Need a healthier alternative to fried chicken fingers?? Try These Almond Crusted Chicken Fingers! (You could also leave out the almond pieces and just use the panko if you'd like.) - 4 Servings Ingredients: 2 Tbsp. raw honey 2 Tbsp. Dijon mustard 2 tsp. rice wine vinegar Nonstick cooking spray (or olive oil cooking spray) 2 large eggs 2 Tbsp. water 1 lb. raw chicken breast tenders, skinless 1 cup whole wheat Panko bread crumbs (Japanese-style bread crumbs) ½ cup finely chopped sliced almonds 1 dash tsp. sea salt 1 dash tsp. ground black pepper - Preparation: 1. Combine honey, mustard, and vinegar in a small bowl; mix well. Chill. 2. Preheat oven to 425° F. 3. Line baking sheet with foil; lightly coat with spray. 4. Combine eggs and water in a medium shallow bowl; whisk to blend. 5. Soak chicken in egg mixture for 30 minutes, turning once; set aside. - 6. Combine bread crumbs, almonds, salt, and pepper in a large resealable plastic bag; shake to combine. 7. Working with a few pieces at a time, lift chicken from egg mixture, letting excess drip back into bowl, and drop into bag containing bread crumb mixture. Seal bag and shake to coat; repeat with remaining chicken. - 8.Place chicken on prepared baking sheet. Bake for 18 to 20 minutes, turning after 10 minutes, until no longer pink in the middle and golden brown. 9. Scrammbled egg and toast.+ banana. Sometimes the simplest things are the tastiest. Although they still struggle to eat scrambled egg themselves they do enjoy it. The best thing about toast is, it never gets old, you can always jazz it up with a different spread, jam, peanutbutter, avocado, nutella. Halibut, potatoes & Brussels sprouts . 2 tbsp. olive oil 2 tbsp. chopped mixed fresh herbs (such as parsley, thyme, and rosemary) Kosher salt and pepper 1 lb. fingerling potatoes (about 20), halved 1 lb. Brussels sprouts (about 10), trimmed and quartered 1 large shallot, cut into wedges 1 1/2 lb. halibut fillet . Heat oven to 425°F. In a bowl, whisk together oil, herbs, 3⁄4 tsp salt, and 1⁄2 tsp pepper. On a large rimmed baking sheet, toss potatoes, Brussels sprouts, and shallot with half of oil mixture. Arrange potatoes cut side down; roast 15 minutes. Remove the pan from oven and set halibut fillet atop vegetables. I love all of this fresh flavours and vibrant colours - yum! 😋 . . I thought I’d give it a little twist to make it perfect for my preschooler, so I’ve swapped in pan-fried salmon instead of raw salmon. . . To make a speedy supper I diced fresh salmon fillets, tossed in lemon juice and oil, and pan-fried for a couple of minutes until cooked through. Budget Meal Idea Thanks to Nonna for my inspiration on this dish - it’s super easy, basic ingredients and kid approved! There is even an adult version at the end. 👇🏻 Naked risotto with Passata Finely dice half an onion with 40g oil (or butter) and cook until translucent Cook 300g risotto with white wine to reduce wine and gradually add 900g stock (I used chicken) until rice is cooked. ~For those who are not dairy free - add cheese. Meanwhile warm up half cup of salted passata on the stovetop and mix in once risotto is cooked. I do it in the thermomix so timing hasn’t been listed but you can do it on the stove as well but you have to gradually add the stock as it cooks. Picky eating tip: INVOLVEMENT Kids can help with making meals and snacks. Just have them help with stuff where they won’t get cut or burned. I gave my niece a butter knife to cut bananas for a fruit salad she mixed together after I cut up the rest of the fruit. She was excited to eat the fruit because she assembled it. Win win. 😃😃

A lot of you have requested the recipe for the yummy, healthy banana bread I posted in my insta story the other day, so here it is. Doesn’t look pretty, but taste is 👌🏻. ✨ super moist and just the right amount of sweetness for the limited amount of sweetener that’s in it. 2 ripe mashed bananas 2 1/2 TBSP agave nectar 2 two vanilla extract 3 1/2 TBSP coconut oil, melted 1/4 cup unsweetened applesauce 4 eggs 1/2 cup coconut flour 1/2 cup almond flour 3/4 tsp baking Sosa Small handful of spinach (to start- work your way up to more) 1. Mash bananas 2. Blend all wet ingredients (less banana) plus spinach 3. Mix all ingredients together into a