The answer is Chilled Pork Jelly because of customers will often ask us the pronunciation of “肴” and what is “xiaoruo”. Once upon a time, there was a couple in Zhenjiang. The husband, when marinating pork knuckles, mistakenly took nitrates, which were used for making firecrackers, as table salt and added them to the pork knuckles, and yet the meat turned out pink in color and fresh in look. Since “肴” and “硝” are homophones in the Zhenjiang dialect and “硝肉” didn’t sound good, the dish is named “肴肉” instead! Although we do not use nitrates or nitrites to marinate the pork terrine, Crystal Jade’s Chilled Pork Jelly still remains aromatic, delectable, savory and tender!
