🗣🗣Why is it that everything we do has to revolve around EATING? Literally, nearly everywhere you go, there is food. anything you do, there is food. Everything SOCIAL REVOLVES around FOOD! Why?? Instead of going out to eat to catch up with a friend, or going out to the bar to grab drinks, why not go for a walk (with your dogs)? Why not go to the park? Go for a hike? Get outside and do stuff. Don’t just sit and eat. . . Food should not be treated as entertainment. . . YOU EAT TO LIVE, NOT LIVE TO EAT. You should be eating to survive. Period. People look at food in such an abusive way. It’s an obsession, an addiction. It’s very sad. . Eat your food (at home) and then go about your day. Boom. Stop over eating. I am not a crafty mom but I love cooking with my kids. : : Details: @birchbenders paleo pancake mix with 1/2 mashed banana and cinnamon added. Heat oven up to 200c. 2. Peel the sweet potato, then grate the sweet potato. 3. Using muffin tray, lightly grease with the coconut oil. Add the grated sweet potato and pack down forming nests. 4. Put the muffin trays in oven and bake for 10 minutes. 5. Remove tray. Crack the eggs in the sweet potato nests. 6. Return the muffin tray in oven to cook the eggs until just set around 7-10mins. 7. Decided while walking my 🐶 this morning to do a #whole30 reset- 10 days of eating under whole30 guidelines. I eat mostly whole30 anyways, and I have been very happy with now I’ve navigated my #foodfreedom lately, especially over my short vacation this past week. I’ve felt great physically and made balanced decisions. But, I know I feel my BEST when I eat strictly whole30, and one of my biggest #nonscalevictories is my mental health. Mentally, I benefit from not having to make the decisions about whether something is #worthit and not having the worry of how some non-whole30 foods will cause me to feel. This is especially important for me when my routine changes, which is happening as I transition back from vacation/finish up spring break/head back to work. I’ll be sharing more #NSVs throughout!

I absolutely had one of those 'can't wait for lunchtime' days today. With a family day out to cater for, I threw together a few delicious plant-based options: a big mixed salad with preserved lemon, homemade fermented beetroot pickles and sun-dried tomatoes; new potatoes with coyo, dill and cornichons; smoked paprika sweet potatoes; and my extra little treat, homemade avocado, cucumber and pickled ginger nori rolls made with wholegrain sushi rice. It didn't let me down - every bite filled with different textures and flavours. EMBRACE THE FLOOP! My old, victim mentality does show up once & a while.The other day, I allowed myself to be hurt by words from another. It's ok. I'm actually going to send a thank you note to the body shamer for the dose of gasoline I apparently needed on my dwindling fire. I'm using it as a teachable moment for myself & it has spurred this educational post for all of you... GRAVITY HAPPENS! You know, what goes up must come down and all that.😉😉 So...students, when a person's belly was previously large and round (in addition to all the back fat), where you suppose all the 'extra stuff' goes once that person begins losing weight? That's right! It moves down & forward. I call that area my floop. (I don't know why...just..floop). I'm not ashamed of it. I'm not embarrassed by it. It's the result of me battling health issues AND WINNING THE DAMN FIGHT! You can't go through life (live with) PCOS, endometriosis, pregnancy, 4 abdominal surgeries (induced early menopause), asthma, sleep apnea, Hoshimoto's Disease, messenteric panniculits, and the rest of my list, and not expect some floop. It does make it difficult to be fitted for specialty apparel (insert dig at Mr suit designer/body shamer here) However, it doesn't mean I haven't worked hard or that I haven't been dieting or that I'm not on a strict regimen. Quite the opposite is true! Every time I lose fat elsewhere, there's more floop and if you can't embrace the floop, I don't want to do business you anyway. P.S. Hubby was sent off to buy some lettuce and came home with a mixed bag of lamb lettuce, spinach, baby chard & grated raw beetroot. Easy Salad! During the Easter holidays 🐇, we all tend to eat a bit more than we normally would and that's totally fine. However, we have to brace ourselves for the covers of 'health' or 'women' magazines that are going to start selling us the idea of detoxifying ourselves the moment Easter is over. They will try to persuade you that you need to detox your body after eating too many foods that are hard for your body to digest and generally eating too much. And they will most certainly tell you that the solution to all your problems lies in the form of some kind of supplements or juice cleanses. Let me tell you a fun little thing. 🕵 Your body is perfectly capable of detoxifying itself through the liver, kidneys, skin, etc. So you don't need juice cleanses or any other cleanses to help with that. However, you can be kind to your body and help it function optimally by trying to eat a healthy, balanced diet most of the time so that you don't put too much stress on your body when you do indulge once and again. 🌾What do you think about detoxifying?

