Due to travel this week, we missed our #TuesdayTwist nutritious recipe, so we are catching up today.
Fresh vegetables are good for your health and your weight, but don’t forget the protein. Pictured here, we have fresh tomatoes, lettuce, cucumber, and lima beans, with cheddar and mozzarella cheese and a boiled egg. We topped it with homemade dressing made from vinegar, a small amount of oil, and spices. See full dressing recipe below.
Equal parts oil and vinegar. We used olive oil and balsamic vinegar, but you can also use common vinegar and your favorite oil. Add your favorite spices. We used oregano, red pepper flakes, and ginger. And finally, we used a small amount of honey to add a hint of sweetness.
Tomatoes are full of vitamin C and potassium. Lima beans also have potassium, as well as protein. The boiled egg offers healthy protein, especially in the egg white. And the cheese offers another source of protein, plus calcium.
