Taco-shaped Pancakes by @laurafruitfairy 🥞 Recipe: Ingredients:⠀ 1 cup flour (125 g)⠀ 2 tablespoons organic sugar⠀ 1 tablespoon baking powder⠀ ½ teaspoon salt⠀ 1 cup non-dairy milk (240 mL)⠀ 1 tablespoon apple cider vinegar⠀ 1 teaspoon vanilla⠀ fruits to serve⠀ ⠀ Instructions:⠀ In a medium bowl, add the flour, sugar, baking powder, and salt, and stir to combine.⠀ In a medium bowl or liquid measuring cup, add almond milk, apple cider vinegar, and vanilla, and stir to combine⠀ Pour the liquid mixture into the dry mixture and whisk until smooth.⠀ Let batter rest for 5 minutes.⠀ Pour about ½ cup (65 grams) of batter onto a nonstick pan or griddle over medium heat.⠀ When the top begins to bubble, flip the pancake and cook until golden.⠀ Serve warm with your favorite fruits and toppings. Homemade Corn & Mushroom Empanadas by @thevegansara 💛 Recipe: ⠀ Ingredients Dough:⠀ ½ cup raw cashews⠀ 1 cup potato flour⠀ ½ cup whole-wheat flour⠀ ½ teaspoon sea salt⠀ Unbleached all-purpose (or whole-wheat) flour for dusting⠀ ⠀ Filling:⠀ ½ pound white mushrooms, trimmed and roughly chopped (3 cups)⠀ 1 small yellow onion, cut into ¼-inch dice⠀ 1 jalapeño pepper, seeded and finely chopped⠀ 2 medium garlic cloves, minced⠀ 3 cups fresh or frozen corn kernels⠀ 2 tablespoons white miso paste⠀ 2 teaspoons ground cumin⠀ ¼ teaspoon cayenne pepper⠀ ¼ teaspoon freshly ground black or white pepper⠀ 3 cups chopped fresh spinach⠀ Sea salt⠀ 1 cup finely chopped fresh cilantro⠀ 1 tablespoon flaxseed meal (brown or golden)⠀ ⠀ Instructions:⠀ To make dough, soak cashews in ½ cup hot water for 20 minutes. Transfer cashews and soaking liquid to a blender or food processor; blend until creamy.⠀ In a food processor fitted with a dough blade or a stand mixer fitted with a dough hook, combine cashew “cream”, potato flour, whole-wheat flour, salt, and 1½ cups water; mix to a smooth dough, adding water if needed to make the dough come together.⠀ Using a spatula, scoop the dough into a large bowl; let it stand for 10 to 15 minutes.⠀ ⠀ To make filling, in a large sauté pan, combine mushrooms, onion, jalapeño, and garlic; sauté over medium heat for 10 to 15 minutes, stirring frequently, until the onion are translucent and the water from the mushrooms has cooked off. Add corn, miso, cumin, cayenne, and pepper; cook 5 minutes more.⠀ Add spinach and cook for 2 minutes, or until spinach is wilted. Add salt to taste. Thick Sweet Potato Tahini Spread by @flora_and_vino 💜 Recipe⠀ Sweet Potato Spread⠀ 1 cup cooked and roughly mashed purple sweet potatoes* (or any color sweet potato of choice)⠀ 2 TBS runny tahini⠀ ½ lemon, squeezed⠀ 1 garlic cloves, minced (or sub ⅛ tsp garlic powder)⠀ 1 tsp ground cumin⠀ Himalayan sea salt and black pepper to taste⠀ filtered water or unsweetened almond milk, as needed⠀ ⠀ TOAST PAIRING:⠀ ~1/4 cup Sweet Potato Spread⠀ Toasted GF bread⠀ Optional for serving: pine nuts, chopped parsley, hemp hearts, and ground cumin⠀ ⠀ INSTRUCTIONS⠀ To cook the sweet potatoes, scrub and peel them, then cut the flesh into large cubes. Fill a pan with an inch of water and bring to a boil. Add the sweet potato cubes to a steamer basket and steam in the pan for 7-10 minutes until the flesh is very tender when pierced with a fork. Drain, place the cooked sweet potato in a bowl and mash with a fork or potato masher.⠀ Add the mashed purple sweet potato, tahini, lemon juice, garlic, and cumin to a high speed blender or food processor and pulse until well-combined and creamy, scraping down the sides as needed to recombine.⠀ Season with Himalayan sea salt and black pepper and taste to mixture. Add more lemon for brightness, cumin for spice, and tahini for creaminess. If the mixture is too thick, add filtered water or unsweetened almond milk in 1 TBS increments to reach desired consistency.