bowl 4. Let sit for a few mins do coconut flour can absorb some of the liquid and expand 5. Pour into greased loaf pan (I used coconut oil when almond flour- didn’t work the best as you can tell from a bit of the bottom missing) 6. So good and so easy! Shredded Brussel sprouts (I used Trader Joe’s precut ones) with EVOO salt pepper and ground pork (seasoned with salt pepper EVOO, garlic, fennel, basil, oregano). Bake at 425 for 20 min. Heat brown rice (i use Trader Joe’s frozen brown rice- 4 min microwave). Add 2 T rice wine vinegar to bowl with rice. When ready add Brussels sprouts and pork with juices to the rice. Top with Parmesan cheese and roasted macarona almonds. #yummy #healthyrecipes #kidapproved #veggies

If you know me, you know I'm a HUGE routine based person and anything I can do to stream line our hectic mornings, I'm all about! Making school lunches the night before is one of the simplest things to do (and my fav life hack!) that takes away so much stress from the mornings! This rule was so annoying to me because no one ever explains why.🙄 ⠀ ⠀ Infants under age 1 have a developing gut and digestive system. 👶⠀ ⠀ Honey has clostridium botulinum spores in it. These spores can grow (colonize) in infant guts. If they colonize, they make a botulinum toxin, which gives infants botulism. 🤕⠀ ⠀ Botulism is super lame. I won't go into how horribly lame it is...but it's soooooo lame. Spores are in all⠀ Honey. This includes ALL honey - even in cooked food. Heat may or may not kill spores (usually not), so don't give infants any food (including baked goods) that contains honey until age 1. 🙌⠀ ⠀ Do infants actually get botulism or is this just a "scare" thing? There were several cases recently from babies using honey pacifiers in the US. ⠀ ⠀ After 1 age, the kiddos are just fine eating honey. Cold days call for cuddles and comfort food. These vegan friendly Broccoli potato Wonton ravioli, are a great way to Jazz up pasta night. They are also super easy and quick to prepare! I used store bought Wonton wrappers and microwaved 2 potatoes for about 5 min. While the potatoes were cooking, I finely chopped a head of Broccoli and 3 cloves garlic. Then I sautéed the garlic and broccoli in 2 tbs olive oil until it was soft (with just salt and pepper). Then add in the peeled and mashed microwaved potatoes, a few pats of vegan butter,and water until it's a soft mashed potatoes consistency (you can also add mozzarella cheese if you aren't making them vegan). Your filling is ready in 15 min! Then just proceed to fill in the wonton wrappers (just seal with a little water) and boil for 2-3 minutes until they float! Top with your fave sauce and serve with a good glass of red 🍷 (and you'll be warm in no time!😉). Hasselback kielbasa ring 😍 inspired by @moishassupermarket takeout dept. after my son told me to buy it every week because it's THAT good 2 kielbasas 1/3 c duck sauce 1 tbsp spicy brown mustard 1 tsp soy sauce 1 tbsp honey Place a chopstick on either side of the kielbasa so your cuts don't go all the way through the bottom. Slice as thick or thin as you'd like. Bring the 2 ends together and secure with toothpicks to make a ring. Intact side will now be in the center of the ring. Whisk the remaining ingredients in a bowl and use a brush to slather the sauce all over the kielbasa, including in between slices. Bake uncovered on 450° 10 minutes. Remove from oven and brush with more sauce. I made a new cauliflower “alfredo” recipe tonight and tossed it with quinoa pasta, raw spinach, sautéed king trumpet & oyster mushrooms, then topped it with a raw & fat-free tarragon-asparagus pesto. I followed a couple recipes, but spiced them up more. Everyone loved it. 💚👍 I used our new Breville food processor for the first time tonight to make the pesto. 🍃🙌 I really love it and the blade is super sharp! How do I know? Because I sliced the inside of my thumb pretty deep with the blade 😫 so I didn’t take any pesto pics, as I was focused on getting my thumb to stop bleeding. Thank goodness for ASEA to help stop the bleeding and lessen the pain. 😅 I don’t want to admit how many times ASEA has saved me with cuts & burns in the kitchen. 😜 I love having it on hand for “first aid” more than anything else. 💚 at Wilmette, Illinois
