Hair tied back in a pony tail means business! . . I have not been able to workout all week and it has been killing me! . . Happy to press play today! And I mean business! . . I would say “bring it Shaun T” but, I never have to worry about him “bringing it” because this program kicks your butt! Whips you into shape and makes you feel amazing after completing 1 of the workouts! . . The best part is that it’s only 20 minutes so, I can give it all I’ve got today and finish up this program! . . Nothing worth having is going to come easy. If you want it, you are going to have to work for it. . Don’t compare yourself to others. Compare yourself to the person you were yesterday. Don’t look back and compare yourself to where you were last year and wonder why you aren’t there this year. Every day of life is different. There is no comparing. Circumstances change, you change. You have to roll with all the changes. You can do anything you want as long as you stay positive and believe you can! 💗 . Day 40 ✔️ What in the world was that?! 1 hour hardcore workout. I have never pushed myself so hard through a workout. So much cardio today. There were times I didn’t think I could finish the workout. My ankle was starting to bother me. When it ended, I actually got emotional. I pushed myself that hard and am so darn proud of myself. Cheers to Friday!

Recipe of the day: Vegetarian Taco Stuffed Mushrooms Servings: 2 people . Ingredients: 2 large portobello mushroom caps 1 teaspoon olive oil 1/2 cup bell pepper chopped 1/2 cup onion chopped 1/2 cup black beans rinsed and drained from a can 1/4 cup cookied quinoa 1 teaspoon Homemade Mexican Spice Blend 1/4 cup Mexican blend cheese toppings: guacamole, green onions and cilantro salt and pepper to taste . Directions: Preheat the oven to 425 degrees. In a skillet over medium heat saute the onion and bell pepper in the olive oil until soft. Add the black beans, quinoa, spice blend and salt and pepper to taste. Carefully remove the stems and wipe the mushroom caps clean. Scoop out the gills with a spoon. Place the mushrooms on a foil covered baking sheet or baking dish. Stuff the mushrooms with the black bean mixture. Top with the cheese. Bake for 10-15 minutes until the cheese is melted. Top with the guacamole, green onions, and cilantro. . Enjoy!! 💗

It's been a long year. I'm not making the progress that I'd like, thank you Prednisone, but you can't deny I'm making progress. . It can be extremely discouraging to push so hard, to eat only the right things, to drink all the water and none of the wine or margaritas... and still just not see it happening. . I'm not giving up. I'm not stopping. This is a journey. . Right now, my journey is slow on the weight loss front because other things are happening. I'm only on 2mg of Prednisone. That's HUGE. For my health, it's more important than losing these last 50lbs. It's that level of huge. It's just hard because I can't see that in every picture, mirror, or reflection. . Maybe next year I'll be at my goal. Maybe not. But next year, I'll be closer than I am now. . Keep going guys. Even if you stumble. Even if you eat 3 boxes of Girl Scout Cookies in a day. Just start over. Just call me Coach Mandy😬💚💛! After picking up my lacrosse stick today, I told myself Only Up From Here lol! • Today at practice I got to teach the girlies to always believe in themselves, work hard, and never give up! And of course, we’re only going up☝🏼!! • I think the biggest thing I’m learning in this season right now, is to live without fear! • Now a Days, when opportunities arise, I don’t sit there and think out every little detail! Instead I trust that if God is leading me to it, He will lead me through it! And that’s exactly how I become a lacrosse coach for the school I once played for! Go Aves! • This definitely wasn’t something I was searching for in this season of my life, but the opportunity showed up on my door step and I knew in my heart God was calling me to it! So I took another leap of faith and said YES! • I just pray everyday that I’m more than just a lacrosse coach to these girls! Recipe of the day: Almond Crusted Chicken Fingers with Honey Mustard Dipping Sauce Servings: 4 servings . Ingredients: 2 Tbsp. raw honey 2 Tbsp. Dijon mustard 2 tsp. rice wine vinegar Nonstick cooking spray or olive oil cooking spray 2 large eggs 2 Tbsp. water 1 lb. raw chicken breast tenders, skinless 1 cup whole wheat Panko bread crumbs (Japanese-style bread crumbs) 1/2 cup finely chopped sliced raw almonds 1 dash sea salt or Himalayan salt 1 dash ground black pepper . Directions: Combine honey, mustard, and vinegar in a small bowl; mix well. Chill. Preheat oven to 425° F. Line baking sheet with foil; lightly coat with spray. Combine eggs and water in a medium shallow bowl; whisk to blend. Soak chicken in egg mixture for 30 minutes, turning once; set aside. Combine bread crumbs, almonds, salt, and pepper in a large resealable plastic bag; shake to combine. Working with a few pieces at a time, lift chicken from egg mixture, letting excess drip back into bowl, and drop into bag containing bread crumb mixture. Seal bag and shake to coat; repeat with remaining chicken. Place chicken on prepared baking sheet. Bake for 18 to 20 minutes, turning after 10 minutes, until no longer pink in the middle and golden brown. Serve with honey mustard dipping sauce. . Enjoy!! 💗

Recipe of the day: Homemade Guacamole Servings 12 servings, approx. ¼ cup each . Ingredients: 2 cups mashed ripe avocado (approx. 2 large) ¾ cup seeded, chopped Roma tomatoes (approx. 2 medium) ½ cup chopped onion, (approx. ¾ medium) ¼ cup fresh lime juice (approx. 2 limes) ¼ cup fresh cilantro, finely chopped 2 Tbsp. seeded, chopped jalapeno pepper (approx. 1 medium) (optional) 1 Tbsp. lime peel (lime zest) finely grated, (approx. 2 limes) 1 Tbsp. extra-virgin olive oil ½ tsp. sea salt (or Himalayan salt) ¼ tsp. ground black pepper . Directions: Combine avocado, tomatoes, onion, lime juice, cilantro, jalapeno (if desired), lime peel, oil, salt, and pepper in a medium bowl; mix well. Serve immediately, or refrigerate, covered tightly, for a few hours to let the flavors meld. . Recipe Notes: If you want to keep your guac bright green while storing, press a piece of plastic wrap directly over the top, squeezing out all the air bubbles so that the plastic is in direct contact with the guacamole, and voilà, no more browning! Mashing avocados can be done with a potato masher, the back of a fork (for a chunkier guacamole), or in a food processor (for a smoother guacamole). . Enjoy!! 💗
