Kedgeree for brunch!
This breakfast/brunch dish contains a vast amount of nutrients. Complex carbs, omega 3, protein, vitamins, mjnerals and antioxidants from the tomatoes, eggs and spices! Good for helping to calm the nervous system in times of stress and a great pre-workout meal.
Most kedgerees can take anywhere from 45 mins to over an hour! Don’t know about you but during the week I don’t have that that time to give.
Mines can be made in 15-20 mins.
1/2 cup brown rice
2 cups of water
1/4 red onion
6 cherry tomatoes
1 tbsp curry powder or half a Korma curry paste pot
4 large dollops of coconut yoghurt
1 boiled egg, halves
1 mackerel, cooked and shredded
Place the dried rice and water in a small pot and cook for 10-15 mins.
In a sauté pan, add one tablespoon olive oil, add chopped onion and cherry tomatoes. Cook until tomatoes burst. Add curry powder/curry paste and coconut yoghurt. Mix well and leave to cook slowly on a low heat.
Stir the rice into the sauce mixture and add shredded mackerel.
Plate up and top with sliced egg!
This dish will keep you fully satisfied until your next meal.