Really on a pineapple kick over here. I honestly can't even claim this as a recipe because it all was basically made by @traderjoes - mahi mahi marinated in Island Soyaki for 15 minutes then grilled. Topped with Island Salsa, some grilled fresh pineapple-served over cilantro lime rice (that part I actually made 😂). So fresh and tasted like vacation - Maybe bc I bought all the products with island in the title. Anyways, it was delicious and I highly recommend!!

🇺🇸Alfredo pasta with cashew sauce 😍 . Made that vegan dish 2 years ago and never posted it...I like it so I post it today 💚 . #whatsonmyplate : chickpea pasta with cashew sauce ( used cashew purée and add it on a pan with the pasta cooked with a bit of rice milk, salt/pepper) add peas, green beans, asparagus, broccoli all steamed first in the pan, then add lime juice ( as much as you like ). Dress the plate and add half an vo on top with a bit of all the greens. . Such a feeling plate I couldn’t finish it at once, so that made me 2 meals. . I wish you a beautiful day 💚 . 🇺🇸 Pâtes alfredo avec une sauce noix de cajou 😍 . 100% vegan et super rassasiant 😍 . Dans mon assiette : des pâtes de pois chiches , de la purée de noix de cajou ( vous mélangez les pâtes cuites dans une poêle avec le purée de noix de cajou, sel/poivre, et un peu de lait de riz) petits pois, haricots, asperges, brocolis : vous les ajoutez dans la poêle ( cuits à la vapeur avant ), vous mélangez avec du jus de citron vert. Vous dressez et rajoutez un demi avocat et un peu de tout les légumes on top. Et voilà Bon appétit 😍 . J’ai pas pu finir cette assiette du coup ça m’a fait 2 repas, c’est super copieux! . Goooooood morning!!! 💕💕I usually hate the sun shining in on the window when I take my food pictures but I loved the way it made my toasts look this morning so I just embraced it! • It’s my second day on Whole 30 and just as an update, my digestive issues were no better yesterday. After lunch I experienced some heart burn and at night I had some discomfort. It’s day one so I’m not expecting results lol but I just wanted to document it. I’m loving how it’s forcing me to get creative and really think about flavors. Updates to come. I will say any form of meal prep is so helpful. I meal prepped this pesto. • • Details: two types of sweet potato toast: one with Whole 30 pesto (recipe below), avocado, lemon pepper, salt. The other with almond butter, raspberries and apples. I was gonna take the day off from posting but these pancakes just kinda happened so here we are 🤷🏼‍♀️ • • went out to dinner last night and left my phone in the car for 3 hours and I know to some that might not seem like a lot, but my life has been revolving around my phone lately. Always thinking about the next content I’ll post, the next recipe, the next story. I need to start giving myself more breaks. I want my life to be less involving my phone and Instagram. Chocolate Pecan Cookie Dough (made from chickpeas!) recipe below and derived from @thehealthyhaff ’s recipe! • • I’m going to make an effort to make other people’s recipes when I’m in a rut. I think it sparks creativity and helps you learn new things about cooking and/or baking! So today, I naturally had to start by making @thehealthyhaff cookie dough!! Slightly altered and freaking delicious. If you don’t follow her —> go do it now idk what you’re waiting for! Amazing recipe developer and even sweeter human!• • 1 can chickpeas drained, rinsed and peeled 1/4 cup almond flour (optional) 1/4 cup @themapleguild maple syrup 1/3 cup nut butter (I used @georgiagrinders honey roasted almond) 1 tsp vanilla 1 tsp cinnamon 1 tbs almond milk Salt to taste 1/4 cup small vegan chocolate chips 1/4 cup chopped pecans (optional) • • Directions: rinse, drain and peel the chickpeas. isnt it crazy that you can create Mac n cheese out of sweet potatoes?!? after expo I feel like vegetables are taking over the world. Blows my mind! Especially when it turns out this tasty! I asked you guys what you want to see on here and I kept getting pasta requests 😂😂 I really want to venture out (and I will!!!) but I had some ingredients for this so I amped up my sweet potato Mac and added a kick with some jalapeños! Super easy, super simple! Here’s the recipe! • • Ingredients: 1 medium sized sweet potato 2 jalapeños 1 clove garlic 3 tbs oil of choice (1 for sautéing jalapeños, 2 for sauce) (I used sunflower) 1/4 cup nutritional yeast 1/2 cup unsweetened milk (for nut free use nut free milk) Salt and pepper to taste 1/2 tsp garlic powder 1/2 tsp onion powder 1 tbs hemp seeds A few pieces of cilantro ——— Directions: 1. Peel and chop the sweet potato into pieces and boil for 20 minutes or until really soft. 2. Sauté 2 diced jalapeños in 1 tbs oil. When they begin to soften, add the garlic clove minced (adds more flavor). 