Balance is so important whether in life or when creating meals. Many of us fall into patterns of going to extremes in either category losing sight of whats important. In order to nourish ourselves properly extreme/fad diets fall short eliminating important food groups that provide us with vital macro/micronutrients. This plate was created with balance in mind. No matter what diet you are following veggies should make up the bulk of it (1/2 your plate) with smaller portions of carbs/proteins. Veggie pot pie made with homemade whole wheat biscuits. In a large skillet saute chopped onion in water. Once translucent, add unsweetened almond milk, thyme, sage, salt, and pepper. Bring to simmer and slowly add in whole wheat flour to desired consistency while stirring constantly to avoid lumps. Add 1 bag frozen mixed vegetables. Cover and cook for about 10 minutes. Biscuits: 2 cups whole wheat flour 1/2 tsp baking soda 3/4 tsp salt 1 cup unsweetened almond milk 2 tsp apple cider vinegar Mix ingredients together and form biscuits on baking sheet. Bake at 350 for about 10 minutes.
