In collaboration with our friends @yolelefoods, we got a little creative and whipped up these Fonio (a delicious West African grain) and Kidney Bean Everyday Dal Crackers! (Make sure there are no lumps.) * Heat oil in a deep pan on medium heat. * Once the oil is hot, dip the folded bread in the batter. * Make sure you cover the entire bread in batter. * Place gently in the oil and cook it till its gets golden on one side. * Turn and cook on the other side. * When its ready take the Pakoda out and let it cool on a paper towel. * Cut it diagonally to see the wonderful colors of the pakoda. * Garnish with Chat masala and Serve hot.

Hailing from West Bengal, shingaras are an integral part of Bengali cuisine. A very popular variation Fulkopir shingara (shingara filled with cauliflower mixture) is a common snack eaten during the tea time. #indiansnacks #indianstreetfood #indianfoodbloggers #indianappetizer #indianrecipes Ingredients: Flour - 1 cup Salt - 1/2 tsp Oil - 3 tbsp For the stuffing: Potatoes - 100g, cut into small 1/2 inch cubes Cauliflower - 200g, cut into small 1 inch florets Oil - 2 tbsp Salt - to taste Roasted cumin seeds - 1 tbsp Roasted red chillies - 4 whole Method: -> Prepare the filling: * Combine the roasted cumin seeds and the red chillies, grind to a fine powder. * Boil the potatoes and cauliflower in 2 cups of water for 5 minutes. Drain the water and keep it aside. * In a kadhai, heat 2 tbsp oil, fry the boiled potatoes and cauliflower together on medium heat until they turn soft, stirring constantly to avoid charring. * Turn off the heat, add the fried mixture from step 1 above to the vegetables, mix well and keep aside. -> Prepare the shell: * In a bowl, take the flour and add oil and salt. Knead thoroughly for 5-7 minutes. * Now take 1/4 cup water at hand, and to the oil-kneaded flour add water by the teaspoon and continue kneading for 3-5 minutes more until the flour is moist, and comes together as a tight ball. * Make equal sized balls from the kneaded dough, roll between your palms to get a circular shape, and cover with a moist cloth. * Using a rolling pin on a smooth hard surface, flatten out the dough balls into oval shape. * Bisect each oval shaped dough cake across the width to get two triangular pieces. * Take a single piece of the dough and fold it into a cone, cementing the folds together with a few drops of water each time you fold. * Into the cone, stuff the filling to 3/4 volume. Seal the top of the cone by closing the top flap onto the body using some water as glue, using your fingers, "staple" the top flap tightly to the body. * In a deep pan, heat the oil.Place the shingara cones into the oil, and fry on low heat 3-5 minutes until golden brown.Drain and serve hot with ketchup.

Wash chana dal and soak it in 3 cups of water for 2-4 hours. 2. Drain all the water from soaked lentil and keep it aside until needed. 3. Break the dried red chillies into 2-3 pieces and place them in the bottom of food processor along with curry leaves. Next add the chana dal, cumin seeds, hing and salt to taste and press the pulse button few ties to get a rough paste without adding any water. 4. Remove from the mixer grinder into a mixing bowl and add finely chopped one medium sized onion to the ground dal mixture. 5. Heat oil for deep frying in a pan on medium flame. While the oil is getting heated, shape the vadas for deep frying. 6. Pinch small lime sized balls and roll them into round balls. Flatten it gently by pressing them in between palms or fingers to make about 2-2½ inch round discs. 7. Drop these discs into hot oil and fry them in batches of 4-6 on medium flame until they turn golden brown in colour, about 2-3 mins. 8. Remove from the oil with slotted spoon and place them in a plate lined with kitchen towel to remove excess oil.

