My bean dip brings all the boys to the yard And they’re like It’s better than yours… Sorry. I couldn’t help myself. 😝 Seriously though, nothing brings people together quite like a good bowl of dip. Extra points for a dip that can be served warm on a chilly 🍂🍁 day. With the holidays right around the corner, I always like to have something quick & easy on hand to bring with me for dinners and gatherings. The added bonus is that it allows me to spend less time in the kitchen, and more time with my 💓 ones connecting over tasty holiday food! So, I made a spicy black bean dip with my @Vitamixca Ascent blender. It fits all the bills. It’s meant to be heated and, yeah, beans can be that pretty. 👀✨ I just happened to have a can of black beans on hand, but if you’re into it, you could easily make this dip with any can o’ beans you have (it’s nice when the cans are BPA free and contain organic beans, just sayin’). Scott and I happily gobbled this up with organic corn chips and veggies, but you use whatever bean dip delivery system you like. If you make it, they will come. Here’s how: Ingredients: 1 tbsp coconut oil/ghee or butter 1 28 oz. can black beans, drained and rinsed ½ cup (+ 2 tbsp) water Juice from 1 lime 1 small red onion, diced 4 cloves garlic, chopped 1 small jalapeno, seeded and chopped 2 tbsp chopped cilantro (optional) 1 tsp cumin ½ tsp smoked paprika 1 tsp each, salt and pepper 2 tbsp nutritional yeast Optional: extra cheese and chopped peppers for garnish 👩‍🍳 Preheat oven to 350F. Grease a small ceramic casserole dish or cast iron skillet. Saute onions, garlic and jalapeno in coconut oil. Add water and coconut oil first, then sauteed veggies and all remaining ingredients into Vitamix and blend on speed 1-3 until well combined and to a desired consistency (add more water if necessary). Scoop mixture into pre-greased dish and top with cheese if desired. Bake 30 minutes. It’s colder than ....... a well diggers a*%!😷 I would cry all the time if we lived up North. Since we are in the 30’s all up in and around this house, we were craving a nice warm soup last night & I thought I would share the recipe I made up as I went along. 🍲 Let’s call it: Hearty Potato Soup •6 Organic Red Potatoes peeled & cut into bite size pieces (some big, some small) •3 Organic Carrots cut into bite size pieces (nice size) •4 Organic Celery Stalks cut into bite size pieces (cut in half so really 2 large stalks) •1/4 C of chopped red onion •Organic Vegetable Broth 2 C •Organic Almond Milk 2 C •Water 1.5 C •3 Tbsp Nutritional Yeast flakes •1 Tsp cayenne pepper •1/2 Tsp sea salt •1 Tbsp garlic powder •1/2 Tsp fennel salt •1 Tsp cardamom •1 Tsp paprika •1/2 Tsp thyme •1/2 Tsp parsley •1 Tbsp of garlic infused olive oil 🍲 *Pour the oil in a pan or pot & sauté the carrots, onion & celery for about 7 mins or until onion & celery are translucent. Add half the veggie broth & simmer for a few minutes & then add potatoes with half the milk. After about 5 mins of boiling add all the spices & the rest of the milk, veggie broth & the water. Turn the heat down & simmer (stirring occasionally) until potatoes fall apart. 🤗 Macy said it was “actually very good!” She doesn’t eat a lot of my plant based meals. She will try them all, but she typically won’t sit down and eat a plate or bowl. She ate a full bowl of this! I liked it too & we can have it again tomorrow. It was a little thick & full of flavor. I do believe it was right up our alley for the weather we are having right now. Meals today were under calories. Hubby had a dental procedure so soup was for dinner... Breakfast was strawberry frosted mini wheats with skim milk. Lunch was a chicken schwarma salad.
