I just realized I’ve never introduced myself 🙊 Hi my name is Erika and I’m 27 y/o. I live in NC. I have been overweight my entire life and have tried everything from the green smoothie cleanse to Weight Watchers but eventually I got tired of tracking points and just decided to follow a low carb WOE. I then came across a article about keto and started researching it and following other people on IG who were also doing keto and that’s when I decided on 12/16/18 to give it a try. In the beginning I was so nervous about experiencing the keto flu but thankfully I had no issues and transitioned a lot better then I thought I would; I did experience headaches and fatigue but that was about it. I kept my meals simple and I still keep them simple because I’m a mom, I work full time and I live a busy life. I don’t like to spend hours in the kitchen and my meals won’t always look pretty but that’s just the reality of it 🤷🏽‍♀️ I have lost 52.6 lbs total and 23.8 lbs since I’ve been on keto. I try to workout 2-3 times a week. I normally walk on the treadmill for an hour and I haven’t started any strength training yet (I’m aware it’s best to incorporate both 🤦🏾‍♀️) but I’m debating if I want to invest in a personal trainer within the next month or so because I’ll be honest I have no idea where to start and I just need some type of guidance 😫 Anyways, I appreciate all new followers I will try to work on posting more progress pics but for now swipe to see a few ▶️ #weightlossjourney #ketofriendly #lowcarb #transformation #weightloss #lazyketo #motivation

AIP Diet Day 29 Reintroducing Egg yolk - Zucchini fries with egg yolk, Baked Saba ( Japanese Mackerel) and okra. Used 2 egg yolks to fry the zucchini with some salt, pepper and oregano. A bit of cassava/arrowroot flour would have added a crispier coating but decided to skip it after a high-carb Sunday! The Saba is marinated with lemon juice, salt, minced ginger and garlic. It's rich in flavour and omega 3 fats - doesn't need any additional oil to cook so I baked without any. Damn, his breakfast looks better than mine😍⁣ ⁣ Ingredients ⁣ ½ cup coconut flour⁣ ½ cup @lakantosweetener ⁣ 4 eggs 3 tbsp unsweetened almond milk 2 tbsp unsweetened cocoa powder 2 tbsp butter (softened) 1 tsp baking powder⁣ ¼ Himalayan salt ⁣ 4 eggs⁣ 2 tsp vanilla extract⁣ 1 tbsp red food coloring ⁣ ⁣ Glaze - Chocolate almond butter, this was leftover from the donuts made earlier.⁣ 1/4 cup @lilys_sweets_chocolate sugarfree chocolate chips ⁣⁣ 2 tbsp almond butter⁣⁣ 1 tbsp extra virgin coconut ⁣⁣ 1 tbsp @swervesweetie (confectioner's)⁣ ⁣ ⁣ Preheat the oven to 325F. Line a cupcake pan with 12 cupcake liners.⁣ ⁣ Mix the flour, sugar, baking powder, salt, and cocoa powder until combined.⁣ ⁣ In a microwave-safe bowl, melt the butter, add almond milk, vanilla extract, and eggs; mix together well. Before I start, I pinched this image from the @the_functional_nurse 💩💩💩 I didn’t know poop could be so cute! I think by now, you all know I’m a little obsessed with my bowels. But I swear to you, we get brain washed to be like this in nursing school! I can’t help it! I’m primarily a paediatric nurse, but have spent the last six months working in an Acute Aged Care Ward to refresh myself in the world of adult nursing. We see a lot of patients admitted with acute delirium, which basically means (with lack of a better phrase) that they’ve lost their marbles, their mental ability is compromised, common signs and symptoms are: memory difficulties, agitation, hallucinations, lethargy and restlessness. The most common cause of this is constipation! When treated, patient often are able to return to their baseline state. Anyyyyhoooo, the reason I’m explaining that is because, constipation in elderly is a SERIOUS problem, even with young healthy people. And since being on Keto, as I’ve posted about several times.... I’ve been constipated AF. And it’s horrible. I’m moody, I’m irritable, I’m in pain, I don’t feel like eating because I know nothing is coming out and I can visualise everything piling up inside! I see the effects first hand that it has on the older generation, so no shit (literally) that I feel like this! I was a regular, once a day, could have a coffee and know I was going to go in 30minutes kinda gal. This whole constipation thing is very foreign to me. I’ve outlined some tips to get those guts moving! ▪️WATER! 3-4litres a day is ideal. ◼️ FIBRE. Keto lifestyle has been a lot less veggies and fruit, that I was used to. I’ve been supplementing with psyllium husk. Just a tip, ensure you drink extra water when use psyllium husk! ▪️Black coffee first thing in the morning! ◼️ MCT oil. And if all else fails (as it has for me a few times). You can use an enema. I would recommend Microlax. As this aids in adding water into the stool, locally, where the stool is “stuck” in the rectum. So there’s no adverse effects, such as lazy bowel syndrome that other laxatives (coloxyl and senna) can give. ADDIT: I love that this is my 100th post 😂😂😂

Keto “Apple” Cobbler 😳 On #keto or a #lowcarbdiet and missing apple pie? This is SUCH a close flavor I almost don’t notice a difference! It uses chayote squash instead of apple, which is like a flavorless zucchini sort of. You’d have to try it to understand! It might help to soak the squash in some water with a little apple extract and lemon juice before baking. It’s delicious even without though! . . . In the video, I forgot to mention that I added a little vanilla extract to the butter - oops! Just a teaspoon there. I also added a little more almond flour than usual, so don’t be alarmed if your dry mixture looks like less! 🍏 I hope you enjoy this! What would you like to see next? . . . . .