Place them in sieve, drain excess water and keep aside for 1½ hours. This process will make them non-sticky. * Peel and grate boiled potatoes. * Add drained sabudana, coarsely crushed peanuts, green chilli, ginger, cumin seeds, garam masala powder, lemon juice, sugar and salt. Mix all ingredients well and make a soft dough like mixture. * Divide the dough into equal lemon size portions and shape them into patties. * Heat oil in a pan over medium heat. When the oil is hot, slowly slide 3-4 patties in it. When top surface turns light brown, flip them and deep fry until golden brown on both sides. Drain prepared sago vada and transfer them to a plate. * Serve the crispy sabudana vadas with tamarind chutney or spicy green chutney.

Kachori/Kachauri/Kachodi/Katchuri is a delicious, spicy, fried stuffed pastry which can be made with a variety of fillings. Originating in Rajasthan, these flaky pastries are great as an appetizer or addictive tea time snack. #indiansnacks #kachori #indianfood #indianfoodbloggers Ingredients: For the Filling: 1-2 tbsp oil 2 tbsp course chickpea flour (besan) 3 cinnamon sticks 3 cloves 2 tbsp fennel seeds 1 tbsp sesame seeds 2 tsp red chilli powder 2 tsp dry mango powder salt, to taste oil for deep frying For the dough: 2 1/2 cup maida/all purpose flour 2 tbsp ghee/clarified butter 1 tsp. salt 1 tsp. ajwain/carrom seeds Instructions * To prepare the filling, heat 1 tablespoon of oil in a frying pan over low heat. Cook the chickpea flour, stirring constantly until the color changes to a light brown. Remove and set aside to cool. * Mix together the remainder of the dry ingredients, add a little oil in a small pan over low heat, add the ingredients and roast. Once cool, grind the ingredients in a spice grinder and then mix in with the chickpea flour. * To make the pastry, mix the flour, ghee,carrom seeds, salt and enough water to make a firm dough. Knead the dough well. Cover and keep it aside for 20-30 minutes. * Divide the dough into equal parts. Roll and press each part into a dough ball. Roll with a rolling pin to form a 3-4 inch diameter disc. Place 1 tablespoon of the dry filling onto the dough and pull all the edges together. Press them well to fuse edges. Once again roll stuffed kachori gently to form a 3 to 4 inch circle. * Heat oil in a deep frying pan. Gently drop one kachori in medium hot oil. Let kachori float and gently press if needed for it to puff up. Flip and fry on other side. Fry till both sides turn golden brown and crisp. * Remove on a paper towel to blot excess oil. Allow to cool. * Serve fresh as is or with sweet date & tamarind chutney and mint cilantro chutney. NOTE: * The use of carrom seeds is optional, but it prevents acidity,acid reflux and aids in digestion too.

This variation of the popular crisy snack is made from beaten or flattened rice (poha) and is relished as a starter or evenings snack served at tea time. #indiansnacks #indianstreetfood #kachori #indianfoodbloggers Ingredients: Pressed rice (poha) washed and soaked - ½ cup Bread slices- 6 Potato boiled, peeled and grated - 1½ cup Salt to taste Black pepper powder - 1 tsp Lemon juice - 1 tsp Oil for deep frying For the Stuffing: Roasted peanuts - 1 cup Green chillies finely chopped 3-4 Red chilli powder 1 tsp Dried mango powder 1 tsp Salt to taste Lemon juice 1 tsp Method:- * Trim edges of the bread, break them in very small pieces and put into a bowl. * Add squeezed poha,salt,pepper powder and potato and blend well. Add lemon squeeze and kneed it like dough. * For the stuffing, add peanuts in another dish, include green chillies,red chilli powder,dried mango powder,lemon juice and salt and blend well. Add lemon juice and blend well. * Separate the mixture into equivalent balls. Shape every ball into a katori, put some stuffing in it, accumulate the edges and move into a ball and seal neatly.Dampen your palms and smooth the kachoris between them. * Heat the oil in a kadai at medium heat and deep fry the kachoris till they become brown and crispy. * Remove the fried kachoris and place them in paper towel to drain excess oil. * Serve delicious hot Poha Kachoris with sauce or chutney. TITBIT: Kachori is supposed to have originated in Uttar Pradesh or Rajasthan. It is also eaten in place that have many Indian descendants such as Trinidad and Tobago, Guyana, and Suriname.

