I made it through a whole week on the Whole30 program! I am more than excited to see what my results will be. My favorite thing to do recently is chop up all the veggies I have in my fridge and make a hash. You can switch it up by experimenting with different spices and herbs, but it’s such a quick and easy side dish. This morning I mixed eggplant, cabbage, brussels sprouts and peppers with cayenne pepper and adobo seasoning! AIP Diet Day 28 Dessert- Sweet potato and sago pearls sweet soup Paleoman was craving something sweet and this is a simple concoction which I made from whatever was available at home. Here's the recipe of this kitchen experiment- Wash and soak 45g sago pearls (sabudana). Need to soak for at least 2-3hours in 1/2 cup water Boil and mash 1purple sweet potato and 1 Japanese sweet potato. Roast 1/3 cup grated coconut in 1 tsp of ghee and bay leaf. Add the mashed sweet potatoes and 2 cup of coconut milk. Add 15raisins and then add soaked sago pearls and cook for 15mins...keep adding water bit by bit and stirring to avoid sticking at the bottom of the saucepan. Once it is a thick soup (like thick cake batter) add 2 tbsp honey, cinnamon powder and cardamom powder and switch off. Serve chilled. Makes 3 servings. Found this at @sainsburys last night and oh my god, I am impressed! It took a little while to cook (55min), and the box says it contains 2 servings ( #challengeaccepted 😂😂😂), but it was really delicious and had that homemade feeling to it. Ollie's Cracklin Chicken via @nomnompaleo with sauteed green beans and roasted Brussels. I've been meaning to try this recipe for SO LONG and after finally getting chicken thighs at the store, I knew I had to make this! It did make a mess, but man was it worth it. The chicken. AIP Diet Day 27 Dinner - Cauliflower roti/paratha and Spinach & Minced chicken bharta The cauliflower roti is a glutenfree eggfree nutsfree option for those times when u like to have a bread/wrap. A regular chapati is approx 120-130 calories while this one is approx 88calories each with 13.7g carbs...not v low-carb but it's ok for a change. The dough ingredients- 1/2 cauliflower boiled and mashed, 6tbsp cassava flour, 4 tbsp coconut flour, 3tbsp arrowroot flour, salt, 1tsp roasted cumin ground, 1tsp carom seeds (ajwain), 1 tsp chaat masala, 3tbsp finely chopped spring onions, 2 tbsp finely cut coriander. The dough is a bit tricky to roll out normally so I used the baking sheets to help roll out into thin discs.
