Otis Classic was nice enough to send me a few cases of their glass bottles to sample and try out. Flip-tops are the types of bottles I typically recommend for new homebrewers, but they’re great for experienced brewers as well. The 16 oz. ones come with either plastic or ceramic tops. And the 32 oz. bottle has a ceramic top as well. These don’t look that different from the swing top bottles I currently own, but I’ve never used bottles with ceramic tops before, so we’ll see if that makes a substantial difference in the outcome. Bottled up some passionfruit because that’s my go-to flavor! We’ll see in a few days how the carbonation turns out.

Batch brewing definitely requires a bit of rhythm, which I’ve never been accused of having. There’s a lot going on all at once because I’m bottling for a second ferment at the same time that I’m starting the next new brew cycle. To up the difficulty level, (because hey, why not?) I brew two gallon batches at a time. This is a good amount for our family, and allows me to play a little. More on those side experiments in future posts. 😉 #kombucha #batchbrew #fermentation

Garlic spelt bread I made for my sweetie to feel better. The more the better of garlic, the stinking rose, an immune boosting, antioxidant, antifungal allium family plant. For medicinal strength I blend 2-3 heads of garlic in a blender with enough olive oil to make a paste. Stores in the fridge for a week or two. Even when cooked I find the strong concentration of garlic to have a beneficial immune effect. For even more potency, the paste can be used raw in dressings, soups, grains, veggies, etc. I’ve been playing around with over-fermented yeasted pizza dough, that develops deeper flavor and is extra crispy, good for both savory and sweet flatbreads. Here I used a tasty pizza herb blend from Penzeys to help complement the garlic. LAST NIGHT | excuse my little gratitude post hehe. Wined and dined @kenlammelb last night just because I thought we deserve it. We made it. These last four plus years has been HARD. Navigating becoming a family is tough, but add to that health issues and it’s a whole new level of hard. We’ve driven each other crazy and yet he has truely kept me going. He’s trusted me through so much scrutiny, and he’s been my voice of calm when I was loosing it. And he gave me half of his desert. Best partner in crime haha. I could count on my hand the number of times we’ve been able to leave Noah in someone else’s care. But he had the best time with his cousins while we got to sit and chat undisturbed for hours. He had multiple snack pots filled with hashbrowns and dosa and he ate them all. Didn’t want to leave when we picked him up. On another note.. it’s a rare thing for us to spend money on something that isn’t health-related so I really needed to give myself permission. We totally deserve it. Such a blessing that I’m able to work now and can afford such a treat. Super grateful. I mixed a couple of loaves of sourdough on Tuesday. Built a levain, a couple of hours of stretch and folds and then tucked them into their bannetons for a cold overnight rest. I baked one off the next day but I never quite found the time to bake the other one off, nor did we need another loaf of bread. I pulled it out this morning while I was making breakfast and when I initially turned it out of the banneton, it was rather flat and sad and I had little hope for it. I finished making breakfast and let the dough hang out and relax and right before I sat down to eat I decided to give it a quick fold and shaping and then I threw a piece of plastic over it and sat down to enjoy my brunch. Heated the oven and Dutch oven to 475 and in about a hour it looked a lot more springy and alive so I slashed it and threw it in the Dutch oven and what came out was beautiful with a high dome, sharp ear and blistery surface. What a delightful gift we were given a few weeks ago, when we were enjoying the company of new friends and we were asked if we wanted to go pick some plums from a beautifully laden tree. With ages ranging from 4 to 80, we talked of beautiful times yet to come. When we were generously given a bagful we knew an attempt at some more umeboshi was necessary! "What top do I use???" ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ This is something that can be a bit confusing when you're first starting out with fermentation. Airlock, pickle pipe, swing top, coffee filter, muslin cloth, plain lid - which are you supposed to use? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ The rule of thumb is that ferments with a brine (sauerkraut, pickles, etc) will do best with an airlock or pickle pipe to minimize exposure to air and the chance of mold. Swing tops or tightly sealed lids are also ok but will need to be opened slightly once per day to allow the built up gasses to escape - called "burping". ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ And ferments with a starter (kombucha, sourdough, kefir, etc) make use of the wild yeast in the air and will do best with a breathable top like a cheesecloth, coffee filter, piece of fabric or regular lid closed loosely.
