🌮🌮🌮My QUICK chicken tacos!! I actually thought I published this recipe years ago, but it turns out I’d done every other chicken taco filling EXCEPT this one!😇
This is the one I use the most cause it’s the fastest and it’s a handy 💥2-in-1 recipe💥: shredded chicken AND a taco sauce, so the filling is nice and juicy with loads of flavour so there’s no need to make a separate sauce 🙌🏻 Also means you can go simple on the toppings - I just use plain diced tomato, onion, lettuce, avo and cheese (ie don’t make a pico de Gallo or other type of salsa, doesn’t need it but no one will complain if you do!!!) N x
Quick Chicken Tacos
700 g / 1.2 lb chicken thighs , skinless boneless (or breast)
1.5 tbsp olive oil, 2 tbsp tomato paste, 2 tsp sugar
1 cup (250ml) chicken broth, separated (liquid stock)
HOMEMADE TACO SEASONING:
3 tbsp lime juice (sub cider vinegar, OJ, apple juice), 1 tbsp olive oil
2 garlic cloves , minced
2 tsp EACH garlic powder, onion powder, dried oregano
3 tsp EACH cumin powderAND paprika
1/2 tsp cayenne pepper (adjust spiciness to taste, can skip), 1 tsp salt, 1/2 tsp black pepper
1. Mix seasoning PLUS 2 tbsp of the chicken broth to form loose paste. Add chicken, turn to coat – no need to marinate. Heat oil in large skillet over medium high heat, cook chicken 3 min each side until golden.
2. Remove chicken, shred (don’t worry if bits still raw inside). Meanwhile, lower heat to medium, add tomato paste, sugar, remaining broth and scrape out remaining taco seasoning paste from bowl. Stir, simmer, add chicken, simmer to reduce to thin syrup.
3. Use for tacos! Tortillas or crispy taco shells, top with diced onion, tomato, avocado, lettuce, finely chopped coriander and dollop of sour cream. No need to make a separate taco sauce! .