⠀ To assemble your toast, spread ~1/4 cup Chickpea-Free Purple Sweet Potato Hummus onto toasted bread. Estás en concreto me quedaron super potentes y saciantes, hasta por la tarde no tuve hambre 😳, bien es cierto que me comí 8 🤭🤦🏻‍♀️. Os dejo la receta por si os animáis 👩🏼‍🍳: 🥞2/3 harina de trigo serraceno 🥞5 cdas proteína vegana (yo utilicé @naturalath ) 🥞1 cucharada de cacao en polvo 🥞1 cda semillas de linaza molidas 🥞1 cda de levadura 🥞1 cdta canela en polvo 🥞1 taza de leche vegetal 🥞1 plátano blandito 🥞1 pizca de sal Mezclamos todos los ingredientes secos y añadimos los líquidos poco a poco. Cuando tengamos todo bien integrado, ponemos en una sartén un poquito de aceite de coco y cuando esté caliente añadimos la masa de las tortitas dandoles forma, las cocinamos por los dos lados. The fight against single-use plastic has been gathering steam over the past months, but the Caribbean nation of Dominica has taken the crusade to another level. The island nation has announced its aim to completely ban common plastics and single-use Styrofoam cups and food containers -- effective January 2019. In the past month, New Zealand and Australia followed suit with plans to phase out plastic bags -- although in Australia, controversy hit when major grocery store Coles backed out of the ban. Big-name companies including Starbucks and Disney have also announced new plans to get rid of plastic straws. But Dominica's aim is much greater. The country has made it clear it wants to be the world's first climate-resilient nation. The full list of items that will be banned in Dominica has yet to be finalized, but the government says it will include plastic straws, plastic plates, plastic forks, plastic knives, Styrofoam cups and Styrofoam containers. Pizza Express have some new vegan stuff!!! @jeanettematthews and I treated ourselves to a lil Friday night dinner, and was not disappointed. Rosemary and garlic flat bread with houmous, which was divine. Vegan mezze, which had smoked chilli chargrilled aubergine, roquito peppers, garlic oil, etc. And then the classic vegan desert of carrot cake. Honestly I'm not mad about the carrot cake being the only vegan cake because it's so good. Our waitress even gave me a lil extra bit to take home. Wish I had also taken a pic of the snack I was dining with. Le weekend de Pâques approche rapidement. Saviez-vous que la consommation d’oeufs augmentent drastiquement pendant cette période de l’année. Non seulement pour les manger mais aussi pour les décorer et préparer des activités. 🥚 Vous vous demandez peut-être qu’est-ce que l’oeuf a à voir avec Pâques? On sait très bien que c’est un symbole important mais on sait pas trop pourquoi. Parce qu’on a grandi en apprenant ça et c’est ça. Right? 😉 La raison derrière est que l’oeuf lui-même est un symbole de la vie. La vie, la reproduction, la naissance, la continuité, l’espoir… 🖤 Ce qu’on a perdu de cette réalité est la vie des mamans poules. La façon dont on exploite leur système reproducteur. 🐔 Il est tout à fait possible de continuer à utiliser le symbole de l’oeuf sans causer de souffrance ou de nuisance à un autre individu que nous. Si je me souviens bien de ce que j’adorais à Pâques et ce que je présume que les enfants aiment encore aujourd’hui c’est d’écrire au lapin de Pâques, de colorier, de décorer, de faire un chasse au trésor. 🙌🏼 On peut encore créer ce genre d’évènement qui nous rassemble et ce niveau d’excitation chez nous enfants. 🥰 On peut faire des oeufs à partir de papier mâché. On peut acheter des oeufs en plastique que l’on réutilise chaque année (pour limiter les déchets). On peut créer une chasse et que le trésor à la fin soit une fleur ou une graine de légumes ou d’arbres que l’on peut planter. C’est une super bonne façon de leur enseigner la compassion, la promesse de voir quelque chose grandir si on en prend soin et qu’on lui donne de l’amour. 