Cake with guava or guayaba. We call it Panetela and this is one of the most popular sweets in Puerto Rico.
10 oz guava paste, cut in 1/4-in slices
1 cup sugar
1 stick unsalted butter
1/4 teaspoon almond extract or vanilla extract
2 cups Self-Rising Flour, sifted
Confectioners sugar for garnish
Preheat oven to 350 °F.
In a 13x9 inch baking dish, spray with non-stick cooking spray.
Cut the guava and set aside.
Mix in a bowl the sugar with the butter until creamy. Add the eggs, one-by-one, and the extract.
Scoop the sifted flour little-by-little, mixing at a low speed.
Divide the mix into two equal parts. Spread the first half of the batter evenly with a spatula in the pan. Then arrange the slices of guava uniformly over the batter and cover with the remaining batter.
Bake for 35 minutes.
Let cool completely before cutting into 1 to 2 inch squares.
Garnish with powdered sugar.
