“I don’t have time”
One of the number one most frequent reasons patients tell me that they “can’t” make healthy choices.
I consider myself a pretty freaking busy person. I work full time, teach fitness part time, try to exercise daily and maintain some semblance of a social life. But one of my main priorities that I MAKE time for? Food.
Making meals from scratch DOES take more time than going through the drive thru. But having your favorite staples on hand, keeping veggies chopped in the fridge and stocking your pantry and freezer with quick sources of protein and healthy fats can make it a LOT quicker to whip up a healthy meal!
I usually have leftovers from dinner for lunch, but yesterday I didn’t. Enter: this salad.
I quickly threw together the greens I had in the fridge (arugula, cabbage, spinach), tossed on some veggies I already had chopped (carrots, cucumber, bell pepper, celery), pulled out a quinoa black bean veggie burger from the freezer for protein, added some kalamata olives from the pantry for healthy fat and crumbled on some goat cheese for fun and flavor! It was delicious, satisfying and QUICK.
