Continuing with the #EAT pillar:
I don't always do a traditional jamaican breakfast; like this morning, there was enough left overs in the fridge and some overripe plantains that prompted me to make my yummy gf/df "pizza". All clean ingredients: a homemade cassava and ripe plantain crust; topped with onions, garlic, bell pepers, bacon, pineapples, tomatoes some left over #heroinechicken breast pieces from @nocrumbsleft on a homemade tomato-paste base.
I make it whenever I'm in the mood for something different and there are lots of left overs. I pair a slice with a sunny side up egg and avocado for breakfast 😋😋 NB: Bacon (sugar-free, nitrate-free, locally manufactured)and pineapple (cursed insulin-resistance) are rare treats for me, but I was in the mood today.
Crust (Swipe➡ for piks): 1 cup cassava flour, 2 ripe plantains, 1 tbsp baking powder, 1/4 tsp salt. Process everything in food processor. Rest for 1/2 hr. Roll and shape between parchment paper (the dough may be hard to manipulate without the parchment). Bake with toppings of choice at 350 degrees until done.
