WHEN IT COMES TO YOUR DIET- CONTEXT IS KING. _ I frequently get emails from clients, potential clients, or just people wanting advice- and they are always asking what to eat , how much to eat and when to eat it. _ But NUTRITION IS INCREDIBLY INDIVIDUALIZED. I wish I could provide health, vitality and a lean physique that easily, but nutrition is a SCIENCE and there are 193726155 ways to apply that science depending upon the context. _ Think about it: No one’s lifestyle is exactly the same. Person to person we all vary. If people aren’t a “one-size-fits-all” how could you expect nutrition to be? Everyone's body has varying needs and each will react differently to varying diets and foods. There's no hard and fast rule. Sure- general guidelines like "drink enough water", "eat less processed food and sugar", "eat healthy fats and protein, mostly vegetables and fruit" etc might be somewhat helpful for most of us, but beyond that if you really are serious about changing how you look and feel you need to get more specific then cookie cutter diets and "general" suggestions. Finding what works for your body is an experiment, one you may need to repeat as you lose weight, gain weight, age, and undergo lifestyle changes. It’s a lifelong self study. When I first started feeling confident in my cooking, I would get a desire to cook a type of food, such as Italian, and spend the next month or so cooking only Italian. I would eventually tire of that cuisine and start another, such as Southwestern. All very random and whatever possessed me took over. This past year, I have really concentrated on what is growing in season at the moment. Living in Oregon gives us plenty of food options. In the winter season, we grow most of the root vegetables, Brussels sprouts, broccoli, cauliflower and kale. I have allowed myself to also purchase produce from Washington and California. If green beans or eggplant is available from Mexico, I walk right by. I will buy those locally when they are grown in Oregon. You might have noticed that my food does have the same components. However, spring is around the corner and I am so excited to introduce new vegetables to my palate. After watching the Salt episode on Netflix, I received that impulse to want to cook Japanese food. I have no idea how to cook Japanese! I usually enjoy it in restaurants. I went to the library and found the cookbook “Kansha: Celebrating Japan’s Vegan and Vegetarian Traditions” by Elizabeth Andoh. This was my second attempt at stir-fry. It had been so long since I made a stir fry that I overcooked it the first time. The second was much better. I will post a recipe next week. I am still figuring out timing and exact measurements for rice wine, rice vinegar and tamari/soy sauce.

PORRIDGE 🍯 ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Having a little brekkie before college this morning at TANG on abbey street (yes, you guessed it... Breakfast is my fav meal of the day! 😍) Felt a bit fed up of the usual 3 - pancakes, yogurt & granola or eggs - and was craving some porridge :) ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ The porridge was gluten free, vegan (made with coconut milk), topped with granola, nuts, banana, apple, grapefruit and a couple pomegranate seeds. Overall, I genuinely think this is the most delicious porridge I've ever had (what's your secret? Or was I just SUPER hungry 🤣? ) ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ We also got a bit of chamomile tea on the side #fav ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Oats are a source of soluble & insoluble fibre. Some benefits of fibre include lowering of cholesterol, preventing constipation, reducing cardiovascular disease and keeping you fuller for longer, as the food moves through the stomach and intestines slower. There has also been an association between fibre and the regulation of blood glucose, therefore possibly preventing type 2 diabetes. Fibre is also linked to the possible prevention of colorectal cancer. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ On the topic of oat "milk" and other milk alternatives, veganism is very topical right now... Soup is one of the easiest ways to get a large helping of vegetables into any meal. This recipe from @TheCozyApron uses a few dairy ingredients (such as butter) but you could easily substitute that with a non-dairy option.
