Herb crusted NAKED TENDERS for this Monday! I had the BEST weekend in Chicago with the best company I could have asked for. 🥰 - - When I travel I love feeling confident in eating & picking foods!! Of course I still go out of my normal zone & sometimes eat foods I normally wouldn’t - LIKE DAIRY 🥛 🍕! Dairy makes me feel very bloated for a few days after eating it, so between that - the salty extra dirty martini’s & mimosas from girls brunch I wanted something packed with nutrients, fiber & FLAVORRRRRR on my first work day back home. Balance is the best key to traveling. Don’t over indulge out of your normal zone, but also don’t restrict yourself !! - - RECIPE/INSTRUCTIONS - I paired the chicken with @tessemaes buffalo dressing - sugar free, @whole30 approved! Broiled some broccoli for a crunch & extra flavor/fiber. + arugula/spinach mix. Chicken tenderloins - top with onion powder, garlic powder, oregano, salt, pepper, basil, & some cayenne pepper. I’m making a bumper batch of Ratatouille. I love the oven baked method, it’s so easy. The eagle-eyed amongst you will notice that I forgot to put the courgettes in the picture 🤦🏼‍♀️. I will freeze it in potions to have with dinner or lunches. As I don’t use oil it’s Slimming World friendly! Where’s my tricky moms at? Breakfast hack right here. This girl loves yogurt, so we do plain Greek (no added sugar, loads of protein). I mix in a packet of MightyPro (pre and probiotic to make her immune system hella strong) and 1 Multigreen capsule (open it up and dump it in because this girl hates her greens). Top with some granola and flaxseed. Super quick and tasty dinner tonight - tuna pasta bake with a small side salad 😋. I’ve got at least 4 more portions left of the pasta bake so that will do for a some quick lunches. The recipe is so easy! Just fry off a finely chopped onion with 2 crushed garlic cloves. Add 2 tins of chopped tomatoes and a tsp of oregano, bring to boil then simmer for 15 min. Add 1 tin of tuna, some cooked pasta and a good pinch of black pepper, transfer to an oven proof dish. Top with grated cheese and breadcrumbs and bake in a preheated oven (gas mark 6) for 15 mins. It's anyone else enjoying their long weekend? We are!! 🙌. It's such a treat to have the extra day off. . . How about a healthy pancakes breakfast with equally healthy blueberry syrup? Yum! You are going to love this. We did. . . The syrup is simple. It's berries (I used blueberries, but you can really use any kind), honey and a tiny punch of salt. Make a big batch and you are good to go for several weeks. Here's the recipe I used: . . 4 cups frozen berries. When they aren't in season, I always use frozen. 1/4cup honey. You can use less or more. It's a variable. If you prefer sugar or maple syrup, use those also. Pinch of salt . . Put all ingredients into heavy pan. Heat for 5 to 10 minutes on medium low. Pour into food processor and pulse until it's the consistency you are looking for. I did mine until it was fairly smooth. Return to pan and heat again. Cook until it's thickened, mine took about 5 minutes. At this point you can either strain or use it like it is. It's really good either way. I normally don't strain, but did it for the sake of a beautiful photo with the syrup pouring out smoothly. . . The pancakes are my favorite recipe from the powdered buttermilk container from @sacopantry. I buy mine in the baking aisle at Walmart, but you can find it just about anywhere. I've made some slight adjustments to their recipe, here's what I do- . 1 cup whole wheat pastry flour 1/4 cup powdered buttermilk 1 teaspoon baking powder 1/2 teaspoon baking soda 1 egg 2 teaspoons canola oil, or fat of your choice 1 cup water . Combine wet and dry in seperate bowls. Combine the 2 and mix only until they come together, it doesn't need to be completely smooth. It's best not to overmix. Cook pancakes with your normal method. Trust me when i say eating healthy doesn’t require sparing a lot of time. So today, iam gonna share with you one of my favourite recipes, which is an #oatmealbowl and it only takes 5 minutes to prepare.An oatmeal bowl can have a lot of variation, depending on what you decide to top it up with and will keep you full for hours. . Oatmeal is high in protein, carbs and fibre(contains both soluble and insoluble fibre). And you can add foods with good fats to get all your macros in one meal. . . 1.So first of all add a cup of oats ( i use quaker) and add one cup of milk/water and let it cook on simmer until it comes to a boil. And let it boil for a minute or two. 2.while your oats are boiling, take a plate and fill it with what you want to top your oats with. Some of the great options are; Bananas Strawberries Pomegranate Grapes Kiwi Apple Coconut Almonds(dry or soaked) -whichever you prefer Walnuts Raisins Dried berries Berries(you can use frozen or fresh) Sunflower seeds Chia seeds Sesame seeds And my absolute favourite, Dark Choclate . 3. When the oats are ready, shift them to a bowl and top them up with whatever toppings you have decided on or you have in your kitchen. 4. You may add a little bit of suger to your oats while cooking, for some added sweetness. ( I personally don’t, because i like to get my sugar from the fruits instead) . . If you saw our story yesterday, you’ll know we were DIYing breakfast. I really wanted guacamole, but also wanted avocado on toast with eggs.
