1/4 inch thick. I also used half the soy sauce and next time I will use a bit less brown sugar. If you find it to be too sweet 😉 add a bit more of the Sriracha chili 🌶 sauce, it balances the flavors. I just arrived to NYC for a family occasion, jetlagged and can´t sleep yet. I tested this delicious recipe last Friday. This was totally spontaneous, I had some mini potatoes, fennel and fresh beans from the market + fresh thyme from my little terrace. Feel free to add any vegetables you like. Simple Chicken One Pan Meal for Shabbat or during the week. You will need: - 4 bone-in Chicken legs (depends on how many people you are) - 300-400gr/10oz lBeans -2-3 Fennel cut to thick slices (I had some leftovers) -mini potato cut to slices but not through (Hassleback potato) -3-4 sprigs of fresh thyme minced -2-3 garlic minced -1/4 cup Olive Oil -Pepper and Salt Preheat the oven to 400 Fahrenheit (180-200 celcius) Mix thyme, garlic and olive oil onto a bowl. Season the chicken with Pepper and salt and marinate the chicken with half of the marinade. Place the chicken legs on a baking sheet and bake for 45min, add the rest of the vegetables with the remaining marinade together with chicken and bake for another 1 hour or so until the chicken is tender and potatoes are crispy. It came out amazing and yet so crispy. I love the crisp of the skin. #TastyThursdays are back!! 😋 I’m a big fan of one pan dishes because they’re usually quick and so it is the clean up! This week I made a Sweet Potato+Chicken Sausage Veggies dish and it was delicious! Instructions listed below! ⬇️⬇️ ————————————————————— 1. Dice sweet potatoes, onions and red peppers 2. Put diced vegetables into a mixing bowl with olive oil and season with salt, pepper, paprika, cumin and chili powder. 3. Put seasoned vegetables in a baking tray into preheated oven of 400 degrees for 20mins 4. While vegetables are in the oven, cut up broccoli (can add chickpeas for additional protein) and chicken sausage and place them into the same mixing bowl to absorb leftover seasoning. You may add additional seasoning if necessary. 5. After the 20mins take out the pan and move the veggies to one side. 6. Add the broccoli and chicken sausage to the other side of pan. 7. Return pan into oven for an additional 15-20mins 8. LEMON GARLIC BUTTER CHICKEN AND GREEN BEANS SKILLET —— So addicting! This paleo, low carb, keto-friendly skillet chicken recipe is a snap to fix and cook. —— Ingredients: 3 – 6 skinless, boneless chicken thighs 1 pound (450g) green beans, trimmed 3 tablespoons butter, divided or (ghee for paleo diet) 4 garlic cloves, minced 1 teaspoon paprika 1 teaspoon onion powder Salt and fresh cracked pepper Juice of 1/2 lemon + lemon slices, for garnish 1/2 cup (125ml) chicken stock 1 tablespoon hot sauce (we used Sriracha) Crushed red chili pepper flakes, optional 1/2 cup fresh chopped parsley —— Instructions: In a small bowl, combine onion powder, paprika, salt, and pepper. Season chicken thighs generously with the spice mixture. Set aside while you prepare green beans. Arrange green beans in a microwave-safe dish with 1/2 cup water. Cook in the microwave until almost done but still crisp. Melt 2 tablespoons butter in a large skillet over medium-low heat. Lay the seasoned chicken thighs in one layer in the skillet. Cook for 5-6 minutes then flip and cook until cooked through. Transfer chicken to a plate and set aside. In the same skillet, lower the heat and melt the remaining tablespoon butter. Add chopped parsley, garlic, red crushed chili pepper flakes, and pre-cooked green beans and cook for 4 to 5 minutes, stirring regularly, until cooked to your liking. Add lemon juice and chicken stock and reduce the sauce for a couple of minutes, until slightly thickened. Add cooked chicken thighs back to the pan and reheat quickly. [recipe] | #tomatoegg Recently I am crazy in 💕 with Tomato Egg because it really goes well even with just a bowl steamed rice. Today’s version added with some tomato sauce and kale . 晚餐:最近恋上了🍅番茄炒鸡蛋 . 🍅 Ingredients for Tomato Egg 2 large eggs 50ml fresh milk/cooking cream 3 medium ripe tomato, cut into wedges 3 clove garlic, minced handful of kale, optional . SAUCE 2 tbsp tomato sauce 1/4 tsp sesame oil 1/4 tsp dark soy sauce dash of pepper 50ml hot water . Method 1. Whisk eggs with milk and pinch of salt till combined and set aside 2. In a skillet sauté garlic with 1 tbsp of oil till fragrant, add tomato and cook for another minutes before add sauce then bring to simmer for 1-2 minutes 3. Dish up tomato mixture and set aside while preparing the egg 4. Preheat and grease a clean skillet with cooking oil or butter then pour in the beaten egg 5. Cook over Low heat till egg begins to settle and firm (like scrambled egg) then pour in the tomato mixture and kale (lightly stir-fry with some oil for 30 second first) then mix well 6. SPICY SUMMER SQUASH AND SWEETCORN . 🌽A dish with all of the S’s. There are still a few squash knocking around in the supermarkets, but you could easily sub sweet potato in this recipe instead. It’s a pretty easy one-pan dish situation which also tastes great cold for lunch. . 🌱INGREDIENTS: 1️⃣1 squash, cubed. Don’t worry about peeling the damn thing, the skin will soften during cooking. ( #gamechanger, right?) 2️⃣1 can of sweetcorn 3️⃣1/2 packet of baby corn (optional) 4️⃣8-10 cherry tomatoes, halved 5️⃣1 tbsp black mustard seeds 6️⃣1 tbsp Harissa paste 7️⃣1 red chilli, deseeded 8️⃣Olive oil and salt and pepper to taste. Garlic salt is particularly nice if you have any.... 9️⃣Coriander (or parsley if you’re a hater) . 👌Mix it all together in a baking tray and roast on 200 degrees for roughly 30-45 minutes depending on how hot your oven is. Not reeeeally the main reason why I started cooking but ok fine ~part~ of the reason haha #throwback to our first Valentine's Day together this year when we decided to have a simple meal at home! 🥰 Because they say the key to a man's heart is thru his tummy righttt hahaha luckily for me this man's tummy isn't so fussy 😜 Followed @gabiekook's one pan steak cream pasta recipe for this but used simpler ingredients that the boy likes! It didn't turn out as well as expected oooops we used egg spaghetti or smth so it took longer to cook?? My version of Roman Chicken 🐓 You’ll need: -4 chicken breast, bone in, but skinned -salt &pepper -olive oil -1 red pepper, sliced -1 yellow pepper, sliced -2 garlic gloves, chopped -1 28 oz can of diced tomatoes - 1/2 cup dry white wine - 1/2 cup chicken broth - 1 tbs fresh thyme leaves -1 teasp fresh oregano leaves -1/4 cup Italian parsley Season both sides of chicken with salt and pepper. Put olive oil in large skillet or dutch oven. Heat pan over medium heat. When oil is hot put chicken in pan and cook until both sides are browned. Remove chicken and set aside. Now still over medium heat add cut up peppers and cook until peppers are a bit soft and browned, about 5 mins. Add garlic and stir and cook 1 minute. Add tomatoes, wine, broth and herbs. Using wooden spoon, scrape bottom of pan to loosen brown bits. Return chicken to pan and bring to a boil. Reduce heat to simmer and cover pan. Cook until chicken is cooked through. You can serve with rice and vegetable.
