It’s toast Tuesday and I decided to make one of my favorite brunch foods to eat out on toast form #ad Shakshuka is so delicious and I just thought why not put it on toast! It is super easy to make and is very flavorful with the addition of @sabra hummus. See below for the recipe 👇🏻 ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 6 pieces of bread (I use whole wheat) 6 eggs 1 can fire roasted tomatoes 1/2 c red peppers 2 garlic cloves chopped 1/2 chopped onion 1 tbsp olive oil 6 tbsp of @sabra hummus Salt, pepper, red pepper flakes 1. Preheat oven to 350 degrees F. 2. Place bread on a wire rack on top of a baking sheet. Place in oven for 8 minutes. 3. Pour oil in pan, allow to heat up, and toss in garlic and onion. 4. Sauté for a few minutes until caramelized. Add in can of tomatoes, red peppers, salt, pepper, and red pepper flakes. 5. Remove bread from oven, spread 1 tbsp of hummus on each piece, and place tomato mixture on bread. Make a well in the middle of the bread. 6. Crack an egg and place it in the well. Repeat for other 5 pieces of bread. 7. When we are stressed or feel guilty about what we are eating it only makes our body stress out, which affects our digestion, mood, hormones and so on. When we choose not to eat or deprive the body of nourishment it also leads to a cascade of unwanted effects. ✨Fueling the body should be seen as an act of self respect NOT disrespect. #ninjatalks : Stop the negative body talk! 🗣️ . I've been thinking about sharing this for a while, but not sure what stopped me! 🙈 . 👭 I haven't been very vocal about it here, but I feel that off late, people think negatively commenting about other people's body's to the person concerned is okay. . . 📚 I've received several unwarranted comments about my body ever since I started my undergrad (a time where I lost a considerable amount of fat that was a result of board exams) up until now (where I've "leaned out" because of consistent gymming). . . 💪🏽 For the sake of context, I'm about 5 foot tall (hence my handle 🌚) and weigh about 45kgs. So, tiny basically! . Here are some of the comments I've received; ☑️ You need to eat more! . ☑️ People like you don't need to come to the gym/exercise. ☑️ You don't even look like you eat! How're you a nutritionist? . 🍩 HOW do you deduce that someone's not eating enough/more by just LOOKING at them? . 🏋🏽‍♀️ Exercise isn't only for people who look a certain way. Everyone needs to be physically active because of the myriad of health benefits apart from just body weight regulation! . . 🤔 Also, assumptions about one's health CANNOT be made by merely just looking at someone. . 📢 How your body looks from the outside has NOTHING to do with what your talents, passion and ambition are. You don't need to look a certain way to follow your dreams! . 💪🏽 Yes, you can change certain things about your body. That's an individual decision. But there are certain things you cannot change. That's where body positivity and accepting your body play a role! . 🥰 Let's take a vow to not comment negatively about other people's bodies. The weekend celebration- whether it was a birthday, hosting out of towners, or a wedding- is hardly over and already the talk of eating less/avoiding carbs/starting a diet gets ramped up 😬 . I had the pleasure of seeing one of my oldest friends get married 👰🏼🤵 this weekend and I wanted to drop this gentle reminder that yes, we all ate cake and drank champagne, but you STILL need to EAT today! . Trust me, I GET what you’re feeling (helloo, a little extra bloat and puff) but rather than going into “restriction mode” let’s be kind and respect our amazing bodies. My best advice is to listen to what your body is telling you it needs. Have regular, consistent meals 🍽, focus on filling half your plate with veggies 🥦 (I’ve got this kale, tomatoes, and cauliflower gnocchi dinner on deck), eat some high fiber carbs 🍠, drink plenty of water 💦, and move if it feels good 🏃🏼‍♀️. I could come up with a million excuses to take a break but running a business has no breaks. Excuses are the currency that allow you to not act. 🥑 What I Ate in a Day 🥑 . I'm sharing this just to share. There is no one "right" way to eat. What feels best for me, may not be best for you. Along my journey to heal my skin, I had to address more than just the surface. Ultimately, adapting a paleo template and incorporating the 21-Day Sugar Detox guidelines is what allowed my skin and digestive symptoms to clear. Champagne Mango AKA: yellow, baby, Ataulfo These are in season late February through August and are native to Mexico. They differ from our usual mango variety due to its smaller kidney-shaped form, yellow skin, velvety smooth flesh with almost no fibrous texture, has a much thinner pit, and the taste is extremely sweet. Yummo! Try this recipe…. Black Rice Salad with Mango and Peanuts Ingredients: • 2 oranges • 1/4 cup (or more) fresh lime juice • 2 tablespoons vegetable oil • 1 tablespoon fish sauce (such as nam pla or nuoc nam; optional) • 2 cups black rice (preferably Lotus Foods Forbidden Rice) • Kosher salt • 2 just-ripe mangoes, peeled, pitted, cut into 1/2" dice • 1 cup fresh cilantro leaves • 1 cup finely chopped red onion (about 1/2 large onion) • 1/2 cup unsalted, dry-roasted peanuts • 6 scallions, thinly sliced • 2 jalapeños, seeded, minced Directions: 1. Remove peel and white pith from oranges. Working over a medium bowl to catch juices and using a small sharp knife, cut between membranes to release orange segments into bowl. Squeeze membranes over bowl to release any juices. Strain juices through a fine-mesh sieve into a small bowl; reserve orange segments. 2. Add 1/4 cup lime juice, oil, and fish sauce (if using) to bowl with orange juice; whisk to blend. Set dressing aside. 3. Bring rice and 2 3/4 cups water to a boil in a large saucepan. Season lightly with salt. Cover, reduce heat to low, and simmer until all liquid is absorbed and rice is tender, about 25 minutes. Remove pan from heat and let stand, covered, for 15 minutes. Spread out rice on a rimmed baking sheet, drizzle with dressing, and season lightly with salt; let cool. 4. Place mangoes and remaining ingredients in a large bowl.
