Ja tam weganką nie jestem, ale jak już to wegańskie ciasta są najlepsze do zżarcia i zrobienia! To już drugie takie ciasto od @tastepromoters - nie ma opcji, by nie wyszły. Ich przepisy są tak proste, że na bank wszystko w domu masz (jeśli jesteś weganką i masz formę do tarty) a jeść tego się nie da, to się połyka w całości, w ciągu kilku sekund. Radio silence from me again (sorry), just finished two days of business so a whole load of anxiety has been lifted and I am now happy & knackered! . . I had my endoscopy last night (tube down the throat 🤢) and lots of biopsies were taken. Found inflammation in my tummy initially and the actual biopsies are coming back in 2 wks. Got a call today to say I am lactose intolerant, SO relieved this has been confirmed medically 👏🏻 Here's to a dairy-free life forever... . . Today I had some important & exciting but nerve-wracking meetings (can't explain right now but they are work related) so I'm glad they are outta the way 💅 . . Brekkie was Shreddies with Rebel Mylk (literally 😍) and lunch was a soya latte and an artichoke & olive tapenade flatbread from Veggie Pret in MCR and a little pot of grapes. Note the 'soya' sticker on my coffee 😍 Didn't go to my HIIT or strength classes tonight as I'm so beaten from the procedure last night but back at it with yoga tomorrow. Hope you're all OK 💚 at Sale, Cheshire

Good always comes out of bad as long as you are willing to see the good! These were my ruined dosas that ripped apart. I kept them instead of throwing them. I used them for lunch to make Dosa Paneer Pizza. Oh my Gosh people. These are much better than the paneer dosas I ate last night!! They are to die for! I don’t even like veggie food. But oh my. I felt like I was eating a ‘Weggie Pijja’ sitting in a dhaba in India. It tastes exactly like that! So I used the broken bases thT were slightly thicker than they should be. Then added a tomato base made with tomato purée, extra virgin olive oil, garlic and Italian herbs. Placed the base in a pancake pan. Smeared with tomato base. Added paneer bhurji, then grated lactose free cheese on top, added sweetcorn, pepper, onion, fresh olives and put a lid on over it. Then put under grill to get it bubbling and brown. Took it out. Grated over fresh Parmigiano-Reggiano which is also lacto free. This pizza killed it. I’m in love with it! WOW. Octopussy!! Ingrediënten: 70gr pandanrijst, 150gr wortelen, 200gr octopus (ingevroren Eridanous bij de Lidl ), 2 stengels bosui, 5 stengels verse koriander, 2el olijfolie en peper& zout. Voor de dressing: 3el sojasaus glutenfree (go tan), 1tl lichte bruine basterd suiker (VanGilse), 1tl aromatische sesamolie (AH), peper en 1/2 tl paprikapoeder. Recept: kook de rijst en wortelen. Laat de octopus ruim een uur van te voren ontdooien en snijd hem in ringen. Leg ze op wat keukenpapier en dep het vocht er af. Maak ondertussen de dressing door alle ingrediënten door elkaar te mixen. Snij de bosui in kleine ringen en de blaadjes van de koriander in stukjes, gooi de stengels weg. Maak de koekepan goed heet op hoog vuur en doe hier 2el olijfolie in. Voeg daarna de octopus toe en de helft van de bosui ringen. Wok deze kort, max. 3 minuten en meng de octopus met de dressing in een bakje. Wok kort de gekookte rijst in het vocht van de octopus. Serveer het op een bord en graneer het af met de rest van de bosui en koriander.