3. Boil sweet potatoes and mash. It should come out to about 1 cup which is perfect for the recipe. If its more, just store the sweet potato for later. 4. Combine the sweet potato, jalapeños and garlic, and the rest of ingredients and blend. Pour over your favorite pasta! Uncomfortable. A feeling that keeps coming and going in my solo travels. It makes me want to transport and warm up at my house with my loved ones and enjoy this cozy bowl. • • Im so happy to be here and I know how lucky I am, but every so often, I just feel uneasy. Overwhelmed. Alone. Uncomfortable. It’s so often that we ONLY go somewhere WITH people. I do it all the time, I won’t go places unless I have a buddy with me. You know, that person that just gives you that boost of confidence to conquer whatever it is that you want to conquer. • • Today, I’m across the country and I’m alone. and it’s easy to fall into these thoughts of “what am I doing?”. But then, i quickly remind myself how I deserve to be here, how I am enough and that I’m fabulous company to myself! Nothing ever happens in your comfort zone anyway. • • I know I’ll get asked of this recipe haha so here it is • • Ingredients: (makes about 8 servings!) 2 cups cauliflower florets 1 garlic clove minced 1 cup unsweetened almond (or any) milk 3/4 cup coconut cream (or full fat coconut milk) 1/4 cup vegan butter (I used @miyokoscreamery ) 2 tbs vegan cream cheese 1 cup dairy free parmesan cheese (I used @followyourheart 1 tsp parsley 1 tsp basil (dried) 1 tsp oregano Garlic powder and salt to taste Lemon pepper to taste 1/4 cup flour (I used almond) ———- Directions: heat 2 tbs oil on a pan and add garlic. When garlic is brown add cauliflower and sauté for about 3 minutes. Then, add the rest of ingredients. Simmer for 20 minutes. Add into a blender with the flour. Not really a recipe but more of a quick, beautiful, delicious idea for breakfast! If you watched my stories yesterday, you saw my over excitement for finding @bitchinsauce in my local health food store. I’m not a brand ambassador for them (although not opposed @bitchinsauce lol jk) I’m just a crazy girl who is STOKED that this company went nationwide. A few years ago, I lived in San Diego for a little bit and I would pick this sauce up at the farmers markets every week and my roommates @sydney28lay @marydugz and I would devour it. When I got moved home, I emailed this company begging them to ship their sauces to me. And they were like no???? (Rightfully so....) but anyway, it reminds me so much of my time and friends in California and I’m just so excited that it’s here in New York finally!! ____ Anyway here are two pieces of @daveskillerbread with @bitchinsauce , watermelon radishes, avocado, drizzle of lemon, salt, pepper, EBTB @traderjoes spice, pumpkin seeds and radish microgreens! ——- Today, I’m heading to an Orangetheory class at @otfhewlett , studying and probably baking a lot later! SNICKERDOODLE CHICKPEA BLONDIES !!!!! I changed the blondie recipe up a little and these are gooey-er, fluffier and have more flaaava! I’ll get straight to the recipe! ——— In a food processor, combine the following 2 cans chickpeas (rinsed, drained and peeled) 1/2 cup coconut sugar 3/4 cup nut butter (any kind is fine) 1/4 cup organic pure maple syrup 1 tbs baking powder 1 tsp baking soda 1 tbs cinnamon 1 tsp vanilla 3 tbs nut milk 1/4 cup almond flour (any flour is fine!) ——- Next, Pour into a 13x9 pan evenly. Then, in a bowl, combine and mix 1 tbs cinnamon, 1 tbs coconut sugar, 1.5 tbs coconut oil. Drizzle this mixture over the blondie mixture. I also drizzled a little chocolate over but this isn’t completely necessary! Bake at 350 for 35 minutes! Let cool for 2-3 hours. Super important to let them cool!!! • • at Rockville Centre, New York