🌿 C’est si simple et ça fait toute la différence. So last week, Eric and I went to Celebrate Vegan Launch Party.. and this is the story’s summary: 1st Picture: Omg yasss!!! Happy as fuck to try a vegan taco (appetizer). 2nd Picture: I’m happy as fuck (times 10) because I ended up getting like 4 tacos lol. My husband’s face emulates “can we get more than we are supposed to take?”. 3rd Picture: My husband thought he looked like shit on some pictures, so then I downloaded an app to see if I could “fix” the issue so he wouldn’t give me 💩 for publishing pictures he didn’t like. Iscas de cogumelo, batatinhas noisette e molho tártaro (e cervejinha, claaaro). Veganos saudosistas poderiam confundir a isca de cogumelo com isca de peixe 😏 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ficou maravilhoso! Meu marido e eu achamos que a porção poderia ter sido maior, me arrependi de não ter dobrado a receita. Segue aí: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ As iscas: processei 200g de shimeji temperado com sal, pimenta e limão, depois misturei cerca de 3 colheres de sopa de farinha de trigo e empanei com farinha panko (tem receita caseira no site (https://www.graocombico.com/2018/06/farinha-caseira-de-pao-tipo-panko.html). Eu empanei com farinha de trigo pra experimentar, mas a farinha panko é outro nível. A simple, and filling breakfast idea... For the smoothie I used plantain water. My mom boiled plantains and she saved the water for me. With this water I added one banana, and half an apple. Blended and voila! For breakfast I cut a banana in half. For the toppings I added: So Delicious peach yogurt, granola, and sliced strawberries 🍓 Yum! It’s so delicious and healthy. SAFFRON RICE 🍲😋 Here’s another great rice recipe when plain basmati rice just won’t do. The saffon adds such a lovely, bright golden color to the rice, in contrast with the crimson saffron threads dispersed throughout. Saffron rice has a delicate, floral aroma that you can’t duplicate with any other spice⁣ Recipe below 📝👇🏻⁣ ⁣ INGREDIENTS:⁣ 🔸2 cups basmati rice soaked for 15 minutes and drained for 15.⁣ 🔸2 cups peas ⁣ 🔸1.5 cups thick coconut milk⁣ 🔸1 tablespoon melted almond butter ⁣ 🔸4 cloves⁣ 🔸4 cardamom pods; husked⁣ 🔸2 one inch cinnamon pieces⁣ 🔸1 bay leaf⁣ 🔸1 teaspoon ginger garlic paste.⁣ 🔸1 stalk lemon grass; gently crushed⁣ 🔸2 generous pinches of saffron; soaked in a tablespoon of warm water for 20 minutes⁣ 🔸Salt to taste⁣ 🔸Few Almonds and pistachios ⁣ ⁣ INSTRUCTIONS:⁣ Saffron Rice Recipe Using Rice Cooker⁣ 1. Heat almond butter in a small frying pan and fry pistachios and raisins. Drain and keep them aside until ready to use.⁣ 2. Into the same hot almond butter, add the cloves, cardamom pods, cinnamon stick and bay leaf and fry for a few seconds till aromatic.⁣ 3. Add the washed and drained rice, peas, lemon grass and ginger garlic paste and saute for a couple of minutes.⁣ 4. Transfer the above mix to the rice cooker and add the coconut milk, 2.5 cups water, soaked saffron (along with the water) and salt.⁣ 5. Start the rice cooker in the white rice mode.⁣ 6. Once the rice cooked, fluff the rice gently with a fork. Transfer to a serving bowl. ⁣ 7. Top will almonds and pistachios. Easy to make, vegan, refined sugar-free; a truly a feel-good dessert! Enjoy straightaway or chill until serving. 🍹😋⁣ ⁣ Recipe below 📝👇🏻⁣ ⁣ Ingredients ⁣ 🔺200ml coconut milk⁣ 🔺50ml almond milk⁣ 🔺4 tablespoons chia seeds⁣ 🔺2 tablespoons maple syrup, divided⁣ 🔺2 small mangoes - peeled and cubed⁣ ⁣ INSTRUCTIONS :⁣ 1. It’s a fermented low carb-high protein food, packed with fiber and natural probiotics. And what’s more , it’s VEGAN and GLUTEN FREE as well 😋🍛⁣⁣⁣⁣ ⁣⁣ Dosa is one such food item which is extremely appetizing and relatively light, made from rice , lentils and other spices , adding low calories in your body. It's a healthy choice to overcome obesity.