Heat enough oil for deep frying. * In a bowl mix besan,rice flour,cooking soda,ajwain,chat masala,chilli powder and salt. * Add water gradually to make batter of thick cream consistency (batter should coat the back of spoon). * Dip each pakoda in batter, coat it well and gently slide in hot oil on medium flame. * Fry until golden brown and crisp. Take them out on absorbent towel. * Serve them hot with ketchup,red or green chutney. NOTE: * Bread pakora can be made with lots of variations - sandwiching green chutney, mashed potato stuffing,paneer stuffing or vegetable stuffing.

A kati roll is a dish originating from the streets of Kolkata.The paneer is coated in a spicy rub, topped with a delicious mint sauce,lime pickled red onions and green pepper.The addition of raw salad and green chutney just make this paneer kathi roll lip smacking good. #indianstreetfood #katiroll #paneerrecipes #indiansnacks #indianfoodbloggers Ingredients for marination 1 block paneer chopped into long strips 6 tbsps hung/thick curd or greek yogurt 1/2 tsp garam masala powder 1/2 tsp amchur (dry mango powder) 1 tsp kashmiri red chilli powder 1 tsp tomato puree 1/2 inch ginger 4 cloves garlic 1/2 tsp turmeric powder 1/2 tsp cumin powder 1/2 tsp coriander powder salt,to taste for the dough 1 cup white or whole wheat flour 1/4 tsp salt 1/2 tsp oil 1/2 cup water for Mint Chutney 1 cup coriander leaves 1 green chilli 2 cloves garlic,1 inch ginger-chopped 1/2 tsp roasted cumin powder Juice of 1/4 lemon Handful Mint leaves 2 tbsps hung/thick curd for Pickled salad 2 red onions,sliced 1 green pepper cut into strips Juice of 2 lime 1/2 tsp salt Method: *In a mixing bowl, add all ingredients under marination and mix well. Add paneer pieces and gently mix to coat the cubes with the marination. *To make the dough for the kathi roll: In a mixing bowl add the whole wheat flour, oil and salt. Add the water in parts and begin to knead into a smooth soft dough. Divide the dough into medium sized balls and roll into the shape of a circle. Partially fry the bread in oil. Remove the semi-cooked parathas and keep it aside in a warm casserole until needed. *In a large non stick frying pan over a medium heat, add 1 tbsp of oil.Once hot, add the marinated paneer pieces. Toss quickly. Remove from flame. *Mint Chutney:Blitz all the ingredients for the mint chutney in a food processor and set aside. *Pickled salad:In a small bowl combine all the ingredients for the salad and set aside. *Assembling the kathi roll: Take semi-cooked paratha and fry it in oil. Spread some green chutney. Lay the paneer in a thin strip on the center of the paratha. Top with the salad. Roll the whole thing up into a wrap,with half portion of the roll in butter paper. * Serve paneer kathi roll immediately.

I bought an air fryer as one of the biggest concerns about fried foods has to do with the way certain foods produce a toxic compound called acrylamide, a probable carcinogen, when heated to temperatures above 250 degrees F So the first thing I made is onion Bhaji or pakora, And what’s the difference between a bhaji and a pakora? Well, there isn’t a lot in it really, the ingredients are the same - as is the method. The main difference is that Bhaji is a Urdu word and pakora is a Punjabi word. Made with besan (chickpea flour) so it’s gluten free and onion, potatoes and seasoning. I had a sudden epiphany! Of all the food I’ve posted, I can’t believe I’ve never posted this. #purnimaofmombasa in #leicester do the best Indian vegetarian snacks. It’s based in the centre of highfields amongst a hubbub of Indian material shops and terraced housing. Some days you’ll see queues out the door . This #petis ( I think that’s what it’s called) is filled with this coconut based mush which is just delicious. If you buy the samosas make sure you ask for the sauce to go with it then drown it in a bowl and enjoy. This whole box cost just under £3 which time and time again I’ll ask him to repeat the price because I can’t believe it’s so cheap.