Cook and prep time: 15 mins!!! This is my first time-friendly meal (also budget friendly options) and in developing this recipe, I just found the golden ingredient for pesto and it might surprise you !!! It’s cream cheese!!! I know what you’re thinking - what the hell r u talking about. But I’m serious about this!!!! It is craaaaazy good in pesto. I used @miyokoscreamery vegan cream cheese (@traderjoes for $5 and lasts me a long time) to make my pesto super super creamy. I food processed it and poured it over @eatbanza but it would also be so good over cauliflower gnocchi or lentil pasta from Trader Joe’s(talk about budget friendly)! Here’s the recipe below! —— 1.5 cup fresh basil 1 cup kale 1/4 cup @miyokoscreamery vegan cream cheese 1/2 lemon squeezed 1 tbs pumpkin seeds 2 tbs nutritional yeast 3 tbs sunflower oil (or any oil) Salt to taste Pepper to taste 💕topped with @followyourheart veggie parm ——- Cook pasta and while the pasta is cooking, make the pesto. Also have tomatoes roasting in oven at 450 degrees for about 7-10 mins. Pour over sauce of your choice and EAT UP! —— at Rockville Centre, New York

Nutella almond butter cups. HOLY WOW THESE ARE GOOD. 🍫 Vegan, flourless, gluten free and honestly to-die-for kinda bites of heaven. They’re also no-bake which is great! I’ll get right to the recipe: Ingredients: Nutella: - 3/4 cup hazlenuts - 1 cup @enjoylifefoods chocolate - 2 tbs coconut oil - 2 tbs coconut sugar - 1 tsp vanilla - salt to taste Directions for Nutella: toast the hazlenuts for 12 minutes at 375 degrees. When it comes out rub it with a towel so the skins fall off. Food process it until it makes a paste. Add the rest of the ingredients except the chocolate and make a paste until really smooth. Melt the chocolate and add it to the processed ingredients in the food processor and mix it in. Should make a smooth paste. ——— Almond butter batter: - 1/2 cup peeled chickpeas - 3/4 cup almond butter - 2 tbs coconut oil - 2 tbs almond milk - 1 tbs maple syrup - 1 tsp vanilla - salt to taste ——— Directions for batter: food process until smooth Final directions: in a muffin pan (of 12) add cupcake holders and put 1 tbs of the homemade Nutella in each cup. Do the same with the batter. Top with more melted chocolate or any topping of your choosing. Put in freezer for at least 2 hours! ENJOY!!!! ———- at Rockville Centre, New York

What is your favorite baked good that brings you back to your childhood?? Mine are Blondies and I don’t know how I survived my early adulthood so far without this healthy, gluten free, freaking delicious chickpea Blondies recipe. You guys, I am CONSTANTLY recipe testing for you all and sometimes things take one try and some take multiple. These took a couple of tries but they were WELL worth the wait. They are moist, thick, doughey and crispy as hell. UGH please save these and make these and enjoy with me!!!! These were meant to be enjoyed by the world!!!! Ok ok ok I’ll stop talking and give you the recipe! —— - 2 cans garbanzo beans - 1/2 cup organic maple syrup - 1/2 cup coconut sugar - 3/4 cup almond butter - 3 tbs almond milk - 2 tbs vanilla - 1/4 cup almond flour (or any flour!) - 1 tbs baking powder - dash of sea salt - vegan (I used @enjoylifefoods ) chocolate chips ——— Directions: peel off skins of chickpeas (not 100% necessary but helps consistency) and add to food processor with the rest of the ingredients except chocolate chips. When smooth, add chocolate chips and mix by hand. Spray baking pan with coconut oil and pour mixture into a 13x9 inch pan. Dairy free Mac and cheese used to really intimidate me. It seemed like so much work and I thought I wasn’t a good enough cook to get it right. Those thoughts were so wrong - it’s SUPER simple and there’s also a lot of room for error with these recipes. However, if you are feeling intimidated, I made the simplest dairy free mac ever!!! Definitely hit that save button down there so u can make this one soon! 🍝 —- #resolvetoeatmorepasta Directions: cut up large cubes of a sweet potato and boil for 20 minutes or until soft. (Depending on size of potato, you may use all of it. If not, mash up and put remaining potato in fridge and save for later (or double the recipe) Blend the following: —— 1 cup of the sweet potato 1/4 cup nutritional yeast 2 tbs oil of your choice (I used avocado) 1/2 cup unsweetened nut milk 1 clove garlic Salt and (lemon) pepper to taste! ——- This is such an easy, fun recipe that feels indulgent when you’re eating it, but not afterwards!
