I am so grateful to Helga from Reformhaus at Northgate Centre. I went to see her just before I started my treatment regime & told her what I was going to be going through. When I was really battling she phoned to check up on me & offered some advice on what I should be taking. The one thing she really advised with my low platelets & blood issues after chemo was Beet Kvass. The taste is a little unusual at first but now I really look forward to it & I can literally see it working with fresh blood showing in my nail growth & just general health. . For dinner tonight I made a gluten free + vegan shepherd's pie from a recipe I found through a quick Google search for vegan shepherd's pie, by @emilieeats who, as it turns out, has an amazing food blog here on IG! If you like my cookposting you should definitely check out her page 🙃 Emilie's recipe calls for sweet potatoes instead of traditional white potatoes, which, well; you must all know by now how much I love sweet potatoes, so that's totally fine with me. Instead of ground beef or meatloaf this recipe uses brown lentils and mushrooms to achieve a meaty texture and rich umami flavor. I made this dish without using any oil though (save for a light coating of coconut oil along the bottom of the pan to prevent it from sticking) and it came out amazing! My father and grandmother used to make this dish for me all the time when I was a kid, and I'm thrilled to be able to make and enjoy this dish again as a vegan adult.
