Apprendre de ses erreurs: Mince, des moisissures! Quand j’ai fait ce pot début novembre (il y a trois mois), je pensais bien qu’il y aurait des moisissures, pour les raisons suivantes: 1. J’ai utilisé un bocal à vis au lieu d’un bocal à fermeture mécanique à joint en caoutchouc 2. Je n’ai pas rempli le pot en entier et ai laissé beaucoup d’oxygène dedans 3. Mon mélange (betterave, pomme et coings) contenait relativement beaucoup de sucre. 4. J’ai utilisé un poids plus petit que la surface en contact avec l’air (là où il n’y a pas de moisissures). Tous ces facteurs favorisent la survenue des moisissures. La bonne nouvelle, c’est qu’avec l’expérience, je sais identifier le bon du mauvais: - À l’ouverture du pot, l’odeur était certes un peu forte, mais rien de nauséabond. - Les moisissures étaient grises et noires, donc pas de couleur jaune / rouge, qui pourraient être toxiques. - Ayant goûté un petit bout de betterave au centre du pot, non altéré par les moisissures, il était parfaitement comestible et même très savoureux. Pour sauver un tel pot, il suffit d’enlever la couche de moisissures de la surface et nettoyer les faces intérieures du pot avec du vinaigre sur un chiffon. Ce que j’en retiens: - Toujours adapter la taille de ses pots à la quantité de légumes que l’on fermente, pour limiter ou empêcher au maximum la croissance de moisissures - Se fier à son intuition! Learn from your mistakes: Damn, I got molds! When I made this pot in early November (over three months ago), I thought there would be mold, for the following reasons: 1. I used a screw jar instead of a swing-top jar 2. I didn't fill the entire pot and left a lot of oxygen inside 3. My mixture (beet, apple and quince) contained quite a lot of sugar. 4. I used a weight smaller than the surface in contact with the air. All these factors contributed to the mold growth. The good news is that with experience, I know how to identify the good from the bad. Fermented garlic, several days on... You can see the bubbles which indicate that this garlic is beginning to ferment nicely. We give this a stir every day to ensure that no one piece of garlic is exposed to the air for too long (this can result in mould growing and the ruination of your ferment). . We’ll give it a few more days, until we see a lot of new bubbles forming every day, then we’ll seal up the jar and keep it somewhere cool and dark until late autumn when we’ll start using it as a cold & flu preventative. . Ruby Kraut Recipe💜 Ingredients: •2.5 lb cabbage (at least half red cabbage) •1 1/2 Tbs. Sea Salt Chop cabbage in half, remove core, and slice very thinly. In a large bowl, add cabbage and salt, squish and squeeze for approx. 10 minutes, or until there is a fair amount of juice at the bottom of the bowl. Transfer cabbage to a 1 qt. mason jar or other vessel. Pack into jar until liquid covers the top. Add a whole cabbage leaf cut to size, weight, and ferment on the counter for 5-10 days (to taste). Well, Koreans eat 1.5 million pounds of it every year, the Korean stock market’s “kimchi index” tracks the prices of kimchi ingredients and when Korea sent its first astronaut to the International Space Station, it sent kimchi along with him—after spending millions researching and developing a recipe suitable for space.⠀ .⠀ If you’ve tasted kimchi, you understand the devotion. If you haven’t, you’re in for a treat. Although recipes and ingredients vary wildly, this staple consists of Napa cabbage, daikon radish, salt and spices—hot pepper, ginger, garlic—and fish sauce (which I replace with dried kelp granules). Fermented sourdough bread! That little batch made two...almost semi respectable loaves. Getting wild yeasties to raise is...a work in progress. But they obviously did, since there is more bread then the raw dough I started with. My favorite part was the "no knead." Folding the dough four times over, every half hour, for two hours is not kneading. No shoulder went into the making of this bread. #sourdough #ferment #kitchenscience #

That's us today but back in the days they had amaizing bakeries as well.... I had the pleasure of visiting few in Pompeii, a Roman city buried under meters of ash and pumice after the catastrophic eruption of Mount Vesuvio in 79A.D. Bread was a highly demanded food and about 35 bakeries have been found during the excavations. Larger bakeries also had their own mills. Infact, in the second photo, on the right side of the oven, it's possible to see the remains of a small stone mill of cylindrical shape.

We've been buying corn locally from some of the same families and farms that have supplied us for more than 7 generations. This area is both the beginning and the end of the whisky making process.
