Anyone else love to cook cozy, comfort food when you are feeling like garbage?! I should probably have tried to sleep, or had someone else make dinner tonight... but nope... instead I made a fall casserole!
My taste buds are pretty dull today, so I wasn't sure how well it would turn out... but I got lots of thumbs up and we all had seconds!
I just want to say... inventor of the spiralizer... I love you. Makes things like slicing potatoes for gratins, and scalloped casseroles sooooo much easier!! So sliced sweet potatoes, Hillary's maple apple vegan breakfast sausage patties, chopped up and pan fried with a whole finely diced onion... also in this was a thawed bag of frozen chopped spinach squeezed out really well, a bag of frozen winter squash, thawed...a bit of leftover shredded vegan cheese, salt, pepper... herbs, spices... then I just layered everything! I put things on different layers in between 2 layers of the sweet potatoes... and topped it with a last layer of sweet potatoes. I made a quick 'sauce' using some leftover veggie stock and some Ripple brand half and half, seasoned it with some onion powder, poultry seasoning (oh I used that throughout the layers too, as well as some chopped fresh sage, and rosemary and a bit of fresh grated nutmeg) poured the sauce (it only came about 1/4 of the way up the dish) covered it and baked it at 375 F for just under an hour. Removed the cover and cooked it for another 15 mins.
