Lots of nutritional changes happening in my life lately. Most prominent - incorporating clean, humanely raised animal products (meat) back into my diet after 10 years as a vegetarian 😳! It was a hard transition at first, but once my body started feeling better (which was almost instantaneous), I decided to keep it up. That said, veggies are still a major part of my diet, and I’m working on a non-restrictive take on food overall. lunchin on this lazy sunday. tried making something new on friday & made some squash fritters. they turned out pretty good so I thought I’d share! hope everyone’s having a relaxing sunday🤗 • baked chicken thigh seasoned with Italian seasoning, salt & pepper + roasted carrots + squash fritters ( 1 cup spaghetti squash + 1 whisked egg + 2 tbs whole wheat flour + salt, pepper & garlic) warm grass fed butter on a pan then scoop the squash mixture in & flatten into patty form + cook for about 3-5 minutes on each side until crispy

I prepped breakfast this morning for the week. I decided on Egg Casserole. Kinda. Haha . * I started with dicing the pepper and sauteeing them on my @ninjafoods Ninja Foodi. While that was going I mixed together 5 eggs and 2C egg whites in a separate bowl. I added the Turkey sausage as well and then seasoned with salt and pepper. I was going to add the ham but it just didn't sound so great with everything else. . * I then added the egg mixture to the peppers and changed the setting on my Foodi to "Aircrisp". I aircrisped everything at 350 for about 15 minutes. It needed time to warm up initially since I was just sauteeing on it. . * I pulled the pot out from the device and then topped with cheese. After it cooled I sliced it into 5 servings. I wrapped in plastic wrap to grab and go. The salsa is going to come with me so that I can top the serving with it as I warm it up. A very quick and easy breakfast. My #mealprepsunday is now complete! 🙌😃💃🏻 I precut veggies and pre- washed fruit, and made some Baked Egg Cups for breakfast. For lunches I made 2 salmon 🐟Cobb salads🥗, and 3 chicken & veggie dishes with cauliflower rice. ...... Yes, this does take time. ⏰From start to finish this took about 3 hours. However I’ll make up all that time during the week by having healthy breakfasts and lunches pre-made and ready to go. ..... Sunday Runday! Snow and ice covered roads, a brisk NE wind and periodic snow showers....but that didn't keep me from my long run this morning. It was a little slower paced, but given the running conditions, I'm happy with it. But what makes me even happier is how my body continues to push through, and respond positively even when the conditions might not be ideal. That is where I thank the nutrition I fuel my body with every day! A couple days of nutritionally supported intermittent fasting this week to shed my body of the toxins we absorb every day combined with a high protein, vitamin and mineral dense balanced diet the rest of the time fuels my body with what it needs to perform at its best! Not everyone is looking at running the number of miles I run......I have my eye and heart set on a marathon this year......but everyone has some kind of health and/or wellness goal. Fueling our bodies with the right nutrition is seriously the first step in helping us reach those goals....no matter what they are! I have been fueling my body with a nutritional system for almost 2 years now and at age 44, I feel better now than I did 5, 10 or even 20 years ago! I was really sceptical when I started @symproveyourlife 🙈 unfortunately it can be really hard to trust people’s opinions on products from social media. I’m on my 6th bottle/week of a 12 week course of @symproveyourlife and hand on my heart I’m shocked how few tummy flare ups I’ve had since Christmas.... keeping in mind I’m a stress head n have had 6 million changes going on. I have been having stuff I know would normally cause a flare up & my panic attacks are few and far between in the grand scheme of things. So all I can say is I’m seriously pleasantly surprised. A 12 week course costs around €2.40 a day (less than a cup of coffee) and for me is saving serious discomfort, embarrassment of looking 🤰🏻 & overall I’m in better form cause I’m not frustrated with my tummy... no product is a wonder product you have to work with your body but I really hope this could be a big part of the answer I’ve been looking for! @burrell_pr #symprove #guthealth #goodbacteria

