"Meet the Farmer." The Honest Chicken would like to introduce this man, Daniel, who raises free-range chickens for Bannockburn, which is the supplier of chemical-free chickens we use for our rotisserie menu. Daniel raises free-range chickens in the coastal rural community of Pearcedale where his family and children reside. Like us, he understands that a great quality product takes time and care, and that is why he dedicates his life to making sure the product he raises are happy, healthy, and living freely around the farm. Our first time trying out some jackfruit! I was intrigued by the claims of this fruit being used as a “pulled pork” substitute! When I opened the can I thought it was artichoke, tasted a little it too... maybe a hint of mushroom? I suspect the fresh fruit itself must taste quite different from the canned version. Anyways... so I tipped the can into the instant pot along with some black beans, capsicum and salsa and served it up over corn chips. I loved it. Kids and hubby tolerated it. Really it’s quite bland and I’m sure if I hadn’t mentioned it wasn’t meat... they might’ve been none the wiser 🤷🏼‍♀️ It’s something I’d definitely use again. **PLANTBASED** this is something near and dear to my heart as I work hard to make changes at home and here at Cake Friday. If I am honest I have been struggling of late with my space in the industry- in a time when it is abundantly clear that we need to consume less I feel that I am at the forefront of what is sometimes consumption solely for show. Cakes play a special and important cultural role in bringing us together and in marking life’s special and significant moments (and I’m obviously a huge fan). However, I am addressing my ethical and environmental unease by developing and offering an additional range of “kinder/lower impact” plant based cakes and by looking at my systems and processes to remove, reduce or repurpose waste (from smarter ordering to reduce trips; to more accurate quantity control when making recipes; to growing my own edible flowers; to moving to more sustainable ingredients and tools). I’m also doing this by- walking when I can, eating mostly plantbased at home, composting, getting a worm farm and really watching what I buy (and from whom). Are these issues that concern you too? I’d love to hear your tips, thoughts and easy hacks for living more sustainably. And if you share below I’ll reward you with DM’ing my plant based vanilla cake recipe. It’s absolutely delicious xx

This is Kofte, our Dorset Down lamb that we've been raising on open pastures at Moor Farm in the Cotswolds since January, following his life grazing on grass and mother's milk (Check him out on our insta stories). ✨Humble nourishment: classic fried veggies w a limey side of rice ✨ Grab a pan, splash some oil, sprinkle salt and pepper, chop some garlic, onion and coriander, throw it all in and let it sizzle 🔥 Next, chop up ya veggies- You can use any veggies you want, but tonight, I had bell peppers, aubergine and spinach at my disposal so that’s what I used 🍆Chop ‘em up, throw ‘em in, let ‘em sizzle. Sauce: I was a bit of a cheat n I made a creamy tomato sauce by literally just buying some tomato soup from Lidl n adding coconut cream- lil bit basic, but actually so nice! 🍅✨ Add some beans n boil some rice n u’ve gotcha din dins⚡️✨ Notes: Grating some cashew nuts over ya dins is an excellent alternative to cheese. N adding citrus 2 ya rice is so simple, but it makes such a massive difference. Moody glamour at the wedding venue. Been a busy week in the Cake Friday kitchen recipe testing. After six recipe tests and a final tweak I am super stoked to say I have found a truly special, totally delicious plant based vanilla cake recipe. Tweaking my chocolate cake now (because having “a recipe” isn’t enough, it needs to taste and eat the part too. Cake, as beautiful as it may be dressed, is food foremost!!). Happy Friday all x
