Chicken asparagus twists!😍👍🏼 TAG A FRIEND WHO WOULD LOVE THIS!!❤️ . Ingredients (for 12 serving) 2 boneless, skinless chicken breasts 1 teaspoon salt, divided ½ teaspoon pepper 1 teaspoon onion powder 1 teaspoon garlic powder 6 tablespoons lemon juice, divided 6 strips nitrate free bacon 12 stalks asparagus, ends trimmed 1 cup greek yogurt 3 tablespoons fresh parsley, chopped 1 tablespoon fresh dill, chopped . Preparation 1. On a cutting board, slice chicken lengthwise into 1-inch (2 cm) thick slices. Take each slice of chicken and cut it in half lengthwise leaving about 1 inch (2 cm) uncut on one end of the strip. 2. Cut off part of the uncut end of the chicken so you do not have a thick spot in the middle of your longer chicken strip. 3. Place chicken strips in a bowl. Add ½ teaspoon salt, pepper, onion powder, garlic powder, and 3 tablespoons lemon juice and mix to combine. 4. Transfer to the refrigerator. 5. Preheat oven to 400˚F (200˚C). 6. On a cutting board, slice each piece of bacon lengthwise creating 12 strips in total. 7. Wrap the cut strip of bacon around the asparagus. 8. Wrap a marinated chicken strip around the bacon-wrapped asparagus. Repeat with remaining ingredients. 9. Place each bacon chicken asparagus twist on a parchment paper-lined baking sheet. 10. Bake for 10 minutes. 11. Turn up the heat to broil, and broil for 10 minutes. Flip the twists over, and broil for an additional ten minutes. 12. In a bowl add the Greek yogurt parsley, dill, ½ teaspoon salt, and 3 tablespoons lemon juice. Stir until well combined. 13. Remove bacon asparagus twists from baking sheet, and let cool. 💪 Do Keto With a Plan , Do Keto RIGHT! (link in the Bio) . . . Saving this one. Looks incredible. I used to do a similar one: cut a pocket into a chicken breast and stuff it with a 50/50 mix of cheddar and mozzarella mixed with whole grain mustard. Wrap the chicken in pancetta and put in the oven. Not only does the pancetta add more flavour, it stops the chicken drying out whilst in the oven. Ingredients 125g ball mozzarella, torn into small pieces 50g strong cheddar, grated 1 tbsp wholegrain mustard 4 skinless boneless chicken breast fillets 8 smoked streaky bacon rashers Tip Make it veggie Cheesy baked mushrooms: Heat oven to 180C/fan 160C/gas 4. Mix the mozzarella and cheddar with 1 tbsp pesto, then spoon into the hollows of 4 portobello mushrooms. Place on a baking tray and roast for 15 mins or until the mushrooms are softened and the cheese is bubbling. Method Heat oven to 200C/fan 180C/gas 6. Mix the cheeses and mustard together. Cut a slit into the side of each chicken breast, then stuff with the mustard mixture. Wrap each stuffed chicken breast with 2 bacon rashers – not too tightly, but enough to hold the chicken together. One of my top 5 meals ever! I love making zoodles in place of pasta noodles-especially since I’ve been eating more gluten-free lately. Garlic Butter Turkey Meatballs with Lemon Zucchini Noodles Ingredients 1/2 pound turkey meat (ground) 1/2 pound pork meat (ground) 1/2 cup shredded cheese (your choice, mozzarella, cheddar, provolone…) 4 cloves garlic (grated + 2 cloves garlic, minced) 1 teaspoon italian seasoning 1/2 teaspoon chili pepper flakes (red crushed, optional) 1 bouillon cube (crumbled, optional) salt cracked black pepper 1 cup chopped cilantro (fresh, or parsley, divided) 3 tablespoons butter 4 medium zucchini (spiralized) 1/2 lemon 1 tablespoon hot sauce (your choice, we used Sriracha) Directions 1. In a large bowl, combine ground turkey and ground pork, cheese, grated garlic, Italian seasoning, bouillon cube, red chili pepper flakes, chopped cilantro and black pepper. Mix well with your hands or fork and form medium balls. Arrange on a plate and set aside. 2. Melt 2 tablespoons butter in a large skillet over medium-low heat. Cook the meatballs for 8 – 10 minutes on all sides, until browned and cooked through. While cooking, baste the meatballs with the mix of butter and juices. Remove to a clean plate and set aside. 3. In the same skillet melt remaining tablespoon butter; then add lemon juice, hot sauce, minced garlic, and red pepper flakes (if you want). Add the zucchini noodles and cook for 3 or 4 minutes, stirring regularly, until zucchini is done but still crisp and juices have reduced a bit. Adjust seasoning with salt and pepper and garnish with more cilantro or parsley if you like. 4. Push zucchini on one side of the skillet and add the meatballs back to the pan and reheat for a minute or two. Serve immediately with a lemon slice on the side. Enjoy! Note: Pork in this recipes allows the meatballs to be more juicy and tender. If you don’t eat pork, just double the amount of ground turkey, it’s delicious too! ---------------------- PAN SEARED SALMON 🍣 WITH CREAMY GARLIC DIJON SAUCE ⬇️ INGREDIENTS: - 4 (6 - 7 oz) skinless salmon fillets. - 3 tsp olive oil. - Salt and freshly ground black pepper. - 3 garlic cloves, minced (1 Tbsp). - 1/2 cup heavy cream. - 1 1/2 Tbsp dijon mustard (or a little more to taste). - 1/2 cup low-sodium chicken broth. - 1 Tbsp minced fresh dill. INSTRUCTIONS: 1) Heat a large non-stick skillets over medium-high heat (or use two skillets if you used large 7 - 8 oz fillets like I did so they aren't overcrowded). Add 1 1/2 tsp olive oil to each skillet. Dab both sides of salmon dry with paper towels and season both sides with salt and pepper. 2) Place salmon in skillet. Let sear until golden brown on bottom, about 4 minutes then flip and continue to cook to desired doneness, about 2 - 3 minutes longer. 3) Meanwhile, in a liquid measuring cup whisk together with 1 tbsp cream, then mix in enough cream to measure 1/2 cup. Whisk in dijon mustard. 4) Remove salmon from skillet and transfer to a plate, leaving oil in one skillet. Tent salmon with foil. 5) Add garlic to skillet with oil set over medium heat, saute until just barely golden brown, about 20 - 30 seconds. Pour in chicken broth. 6) Bring to a simmer then reduce heat to medium-low and let simmer until reduced by about 2/3, about 3 minutes. 7) Whisk cream mixture once more then pour into skillet. Cook and stir, bringing to a simmer. Let simmer gently, while stirring, for about 30 seconds. 8) Remove from heat stir in dill, return salmon fillets to pan, spoon sauce over salmon.