⁣ ⁣⁣ A properly made crisp and savory Indian dosa is fairly simple to make, with this caveat: the batter must be fermented overnight for the correct texture and requisite sour flavor. This Chia Pudding looks like from outer space and your kids will love it!! 💙⁣ Recipe below 📝👇🏻⁣ ⁣ INGREDIENTS :⁣ 🔹1 cup water⁣ 🔹3 bags butterfly pea flower tea⁣ 🔹2.5 tbsp white chia seeds⁣ 🔹1/2 cup soy yogurt⁣ 🔹2 tbsp honey⁣ 🔹4 tbsp blueberries fresh or defrosted⁣ ⁣ INSTRUCTIONS :⁣ 1. Bring water to the boil and add 1 bags Butterfly Pea Flower Tea. Let brew for 10 minutes. Then remove tea bag, squeezing it slightly. Add 1 tbsp honey and allow to cool.⁣ 2. Mix chia seeds with the blue tea and mix vigourously for 60 seconds. Allow to rest for at least two hour, stirring once in a while.⁣ 3. In the meanwhile, mix soy jogurt with the content of the the second tea bag (just rip it open). Add 1 tbsp honey.⁣ 4. Mix blue chia pudding with 4 tbsp blue yogurt. ⁣ 5. Layer blue chia pudding and the remaining blue yogurt in a jar, ⁣ 6. Top with blueberries.⁣ 7. Pressure cook 1 cup of masoor dal with 4 cups of water for 20 mins.⁣⁣⁣⁣ 2. Heat oil in a non-stick pan and saute onions till they turn golden brown.⁣⁣⁣⁣ 3. Add crushed garlic , ginger, chopped tomatoes ,red chilli powder , turmeric and coriander powder and fry without burning the spices.⁣⁣⁣⁣ 4. Now add in cooked daal and mix well ⁣⁣⁣⁣ 5. Add salt to taste.⁣⁣⁣⁣ 6. Adjust the consistency by adding required water.⁣⁣⁣⁣ 7. Asking yourself how I can be better than I was yesterday is far more productive than comparing yourself to others - I know because I’m human and I've been in both places. This is true for any area of your life- personal or professional.⁣ ⁣ Benchmarking yourself against others means you’re setting yourself up for 1 of 2 outcomes:⁣ ⁣ 1.Defeat - if you cannot achieve the same level of success.⁣ OR⁣ 2.Unfulfillment / Emptiness - when you do achieve the same level of success and wonder “is this it?” and “where to next ?”⁣ ⁣ The goal is never to be better than others, but to be better than YOU were yesterday. This can be applied to growing YOUR way.⁣ ⁣ Happiness is found when you stop comparing yourself to other people. Self confidence is not measured by your own capabilities versus that of others ,but by your own NEEDS.⁣ ⁣ So be yourself and dont compare your life to others. There is no comparison between the sun and the moon. Preheat the oven to 350°F (180°C).⁣⁣ 2. Sift the flour into a mixing bowl and add the sugar, baking soda and salt. Then add the soy milk, vegetable oil, vinegar, vanilla, lemon extract and lemon zest. Whisk briefly with a hand whisk to combine properly and remove any lumps.⁣⁣ 3. Line a cupcake tray with cupcake liners and divide the batter between them.⁣⁣ 4. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.⁣⁣ 5. When baked transfer to a wire cooling rack and allow to cool completely before frosting.⁣⁣ 7. Prepare your frosting by adding the powdered sugar, vegan butter, lemon juice and lemon essence to an electric mixing bowl. Start at slow speed and gradually increase speed until smooth and thick. If it’s too thick, add a little more lemon juice until you reach the right consistency.⁣⁣ 8. Brr! It has been raining all day and my ceiling is leaking again, so that calls for some healthy comfort food! My folks used to make a similar version for me when I was younger. People say that smells can evoke amazing memories, but for me, it is food. How about you? ⠀ .⠀ This Thai inspired noodle bowl, uses up veggies in the salad drawer including sprouts (they were definitely not in mum and dad's recipe!), limes and samphire. I have then topped it with fluffy scrambled miso tofu with a hint of turmeric and chilli and some toasted fragrant cashew nuts. Yum!⠀ .⠀ Why eat ginger?
