Was in the mood for something warm & comforting; so decided to make this 'Hearty Red Lentils & Vegetable Soup' 🤗
This turned out to be really good! Really happy with the flavours & although it is hearty, it is also still very light. ❤❤❤
I used more Bacon this time to add more depth to the flavours because everybody knows that #baconmakeseverythingbetter 😉🥓. I wanted to add some Chicken Breast cubes at first, but it was already really yummy & satisfying without it, so I just left it as it is.
So here goes!
• 200 Grams (approx. 7 Ounces) Smoked Streaky Bacon (cut into bits)
• 1 Large Onions (finely-diced)
• 3 Large cloves of Garlic (very-finely-minced)
• Half a Celeriac (diced into small cubes)
• 3 Sticks Celery (sliced)
• 3 Small Carrots (sliced)
• 1 Large Leek (white parts only, sliced)
• 3/4 Tsp. Cumin
• 1/3 heaped Tsp. Smoked Paprika
• 1/3 Cup Red Lentils
• A can of diced Tomatoes (no Salt) 411 Grams (approx. 14.5 Ounces)
• 4 Cups Chicken Stock
• 1 Tsp. Salt
In a large pot (or pressure cooker pot, which is what I had used today), heat up approx. 2 Tbsp. Olive Oil on medium high heat. Fry Bacon in Olive Oil until crispy. Set aside. Sweat the Onions in rendered Bacon fats & Olive Oil mixture until soft & translucent. Add Garlic in & fry for another minute. Keep stirring & be careful not to burn the Garlic. Add in Leeks, Carrots, Celeriac & Celery. Cook & stir for 5 minutes. Add in Cumin & Smoked Paprika, stir well. Add crispy Bacon Bits back in followed by the Lentils, diced Tomatoes & Chicken Stock. If you cook this with a pressure cooker, cook until the 2nd ring popped up (setting 2) then take it off the stove & wait until the ring depressed on its own. On normal stove, simmer until the lentils are cooked through & all vegetables reached desired consistency.