- Chia Pudding: - This is one of my favorite breakfast as it is super easy and you can prepare it the night before😴 Ingredients for 1 person: 🔸 30 grams Chia seeds 🔸 170 ml milk of your choice 🔸 Fruits as topping - Instruction: 1. Along my plant based journey I have been getting more interested in nutrition. Looking at the fuel I was putting into my body and how I could optimize that fuel to produce better results. Finding nutritionally rich foods that will help me in training, help me recover and help me perform. There are many ways to eat and train but you exert and waste a lot of energy when you do things incorrectly, when you could do it more directly and efficiently. That is how I see a plant based lifestyle. Such an efficient way to get nutrients and calories from foods that actually promote health and longevity as opposed to foods that cause health issues in the long run. Not only am I getting fit and seeing results with a lot less effort, I am recovering quicker and getting healthy from the inside out💪🏼 With so many crash/fad diets out that use restriction and are deprived of important nutrients...you may look good on the outside, but inside, the damage it does to the body, slowly causing health issues that will manifest later in life. With a plant based lifestyle it’s sustainable, not only do you get short term results but you also get long term results! When you reach your 50’s, 60’s, 70’s and beyond you don’t have to suffer from health issues. If we choose well balanced plant based fuel for our bodies, focusing on prevention, we won’t have to have that surgery, we won’t have to take prescription drugs, we won’t have to take drastic invasive measures and treatments later on with our health. But people have a hard time realizing this! Long term, it’s difficult to see years into the future, it’s easier to look at the now. Fig, honey, rosemary & thyme . . . I can’t help but sing-song that little lyrical Simon & Garfunkel phrase “Parsley, sage rosemary & thyme”. Just like a good dose of folk music there’s something really wholesome about mixing something savoury in with something sweet. I came upon the concept of savoury oats in @anniskk book “Porridge” and I’ve begun experimenting with fresh herbs and spices in my morning bowl. Oats really do take on any flavour that you can think of and this bowl was a winning example. Sticky seared fig, honey and almond is a classic and after our dessert yakitori of Gorgonzola and honey @goryansan_sydney the other night I thought I’d mix the two food concepts. . . I’d actually left my fresh thyme at work the other morning so had to make do with some dried thyme as mine from the garden has turned bitter. I soaked my oats in almond milk with dried thyme, then once they were bubbling away on the stovetop added freshly chopped rosemary. Once this lil fragrant oat dose was cooked I added raspberries and a scoop of crunchy almond butter for that extra sweetness. Hot tip - Almond butter becomes even better in stovetop oats because it melts! Drizzle on a little honey and add on some extra crunchy flaked almonds!

Rainy Sundays call for Chicken 'n Dumplings. 🍲🍲🍲🍲🍲🍲 This is hands down my husband's #1 favorite thing I make- and he says I make a lot of good food 😉. And the best part- it is SO easy, y'all know I love simple. Ingredients: Chicken Cream of chicken soup 32 oz Chicken Broth Celery Carrots Biscuits Salt Pepper Onion powder Garlic powder Poultry seasoning Bake chicken 425° 25 minutes. Chop celery and carrots. In a large pot, bring can of soup, broth, celery, carrots and seasonings to a boil. Reduce heat to low and cover for about 5 minutes. In the meantime, roll out biscuits and cut into 1/2 inch strips. Drop strips into pot trying not to overlap. Once you run out of room, gently stir the biscuits and repeat dropping the rest in. Stirring as needed to make room. Cover and simmer for 15-20 minutes. Shred chicken and add to pot. LET COOL. #sundaymealprep done! 🤗 I will show you the meals and recipes as I eat them through the week. I didn’t have my phone on me while cooking (less screen time, look at me go!) so didn’t really take any “during” photos. I’ve gotta say though, meal prepping on the weekend has become a ritual in this house and boy does it make the busy weekdays easier!! The more often you meal prep the quicker you will become, for example today I made: 8 x lunches 4 x breakfasts 5 x days worth of snacks (for me and kids) 1 x big coconut curry for 2 x dinners 1 x big container of salad for 2 x dinners 6 x homemade rissoles for 2 x dinners 1 x container of salad for kids wraps All done in just over 2 hours! 💁🏼‍♀️ Doing this saves me so much time and stress during the week and ensures we all have healthy options to eat. My number 1 tip?? Be organised! Write all of the meals you are going to make and figure out all of the ingredients you will need. If you don’t have an idea of what you’re going to cook or you’re constantly ducking down the street to get more ingredients it will take twice as long! I simply have a scrap piece of paper that I scribble my meals on before I write out my shopping list. Are you a meal prepper?? And if so, what are you go to meals!?
