SEA BREAM Pear, lemongrass, Myoga, fava bean soy sauce Paired with Domaine Philemon Perle Blanc 2018 ・ 鯛刺身: 梨、レモングラス、ミョウガ ・ ニューヨーク高級業態では$300、$400は当たり前でワイン、チップを入れて一人$500もザラだが、同じ米国でも内陸の都市や郊外にいけば中々その値段では出せない。 この店はボストン郊外にあり税金、チップ、ワイン込み込みで$225という破格。キャビアやトリュフのような派手な高級食材はでてこないが、50%以上はローカルの食材、野菜は無農薬の自家栽培の食材のみ使用、ワインもナチュラルワインのみ。料理はトレンドを抑えた食材や味付けを取り入れているが、ベースはクラシックフレンチ。各皿にキーとなる野菜があり、その野菜の魅せ方が素晴らしい。シェフのPeter Ungárはフォーシーズン、フランスのミシュランレストランで出身であり王道フレンチがバックグラウンド。丁寧で真面目な仕事がされている料理の数々もここにしっかりと継承されている。謙虚に一つ一つ料理説明、それにまつわる文化や歴史を話してくれるシェフPeterの姿勢に心打たれた。 昨今は修行経験無くともセンスでセレブシェフになり、料理は中途半端だが店も繁盛してしまうという構造があり都市ではやはりビジネスなので避けられない現状でもある。 その中で地味ではあるが伝統的な料理や文化をしっかりと学び、継承、伝えていくシェフ達のリスペクトは忘れてはいけないと思った。 ・ Speaking of the cost performance, this venue @tastingcounter could be one of the best venue that you can find in east coast. It only cost 1/3 of what NYC comparable venue would charge. ・ Ok, you won’t see flashy goods like caviar, truffle but all dishes are exquisitely and humbly prepared by Chef Peter Ungár. 50% or more of ingredients are local and 100% natural product including wines. Chef is from four seasons and Michelin restaurant from France so many dishes I can definitely see the technique of classical French. Moreover, his vegetable execution is as phenomenal as Gunter seeger and I was blown away. This venue may be considered to be high-end but there is no pretentiousness or such uptight feeling. Humble and polite service with relax setting and I really enjoyed the experience. (2/2) 𝗦𝗲𝗽 𝟮𝟬𝟭𝟵 I’ve had many amazing meals at 𝗟𝘆𝗹𝗲’𝘀, but their 𝗚𝗮𝗺𝗲 𝗗𝗶𝗻𝗻𝗲𝗿 𝗦𝗲𝗿𝗶𝗲𝘀 this year was the best yet. All of the game, fish and mushrooms here were the fruits of a weekend away in the Scottish Eastern Highlands by Chef James Lowe and invited chefs from around the world. It truly was the most delicious way to welcome the Autumn season 🍂. .
