Saturday Fakeaway Nando’s style! Half a chicken boob (big boobs unlike mine!) Not feeling the best today so tonight we are having a quick throw together fried rice with a side of the coles $2 spring rolls. We already had majority of the ingredients in the fridge and freezer so it only cost us $7 for the chicken breast and $4 for the bacon pieces. I use the abc sweet soy, minced garlic, sweet chilli sauce and honey for the sauce. brown the chicken, bacon and onion, chuck in the other vegetables then add the rice, fry it all up, add some salt and pepper to taste (me personally im not a pepper fan so left it out) add the precooked egg and ta-da 💁🏽‍♀️ I’ve cooked it early for lunch today so it’s out of the way and I can just relax tonight. Hubbys having the left overs from last night for lunch i had a bowl of the rice, there’s plenty for us for dinner tonight and even after that there will still be a lot of left overs. I survived Mrs Potts Chocolate House 🍫🙌🏽 It all looked incredible 🤤 but I stuck to my pot of tea and I went for a dipping pot with strawberries and banana 🍓🍌 think this was probably the best choice and the pot wasn’t huge but will syn the same as a bar of galaxy as a guess 🤷🏽‍♀️ (11.5 syns) . . 🥰 We usually cook a Valentines meal for ourselves but we didn’t this year as we went out instead (fully expecting a gain this week for all my indulging 🙈) but tonight we cooked Thai... 🙌 . This is Salmon Thai Green Curry using a jar of green paste from Aldi (20syns per jar - You could use half for 10) and you can use reduced fat coconut milk (around 22syns). I always add in extra soy sauce, fish sauce, lemon juice, lemongrass, kaffir lime leaves (all free) and palm sugar (1syn per tsp), fresh garlic, chilli & veggies like mangetout, broccoli, red pepper, green beans & babycorn... I dice up salmon chunks at the end and let them cook in the curry for 5-7mins👌 . Tonight we had it with garlic & coriander naan bread from M&S (cut up into 6 pieces works out at 3.75syns each), Thai red curry fish cakes and Thai sweet corn fritters (app says 4.5 for the pack including the dip so about 1syn each)... 😋 . Fake away night tonight! So while daddy was at the football we went to get the pizza toppings. I usually use ‘normal’ wraps that are 6SP each. As @lucerimmer is out tonight, it means I’m left cooking for one... no one can be bothered cooking a meal just for themselves on a Saturday night 🤷🏻‍♂️ . But fortunately, I saw @drmikethe2nd’s post with his fish and chips and was inspired 💡 . Found this Young’s lightly dusted fish fillet (only 270kcals!), straight in the oven with some sweet potato wedges and even mushed my own mushy peas . If I’m honest, chipping a couple of potatoes and mashing some peas took minimal effort . I will never, ever master good food plate shots 😂 so grateful I left this curry in the slow cooker all day. I don’t normally firstly, eat chicken thigh, second eat meat off the bone. This was AMAZING! The meat fell off , in fact getting out the cooker was a mission finding it. Made egg fried rice for the first time in years which went well and added chips. All for one! Barbecue firecracker chicken and chorizo pitta pizza recipe 🍕 ideal for when you want pizza but want to stick to your macros for the day! . 637 cals / P 51g / C 76g / F 13g . You will need: two white pitta breads, 40g passata, 35g reduced fat cheddar cheese, 90g @sainsburys firecracker chicken breast slices, 3 slices chorizo, 30g barbecue sauce . To make: place the pitta breads on a baking tray and place under a pre heated grill on medium/high. Grill until the top starts to crisp up and remove from the grill. Add the passata, cheese, chicken and chorizo and place back under the grill until the cheese has melted and the edges of the pitta crisp up. Remove from the grill and top with barbecue sauce, salt and pepper.