Keto chicken Garam masala 😍 Meet your new favorite spice blend! Garam masala makes every meal sing with earthy, punchy flavors. Throw in silky coconut cream, sweet bell peppers and chicken, and you’ll want to make this keto dish over, and over, again. And then over again! Ingredients 25 oz. chicken breasts 3 tbsp butter or ghee salt 1 red bell pepper, finely diced 1¼ cups coconut cream or heavy whipping cream 1 tbsp fresh parsley, finely chopped Garam masala 1 tsp ground cumin 1 - 2 tsp coriander seed, ground 1 tsp ground cardamom (green) 1 tsp turmeric, ground 1 tsp ground ginger 1 tsp paprika powder 1 tsp chili powder 1 pinch ground nutmeg Instructions Preheat the oven to 400°F (200°C). Mix the spices for Garam masala. Cut the chicken breasts lengthwise. Place a large skillet over medium high heat and fry the chicken in butter until golden brown. Add half the garam masala mix to the pan and stir thoroughly. Season with salt, and place the chicken, including the juices, in a baking dish. Finely chop the bell pepper and add that to a small bowl along with the coconut cream and remaining garam masala mix. Pour over the chicken. Bake in oven for about 20 minutes. Garnish with parsley and serve.

Official pepperoni twists recipe! . I have been trying to recreate this recipe for a looooong time. There's a pizza shop in my town that has the best pepperoni sticks on the planet. These are my ketofied version! . Before I give the recipe for the dough I used I want to preface that I'm pretty sure any fathead dough would work! . 6 oz. Shredded Mozzarella 2 oz. Almond flour 1 oz. Lupin flour 1 egg 1tsp. baking powder. . This is what I used for my sticks since I finally got my hands on some lupin flour. You do NOT need to buy lupin flour to get these pepperoni sticks in your life haha. Use 3oz. Of almond flour :) . I'm excited about experimenting with this flour in different recipes though! . I put the entire process up in my stories and I'll make a new pepperoni sticks highlight. The key, for me, to be able to get this to work was to pre-bake my pepperoni. Fathead type dough is pretty oily already and when I added pepperoni to the mix I got a greasy mess and dough that didn't rise at all. Pre-baking your pepperoni gets a lot of the oil out! . I baked the pepperoni for about 8 minutes at 350. Watch your pepperoni closely though! Let them cool on paper towel so that even more oil soaks out: ) . I rolled my dough out into a long rectangle and filled half with the pepperoni. I folded the other half over the pepperoni filled half and rolled it out again to get the pepperoni to really stick to the dough. I rolled in both directions a few times to make sure the pepperoni had good contact. I cut into strips and then twisted the strips, pressing each each end down firmly to get them to stay twisted. I baked the pepperoni sticks on parchment for 14 minutes at 350. I started watching it at 10! . As always, my macros may be different than yours based on brand. I've seen almond flours with twice as many carbs as mine! I got 12 sticks out of this batch and the whole batch was 8 net carbs. So 2/3rds (.66) carb per stick. American Eat Co. . I got the gyro plate from @opatime.eatco which I substituted the rice for their low carb option (grilled veggies) and my bf got nacho fries from @avenues.eatco . This is super cool place! Vanilla Cinnamon Egg Loaf: Preheat oven to 350 degrees...Ingredients: 8 eggs, 8 tbsp of SOFTEN butter, 8 oz of SOFTEN cream cheese, 1 tsp of vanilla, 1 tsp of cinnamon , 4 tbsp of granulated @swervesweetie. Classic bacon 🥓and eggs 🍳 One of the all-time best keto breakfasts ever! Step up your bacon and eggs game with this mouth-watering version. Gauge your hunger meter and enjoy as many eggs as you need to feel satisfied. We’re drooling just thinking about this dish of keto deliciousness! 🤤 Ingredients 2 eggs 2½ oz. bacon, in slices cherry tomatoes (optional) fresh parsley (optional) Instructions Fry the bacon in a pan on medium high heat until crispy. Put aside on a plate. Leave the rendered fat in the pan. Use the same pan to fry the eggs. Place it over medium heat and crack your eggs into the bacon grease (you can also crack them into a measuring cup and carefully pour into the pan to avoid splattering of hot grease). Cook the eggs any way you like them. For sunny side up - leave the eggs to fry on one side and cover the pan with a lid to make sure they get cooked on top. For eggs cooked over easy - flip the eggs over after a few minutes and cook for another minute. Cut the cherry tomatoes in half and fry them at the same time. Salt and pepper to taste. Enjoy !!
